<p>I don&#8217;t know about you, but I have a hard time containing myself from buying too much every time I&#8217;m at my farmer&#8217;s market or favorite local produce shop.</p>

<p>Greens of every kind (I came home with swiss chard, fresh spinach and dandelion greens on this trip), local tomatoes (ours typically come from <a href="http://visitruskin.com/Articles/history_of_ruskin.htm" target="_blank" rel="noopener noreferrer">Ruskin, FL</a>&nbsp;and you can literally smell the freshness as you walk up to the boxes of tomatoes), and a variety of beautiful eggplants, peppers and squashes you don&#8217;t typically see on your regular trip to the grocery store. Produce heaven!! I love it. Absolutely love it.</p>
<p>I pretty much always come home with a big bag of tomatoes. That&#8217;s a given.</p>

<p>If there is one thing that can make or break a busy week in our family, it&#8217;s meal prep and planning. As our kids have gotten older, they are involved in more and more activities and sports after school which keeps us moving before, during and after what used to be our dinner hour. It&#8217;s a short season of life, and what I&#8217;ve learned is how important it is for me to meal prep and plan to help things run a little more smoothly during the week (weekends too!), helping us to eat more meals at home.</p>

<p>This post was last published in <em>November, 2015</em>. It is still one of my favorite soups that can be made with lean ground beef and all the veggies in your fridge (specifically zucchini, green beans and carrots). Although we are still experiencing 90+ degree weather in Florida, I crave this light, yet hearty, soup all the time. It&#8217;s perfect for light lunches and dinners &#8211; it&#8217;s nice to make ahead so that you have something to quickly reheat when you are short on time.</p>

<p style="text-align: left;">Are you all turkey&#8217;ed out or what? I know I am. I had a few good leftover turkey recipes swirling in my head over the weekend (my daughter wanted me to make a turkey pasta salad, mmm), but honestly, I just didn&#8217;t get around to any creative leftover creations. We had a lot of turkey paninis and just straight up Thanksgiving plate reruns. It&#8217;s all good.</p>
<p style="text-align: left;">Moving on from turkey&#8230;I&#8217;m bringing up this Italian Vegetable Beef recipe from the archives. I originally posted this recipe back in December of 2009. Crazy how long ago that was! I remember I made this soup to take to my daughter&#8217;s preschool teacher who had just had surgery. When she got back to school, she told me her and her daughters loved the soup so much and wanted more. Yea, a compliment like that pretty much always makes my day. 🙂 Since then, I have made this soup quite a few times. It&#8217;s a great change from my typical chicken based soups, the lean beef (or bison) makes it a little extra hearty but still easy on the calories.</p>

<p style="text-align: left;">I&#8217;m sure most of you will agree that a bowl of good homemade soup is total comfort.&nbsp; Soup has a way of warming up the body while nourishing it with so many health benefits at the same time.&nbsp; I&#8217;m more of a broth base soup person, so I&#8217;m not really referring to the heavier creamy soups&#8230;not that those are bad, but they just don&#8217;t make me feel the same as a soup filled with lots of herbs and vegetables in broth.</p>
<p style="text-align: left;">Whenever I find that I have lots of vegetables in the veggie drawer that need to be used up, I usually make soup.&nbsp; This particular day I had a nice variety of veggies&#8230;.zucchini, squash, carrots and green beans.&nbsp;</p>
<p style="text-align: left;">Add some dried herbs, lean ground beef and chicken broth and you&#8217;ve got Italian Vegetable Beef Soup.</p>

<h2 style="text-align: left;">Healthy Italian Vegetable Soup</h2>
<ol>
<li>In large stock pot, heat 2 tablespoons olive oil over medium heat and add zucchini, squash, carrots, garlic and onions. Cook for about 8 minutes until vegetables start to soften.</li>
<li>Add seasonings, tomatoes and chicken broth to pot. Bring to a boil, then reduce to simmer.</li>
<li>Add green beans and cooked ground beef.</li>
<li>Simmer soup for about 20 minutes.</li>
<li>Taste for salt and pepper. Serve with Parmesan cheese and cooked pasta if you like.</li>

<li id="instruction-step-1">In large stock pot, heat 2 tb olive oil and add zucchini, squash, carrots, garlic and onions. Cook for about 8 minutes until starting to soften. Add seasonings, tomatoes and chicken broth to pot. Bring to a boil, then reduce to simmer. Add green beans and cooked ground beef. Simmer soup for about 20 minutes. Taste for salt and pepper. Serve with Parmesan cheese and cooked pasta if you like.</li>

