<p>If I had to pick a favorite way to prepare <a href="https://aggieskitchen.com/tag/potatoes/" target="_blank" rel="noopener noreferrer">potatoes</a>, it would have to be oven roasting them. I love how they get perfectly crisp on the outside, but still soft on the inside when baked at high heat in the oven. I love seasoning them up real well too; potatoes can be like a blank canvas with endless possibilities with help from your spice cabinet.</p>
<p>This potato side dish is one of my favorite recipes to make &#8211; and one of my family&#8217;s favorite to eat, it&#8217;s one of my main go-to recipes. I can&#8217;t tell you how many times I have made them for my family. (Another family favorite are these <a href="https://aggieskitchen.com/cheddar-dill-roasted-red-potatoes/" target="_blank" rel="noopener noreferrer">Cheddar-Dill Roasted Red Potatoes</a>&nbsp;&#8211; you&#8217;ll have to give them a try too).</p>

<p>I don&#8217;t know about you, but I tend to consider watermelon a complete food group in the summer. It&#8217;s my absolute favorite and for good reason too. There is nothing like snacking on cold, refreshing watermelon on a hot summer day, period.</p>
<p>I remember the summers I was pregnant with both of my boys and how much watermelon I ate, it could possibly have been record breaking.</p>

<p>You know I&#8217;ve been to Costco when you start to see recipes with pesto and goat cheese popping up frequently on the blog. I can&#8217;t help it. There are a few staples from Costco that I can&#8217;t be without and their pesto and goat cheese are two of them.</p>
<p>I have to admit, since trying the pesto from Costco I really haven&#8217;t made any at home &#8211; it&#8217;s that good (for store bought!) and you just can&#8217;t beat the convenience or price.</p>
<p>These Roasted Red Peppers with Pesto and Goat Cheese were inspired by my neighbor who made for us once and brought some over for me to try. He actually cooked his on the grill and wow, they were amazing. I could not wait to make them for myself. I wanted to try them on the grill, but honestly this past week here in Florida has been so brutally hot and muggy that the thought of standing over a grill &#8220;testing&#8221; a recipe just didn&#8217;t appeal to me. Roasting them up in my oven worked just as well, and I got to enjoy the a/c while doing it.</p>

<p>It&#8217;s a good day when I make a soup that everyone in my family will eat (not counting my youngest &#8211; we aren&#8217;t there yet with him). This Tomato-Spinach Tortellini Soup from the new <a href="https://amzn.to/2D91iUA" target="_blank" rel="noopener">Skinnytaste One &amp; Done Cookbook</a> (affiliate link) comes together quickly and easily in the Instant Pot (or any pressure cooker) and has been requested several times by my daughter since we first had it. (<em>If you don&#8217;t have a pressure cooker, there are stove-top cooking instructions included in the recipe below as well.</em>)</p>
<p>I wish I could say we are in soup weather season here in Florida &#8211; we&#8217;re not. But, for me, soup is always in season. Lately I&#8217;ve been craving soup more than ever, mostly because it&#8217;s easy to heat up for lunch or dinner throughout the week making meals a little easier.</p>

<h2>Skinnytaste One &amp; Done Cookbook</h2>
<p>This latest Skinnytaste cookbook released at the right time for me &#8211; I am trying to get reacquainted with my <a href="https://amzn.to/2Duclc2" target="_blank" rel="noopener">Instant Pot</a> after not using it for a long time. So there are a few recipes in Gina&#8217;s cookbook specifically for the Instant Pot that I want to try like the <strong>Unstuffed Cabbage Bowls</strong> and <strong>Turkey Cheeseburger Soup.</strong></p>

The book&#8217;s theme revolves around cooking in one vessel, whether it be a pressure cooker, slow cooker, air fryer, sheet pan, skillet or Dutch Oven. Genius, right? I love it.</p>

<p>A few recipes from One &amp; Done that I know my family will love are <strong>Giant Turkey Meatball Parmesan, Shepherd&#8217;s Pie Stew </strong>and<strong> Weeknight Chicken Souvlaki</strong>. <h2>How do you make Tomato Spinach Tortellini Soup in the Instant Pot?</h2>
<ol>
<li>Press the saute button on an electric pressure cooker. Add the butter when it has melted, add the celery, carrot and onion. Cook, stirring until tender, 5 to 6 minutes. Add the broth, milk, tomatoes, basil and bay leaves.</li>
<li>Seal and cook on high pressure for 20 minutes, until the vegetables are tender. Quick or natural release, then open when the pressure subsides. Discard the bay leaves and puree the soup right in the pot with an immersion blender until smooth (or in a regular blender, in batches).</li>
<li>Press the saute button and bring the soup back to a boil. Stir in the tortellini, 1/3 cup of the pecorino, the salt and pepper to taste. Cook according to the pasta package directions, adding the spinach at the last minute. To serve, ladle into 8 bowls and top with pecorino, if desired.</li>

