Roasted Red Potatoes with Smoked Paprika

by Aggies Kitchen on October 9, 2012

If I had to pick a favorite way to prepare potatoes, it would have to be roasting them. I love how they get perfectly crisp on the outside, but still soft on the inside. And I love seasoning them up real well too; potatoes can be like a blank canvas with endless possibilities with help from your spice cabinet.

These roasted potatoes not only look pretty thanks to a generous dash of smoked paprika, but they taste great. Smoked paprika has become one of my favorite spices to play with, it always gives food such a warm and subtle smoky chili flavor but without totally overpowering it.

Enjoy these potatoes as a simple and healthy side dish to burgers, grilled or braised meats or as a hearty addition to a vegetable plate.

Roasted Red Potatoes with Smoked Paprika

Yield: 4-6 side dish servings

A simple side dish enjoyed by all. The color and flavor given to the potatoes by the smoked paprika makes them extra special and delicious.

  • 6-8 large red potatoes, skin on
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 3 tablespoons olive oil
  • 2 teaspoons chopped fresh chives
  • big dash of kosher salt and fresh ground pepper

  1. Preheat your oven to 425 degrees.
  2. Cut your potatoes into 1-2" pieces, leaving the skin on. Place in a bowl.
  3. In a small bowl, combine olive oil, smoked paprika, garlic powder and chives. Pour over potatoes and gently toss until completely covered. Spread onto a cookie sheet and place in oven. Roast potatoes for about 30-35 minutes, gently tossing halfway through. Once done, generously sprinkle with coarse salt and pepper before serving.

I also love smoked paprika and I love roasting all kinds of veggies (potatoes, yams, carrots, cauliflower, rutabaga…) but I never thought to combine the two. I’m definitely going to try it!

Yummy! These look delicious!

I love making them and smoked paprika has become my go to seasoning for many dishes. I don’t use fresh chives, but do use a variety of dry spices. Like oregano, or parsley, even cilantro. Aggie, love your post & so happy to see we have this dish in common! Try it with eggs (like over easy eggs) you’ll love it!

I love everything roasted! And I adore smoked paprika so I bet these would be favorites!

I adore roasted potatoes, but I’ve never thought to put smoked paprika on them, despite how much I love it. Although, come to think of it, I do have all the ingredients in my kitchen right now… ^_^

What a yummy new recipe I learned from you. Hmmm can’t wait to to do this for tonight’s dinner, but will you please let me know if cherry potato is also good for this recipe?

Aggies Kitchen October 14, 2012 at 10:46 pm

Hello Johnny, I actually don’t know what a cherry potato is, but I’m pretty certain any potato would work in this recipe!

These look amazing! just like I like it. Simple yet so tasty :)
I like simple food in general. Although I LOVE the kitchen, I’m a normal human being who also likes to just sit on the sofa and sip coffee :) haha!
Anyways! Love the photos too!
I actually have something similar on my blog but with this awesome spice I found in Costco. I use it so much!! maybe you have something similar in the US? you should try :)
Have a great weekend!

Made this tonight and they were great! We love roasted potatoes and have them often but haven’t thought of this combo. I used 1 TBS smoked olive oil too, for some the olive oil. Smelled and tasted so good. Thanks!