<p>Well, say hello to my current favorite breakfast. If you read my last newsletter, you know that one of my goals lately is to get more veggies into my day (if you don&#8217;t receive my monthly newsletter and want to, <a href="https://madmimi.com/signups/subscribe/82456" target="_blank" rel="noopener">sign up here</a>!). It&#8217;s not that I love veggies any less than I did before, I&#8217;ve just been a little lazy about eating them.</p>
<p><a href="https://aggieskitchen.com/category/salad/" target="_blank" rel="noopener">Salads</a> are always my go-to way to up the veggie intake but lately I&#8217;ve been challenging myself to get some veggies in at breakfast time. Since I eat eggs most mornings, scrambles are usually how I add veggies in at breakfast but I wanted to change things up.  I&#8217;ve been eating this Spinach and Egg Breakfast Toast all week and feeling pretty proud of myself for getting in a serving of spinach bright and early in the day. The spinach cooks up in the tiniest amount of time and once it starts to wilt I just push it to the side in the skillet and add my eggs. While my eggs are cooking I take my spinach out and top my toast with it.</p>
<p>Literally so quick and so easy.</p>

<div>One of the things I&#8217;m trying to do this year is to go back into my archive of recipes here on the blog and update photos for them. I love looking back at old photos and reading my words from years ago, seeing how things have changed in almost 10 years. 10 years!!</div>

<div>When I first posted this recipe for Pesto Chicken Quesadillas I was a young stay-at-home mom to a 3 year old and 1 year old. Those two are now 13 and 10 years old and we have a little 4 year old in the mix! My, has time gone by. I originally posted this recipe during the summer and in those days I am sure I had plenty of fresh basil growing on my patio and I was picking up tons of bell peppers from the produce store weekly. Making fresh roasted red peppers is really easy to do and something I love to make as often as I can. Although homemade roasted red peppers are fairly easy to make, I don&#8217;t really have as much time these days to make them so I rely on some convenience items like jarred roasted red peppers AND jarred pesto (in case you missed it I just posted this roundup for <a href="https://aggieskitchen.com/5-healthy-recipes-with-pesto/" target="_blank" rel="noopener">healthy recipes using pesto</a>). I&#8217;m pretty picky about both but I found these peppers recently at Trader Joe&#8217;s and love them.</div>

It felt annoying and unnecessarily stressful and after a little mom meltdown over the weekend, I decided I needed to get it together this week and write out a meal plan BEFORE I grocery shop.</p>

<p>The hardest part for me is figuring out what dinners will work on what nights of the week based on what our evening activities are. I have 2 children in sports so we are at practices about 4 evenings a week between the two of them, plus I have a 3 year old who needs to be on somewhat of an evening dinner/bedtime routine. So let&#8217;s face it, I don&#8217;t have time to cook dinner leisurely like I did when my kids were little with no place to be. I plan to cook a little extra on the nights I have more time to help out on the nights we are not home at dinner time and need some leftovers or sandwiches. In order to save my sanity, trips to the store and a lot of money this has to become more of a priority for me and I hope to hold myself accountable &#8211; and possibly help out a mom or two &#8211; by posting my meal plan and whatever prep I do here.</p>

<p>Years ago, I discovered this <a href="https://aggieskitchen.com/green-bean-salad-with-feta/" target="_blank" rel="noopener noreferrer">Green Bean Salad with Feta</a> recipe in a Southern Living magazine and made it pretty much every time there was a family get together or pot luck. I was obsessed with it and it became my signature recipe (at least in my mind). I love green beans, more so in a salad form than any other way. Especially in the summertime.</p>
<p>I decided to turn my beloved Green Bean Salad into this Lemony Green Bean Pasta Salad, making it more of a meal. I don&#8217;t know about you, but I appreciate pasta salads during the summer because it means not having to really cook if you aren&#8217;t in the mood for anything too heavy. This green bean pasta salad is simple but filled with so much flavor. It includes veggies, walnuts, feta and whole wheat pasta so it is filling and substantial in the best way possible. I made the switch to whole wheat pasta over 10 years ago and it&#8217;s all my family eats now, but feel free to use your favorite type of pasta.</p>