<p>For the last couple of months, I&#8217;ve been doing a great job of not only planning out dinners each week, but also going through my beloved cookbook collection to try out new recipes. She writes her recipes so well, with clear and easy instructions that her young sons can follow and cook from. I love how she involves her family in the kitchen (if you <a href="https://www.instagram.com/barefeetkitchen/" target="_blank" rel="noopener">follow her on Instagram</a> you can catch glimpses of her sweet family).</p>

<p>This Asian Chicken and Broccoli Stir Fry is the first I tried from her new cookbook and it&#8217;s one I know I&#8217;ll be making again. Seriously, so simple and comes together in under 30 minutes &#8211; my family loved it. I cooked it for dinner but it would be absolutely perfect if you are looking for something to meal prep for lunches throughout your week.</p>
<h1>How do you make healthy chicken and broccoli stir fry?</h1>

<li>Heat large stainless steel skillet over medium-high heat. Add 1/2 tablespoon of oil, and let it warm for a few seconds. Add the onion strips and let them cook for 2 minutes. Add the garlic and stir. Push the garlic and onion to the outside of the pan.</li>
<li>Pour the remaining oil in the center of the skillet. Add the chicken. Spread across the skillet and sprinkle with cornstarch. Cook without stirring for 2 minutes, until browned, and then use a sturdy metal spatula to lift and flip each piece of chicken. Cook for 1 minute.</li>
<li>While the chicken is cooking, stir together the soy sauce, honey and chili paste. Add the sauce to the skillet and stir to combine.</li>
<li>Add the broccoli on top of the other ingredients and cover with lid. Cook for 2 minutes. The broccoli should be bright green and barely softened. Remove the lid and stir, scraping up any bits of sauce or meat from the bottom of the skillet. Simmer 1 minute to thicken the sauce, stirring frequently. Serve on its own or over rice, if desired.</li>

<li id="instruction-step-1">Heat large stainless steel skillet over medium-high heat. Add 1/2 tablespoon of oil, and let it warm for a few seconds. Add the onion strips and let them cook for 2 minutes. Add the garlic and stir. Push the garlic and onion to the outside of the pan.</li>

			<p>Great for meal prep: Store this in an airtight container for up to 3 days. Reheat in the microwave or on the stove. This can be stored in one large container or portioned into individual servings for storage and reheating.</p>
<p>Note: Boneless skinless chicken breasts can be used in place of thighs in this recipe (I used chicken breast because it&#8217;s what I had in freezer). However, breasts will cook faster, so take care not to overcook.</p>

<p>This recipe was inspired by one I found in Everyday Food Magazine &#8211; does anyone remember that magazine? It was always one of my favorites, and I&#8217;m so happy I chose to save a huge stash of them. I was just looking through them the other day and I can&#8217;t tell you how many pages I dog-eared with recipes that I want to make. Their recipes are always simple and straight forward, which is definitely my style of cooking.</p>
<p>I originally made this Mini Honey Mustard Meatloaf recipe in June of 2008 when I first started blogging. Here&#8217;s the picture I took of dinner that night:</p>

<p>You have no idea how it feels to look back almost 9 years to one of the first recipes I shared on this blog. It&#8217;s like I remember exactly the day I made the meal, and served it to my, at the time, 2 children who were only 3 and 1 years old!! It&#8217;s crazy. I remember my husband loving this one, and he still does. My kids too &#8211; I don&#8217;t make a lot of meatloaf, so this was a real treat for them and their response is always a good one. I need to put this back in the rotation more often!</p>

<p>Like I said before, these are simple and straight forward. I used ground chuck in the recipe this time around but I&#8217;ve used lean ground beef before as well. Your choice. I tend to pick up ground chuck occasionally when I shop at The Fresh Market for their $2.99 chicken and chuck Tuesdays.</p>
<p>What&#8217;s great about this meal is you can use the oven to roast up the potatoes at the same time. My kids adore roasted potatoes so I make them pretty often. This is one of my go-to ways to make them &#8211; a little olive oil, garlic powder, salt and pepper. Easy peasy.</p>

<div>Preheat oven to 450 degrees. Set oven racks in top and bottom thirds of oven. Brush a rimmed baking sheet with oil or spray with cooking spray.</div>

<p>My husband has been on a health kick lately. I love it. He&#8217;s really making an effort to cut back on calories, make better food choices and squeezing in exercise throughout the day. He&#8217;s taking walks around his building during restroom breaks, and trying to get a two mile walk around the neighborhood in the evenings as well as getting to the gym to hit the elliptical or play basketball with our son on the weekends. It all adds up!</p>
<p>Him being on a health kick gives me more motivation to put together healthier meals for us to eat together. We are trying to lighten things up wherever we can and using bison in place of our regular ground beef is one way we can lighten up our burgers on the grill. Since bison is pricier than ground beef, this is a treat for us that we look forward to whenever we can.</p>

<p>I have been buying bison meat from Costco regularly, but have seen it at my local grocery store (although in much smaller packages) as well as Fresh Market and Whole Foods.</p>
<h2>Healthy Bison Burger Ingredients</h2>
<p>I like to keep my burger seasonings pretty simple so that you really enjoy the flavor of the beef you are cooking with.</p>

