Roasted Acorn Squash with Smoked Paprika

Roasted acorn squash with smoked paprika is a simple healthy side dish recipe and a great way to enjoy this seasonal vegetable. So easy to prepare!

‘Tis the season for pretty squash, right? I did not grow up eating fall squashes (or are they called winter squashes, I’m still not sure on that one) like acorn, butternut, delicata and spaghetti squashes but I’ve been really into finding ways to cook them and incorporate them into recipes over the last few years.

I’ve always been a little intimidated with preparing them, which is why they tend to sit pretty in a bowl on my counter for weeks sometimes…but they do really add to the fall decor in my kitchen so it’s all good.

I finally broke into this beautiful acorn squash last week. I’ve cooked with acorn squash a couple times, roasting it and then stuffing it. I’ve also served roasted acorn squash with bolognese sauce for a lower carb dinner option.

This time I wanted to keep it simple, to be served as a nutritious side dish to something like this balsamic pork roast or a roast chicken (both cooked in the crock pot to continue to keep things on the simple side).

The smoked paprika added such a nice layer of smoky flavor to the slightly sweet roasted acorn squash. I couldn’t help but sprinkle a bit of Parmesan on it too after seeing how Sandy serves her spaghetti squash.

This roasted acorn squash with smoked paprika was delicious and I hope you give it a try, especially anyone new to working with fall/winter squashes.

How do you cook acorn squash wedges?

  1. Preheat oven to 425 degrees.
  2. Carefully cut acorn squash in half, then cut halves into quarters. Scoop out seeds and discard.
  3. Place on baking sheet and drizzle olive oil over top of each quarter. Sprinkle with smoked paprika, salt and pepper and bake in oven for 30 minutes.
  4. Serve warm with freshly grated Parmesan cheese (optional).

  • 2 teaspoons olive oil
  • smoked paprika
  • kosher salt and fresh ground pepper
  • freshly grated Parmesan cheese, optional

  2. Smoked paprika is my new favorite thing. I don’t know where it’s been all my life, but I put it on everything. And it pairs so perfectly with the sweetness of squash. This sounds totally perfect to me.

  11. I grew up eating acorn squash and I love it! This is almost exactly how my mom cooked hers but instead of the paprika she’d add a sprinkle of cinnamon and sometimes a touch of brown sugar. I’m loving the smoked paprika idea.