<p>If I&#8217;m going to eat a salad a day successfully each week, I tend to pick my &#8220;salad of the week&#8221; and just go with it to keep things on the easy side. This particular Mediterranean Farro Salad with Arugula and Chickpeas was my salad of the week a couple of weeks ago and I&#8217;m ready for it to make a comeback this week. It&#8217;s so good.</p>
<p>I am in love with farro and it&#8217;s versatility. You can add it to soups like this <a href="https://aggieskitchen.com/slow-cooker-chicken-and-farro-chili/">Slow Cooker Chicken and Farro Chili</a> or make an incredible grain salad like this <a href="https://aggieskitchen.com/harvest-farro-salad/">Harvest Farro Salad</a>. Either way it&#8217;s always a great addition because it&#8217;s such a hearty grain, filled with protein and fiber. It makes you feel good when you eat it.</p>
<p>My advice is to cook up a batch (it takes a bit of time, similar to brown rice) and store it in the fridge ready to go for salads like this one, or if you&#8217;re into meal prep, prep your salads (minus the oil and vinegar) in containers and they will be ready to go when you are (I love <a href="http://amzn.to/2pXJinG" rel="nofollow">these containers</a> for salads to help me with meal prep).</p>

<p>Arugula is in season right now, and if it&#8217;s warm enough where you are living right now, so are fresh herbs. My littlest son and I recently got our our container herb garden back in business and I am loving being able to step outside and snip a few leaves to add to whatever I&#8217;m cooking. One herb I absolutely adore but I don&#8217;t think  gets a lot of love is fresh oregano. Add it to anything Greek, or anything that includes roasted peppers and you will be blown away by the flavor. I added some fresh oregano leaves to the top of my Mediterranean Farro Salad and in seconds this salad was elevated with fresh flavor. Fresh herbs tend to do that.</p>

<p>Soup in the summer? Why yes, of course. I&#8217;m all in for soup for any time of the year, especially when it&#8217;s full of seasonal veggies like this white chicken chili verde recipe I made last week.</p>

<p>I have always found it best to have soup made and ready to eat in the fridge. It is truly one of my weekly go to meals especially when the late afternoons and evenings are busy with sports and activities or you&#8217;re just feeling lazy at dinnertime. It&#8217;s fairly easy to put together, though not necessarily quick &#8211; and it&#8217;s as healthy and chock full of nutrition and goodness as you want it to be. I like to think of soup as a good friend who is always there for you. 🙂</p>
<h1>How do you make white chicken chili?</h1>
<ol>
<li>In a large soup pot, heat your olive oil over medium heat. Add your onion and garlic and cook for a couple of minutes. Add your peppers and zucchini and cook for an additional 5 minutes until all the vegetables start to soften and are fragrant. Add cumin, oregano, salt and pepper to vegetable mixture and stir.</li>
<li>At this time add your beans, broth, salsa and whole chicken breasts. Cover pot and bring to a slow boil. Let simmer for 30-45 minutes until chicken is cooked through (take a fork and pull apart to check).</li>
<li>Once chicken is cooked through, pull out onto a plate or cutting board and carefully shred into small pieces using two forks. Add shredded chicken back into the soup pot and cook uncovered for another 10-15 minutes. Taste for salt and pepper and adjust.</li>
<li>Serve with lime, fresh cilantro, cheese or Greek yogurt as toppings.</li>
</ol>

<p>There is a great local produce market that I absolutely love to visit. I always leave there with way more fruits and veggies than I need, or can possibly cook in a week. I guess you can say this soup was inspired by a desperate attempt to clear out the produce drawer before anything went to waste. In the picture above you see some beautiful cubanelle peppers (that I can never ever resist) and a variation of zucchini I can only find at this produce market in the spring and summer.</p>
<p>If you don&#8217;t have either of these types of peppers or zucchini just substitute another kind of green pepper (poblano or bell would be great) or zucchini. Cubanelles typically have no heat and they have a light mild flavor so they are fun to cook with when you can find them (my grocery store tends to have them year round, I&#8217;m not sure if that&#8217;s a regional thing or not).</p>

<p>I&#8217;ve officially been logging my food into My Fitness Pal for 36 days. That&#8217;s a huge accomplishment for me! The first week I started, it felt cumbersome and time consuming but by my 5th week it&#8217;s become a breeze. Most of the food I eat regularly is already there and I&#8217;m finding I try to eat a lot of the same or at least similar meals (I&#8217;ve <a href="http://www.womenshealthmag.com/weight-loss/healthy-eating-habits" target="_blank" rel="noopener noreferrer">read that eating similar &#8220;predictable&#8221; meals each day is a habit of fit people</a> &#8211; I agree!). I&#8217;m down about 5lbs and feeling really good.</p>
<p>One meal I have in rotation this past month are these Sriracha Shrimp and Hummus Lettuce Wraps. They are pretty basic and easy to put together, and quick! You can use frozen cooked shrimp that you&#8217;ve defrosted (that is what I&#8217;ve been doing) or roast up a bunch of shrimp and eat in salad or wraps like this over a couple of days. I&#8217;ve been loving lettuce wraps like this lately as a change up from my usual salad.</p>