<p>The toppings though, that is where you can have fun. I love adding caramelized onions to my burgers and of course cheese!</p>
<h2>How To Cook Bison Burgers On The Grill</h2>

<li id="zlrecipe-instruction-0" class="instruction">In a large mixing bowl, gently combine ground bison with onion powder, garlic powder, salt and pepper. Divide meat mixture into 5 even sections and form into patties. When forming, gently press down your thumb in center to help keep it&#8217;s shape and avoid turning into a meatball on the grill.</li>
<li id="zlrecipe-instruction-1" class="instruction">Pre-heat your grill to medium high heat. Place burgers on grill. Cook for 6-7 minutes on each side (for medium well &#8211; well done burgers) or 4-5 minutes for juicier, medium burgers. After first flip, brush cooked side liberally with your favorite barbecue sauce. Once burger is cooked through, quickly flip and brush other side before taking off the grill. Transfer to top rack of grill (or plate) and place a slice of pepper jack cheese on each burger.</li>

<li id="instruction-step-1" id="zlrecipe-instruction-0" class="instruction">In a large mixing bowl, gently combine ground bison with onion powder, garlic powder, salt and pepper. Divide meat mixture into 5 even sections and form into patties. When forming, gently press down your thumb in center to help keep it&#8217;s shape and avoid turning into a meatball on the grill.</li>
<li id="instruction-step-2" id="zlrecipe-instruction-1" class="instruction">Pre-heat your grill to medium high heat. Place burgers on grill. Cook for 6-7 minutes on each side (for medium well &#8211; well done burgers). After first flip, brush cooked side liberally with your favorite barbecue sauce. Once burger is cooked through, quickly flip and brush other side before taking off the grill. Transfer to top rack of grill (or plate) and place a slice of pepper jack cheese on each burger.</li>
<li id="instruction-step-3" id="zlrecipe-instruction-2" class="instruction">For serving: Place each burger with cheese on your hamburger bun. Top with extra barbecue sauce (if desired), caramelized onions and shredded lettuce. Dig in.</li>

<p>There are two foods my kids are obsessed with right now &#8211; potatoes and rice. This is a new thing for us. <h2>Oven Roasted Potatoes</h2>
<p>There are a million ways you can season and roast potatoes in the oven. This little <a href="https://aggieskitchen.com/2012/10/09/roasted-red-potatoes-with-smoked-paprika/">roasted red potatoes with smoked paprika</a> recipe has become quite popular on Pinterest. I&#8217;ve made it plenty of times, as I have already made this dill version a few times in the past month. I like to change up the shape of how I&#8217;m cutting them (crinkle cut is fun like in my <a href="https://aggieskitchen.com/2013/04/10/perfectly-baked-italian-herb-french-fries/" target="_blank" rel="noopener noreferrer">perfectly baked Italian herb French fries</a>) as well as the combination of spices every time I cook them.</p>
<p>When you are cutting your potatoes make sure you are using a strong, sharp knife (like a <a href="https://amzn.to/2Wf4toD" target="_blank" rel="nofollow noopener noreferrer">chef&#8217;s knife</a> or <a href="https://amzn.to/2HIj7fa" target="_blank" rel="nofollow noopener noreferrer">santuko knife</a>). If you&#8217;re looking for a <a href="https://amzn.to/2QyvRI2" target="_blank" rel="nofollow noopener noreferrer">crinkle cutter</a> to change up the shape of your fries, there are some great ones out there!</p>

<p>Next month, this blog turns 9 years old. I seriously can&#8217;t believe I&#8217;ve been sharing recipes online for that long. I&#8217;ve been digging around in my archives, looking at some of the food and recipes we&#8217;ve eaten over the years and to be honest, it makes me feel so nostalgic! I started a little project of remaking some of the recipes so I can update the photography and clean up the posts. One of the recipes I recently remade was from June of 2008, the first week I started blogging. <p>While I was revamping that post, I uncovered a slaw recipe from Cooking Light that I had made with it&#8230;and decided to change it up a bit. I love slaw salads of all kinds&#8230;some of my favorites include this <a href="https://aggieskitchen.com/asian-almond-slaw-salad/">Asian Almond Slaw Salad</a>, this <a href="https://aggieskitchen.com/mexican-slaw-salad-black-beans/">Mexican Slaw Salad with Black Beans</a> and one of my lunch time go-tos this <a href="https://aggieskitchen.com/broccoli-slaw-salad/">Broccoli Slaw Salad</a> I make with gorgonzola, nuts and balsamic vinegar. Good stuff!!</p>

It&#8217;s hard not to pick some up every time I walk past a display of it at the grocery store lately. Like most vegetables, I typically like <a href="https://aggieskitchen.com/simply-roasted-asparagus/" target="_blank" rel="noopener">to simply roast it</a>, but I couldn&#8217;t help but add some of my favorite flavors to elevate it a bit &#8211; balsamic, gorgonzola and walnuts were meant to be together and you really can never go wrong with that combo.</p>
