Mini Cheddar-BBQ Turkey Meatloaf Muffins

These Mini Cheddar BBQ Turkey Meatloaf Muffins make for a fun and easy weeknight meal. My kids love them!
Mini Cheddar-BBQ Turkey Meatloaf Muffins

I don’t make meatloaf – of any kind – very often, for no other reason other than it just doesn’t come to mind when I think of what to make for dinner. That’s probably because I didn’t really grow up eating meatloaf, so it doesn’t really fall into the everyday comfort food category for me. Does it for you?

There are two meatloaf recipes that I have made over the years when I have made meatloaf and they have become my go-to meatloaf recipes. They are both very different from each other and it just depends on whether or not I want a more traditional recipe like this copycat Boston Market Meatloaf recipe, or a lighter but oh so delicious one like Barefoot Contessa’s Turkey Meatloaf (I love this one!!). Anytime I do make meatloaf, my meat loving husband is a happy man. And after making these Mini Cheddar-BBQ Turkey Meatloaf Muffins apparently now I know that my children are both fans as well. I guess I know whats going into the dinner rotation more frequently.

I was inspired to make this mini versions of meatloaf from my friend Liz, who writes the blog The Lemon Bowl (I’ve been finding myself stalking her blog for dinner ideas quite frequently, along with Melanie’s blog, Nutritious Eats). It’s nice to get ideas from other busy moms that like to eat food you like to eat, and have to still feed young children food that they will like as well – I’m always inspired by both ladies! These mini turkey meatloaves came together super easily and quickly, using ingredients I always have on hand. I served them alongside this Corn, Tomato and Basil Saute and my kids and husband enjoyed every bite of dinner that night.

Mini Cheddar-BBQ Turkey Meatloaf Muffins

Yield: makes 12 mini meatloaf muffins

  • 1 lb lean ground turkey
  • 2 teaspoons steak seasoning
  • 2 teaspoons Worcerstershire sauce
  • 1/2 small onion, grated
  • 1 egg
  • 1/2 cup panko
  • 1 15oz can petite diced tomatoes, drained well (give them a good squeeze to get all the moisture out)
  • 3 oz cheddar cheese, shredded

  • 2 tablespoons honey
  • 1/2 cup barbecue sauce
  • 1 teaspoon mustard

  1. Preheat oven to 375.
  2. Add all the ingredients for the meatloaf mixture into a large bowl and using your hands gently combine. Spray a 12-cup muffin pan with non stick spray. Add meatloaf mixture evenly among cups.
  3. In a small bowl, combine honey, barbecue sauce and mustard. Spoon or brush evenly over meatloaf muffins. Bake for 20-25 minutes until you see the muffins bubbling and start to slightly separate from sides of muffin pan. Turn broiler on for 2-4 minutes to get the tops nice and browned.

My kids would normally groan if I said we were having meatloaf for dinner. However, meatloaf muffins got a different type of response! I love that they are portion controlled, makes for great leftovers too. These were easy to make and my family loved them. Recipe inspired and adapted from The Lemon Bowl's Turkey Meatloaf Muffins with Bacon

Until recently I hated meatloaf of any kind. That was until I discovered the mini versions which are basically meatballs. Since I don’t like the overly mushy-ness of meatloaf the smaller ones have more surface area and are therefore less mushy. These are right up my alley!

My family loves meatloaf, we have it often but I’m like you I didn’t grow up eating it. This looks fantastic!

This has been bookmarked! My Mom never made meatloaf growing up, so the first time I had it is when I first made it ;). I don’t make it often, but Josh really likes it…so maybe its time again! Plus your version looks super good

These look amazing, Aggie! I love meatloaf but rarely make it because, like you said, I just never think about it. Think I’ll be adding it to this week’s meal plan!

We actually make meatloaf fairly often but I’ve never done it in muffin/cupcake form. This flavor combo sounds delicious!!

My family adores meatloaf, but I have yet to make it with turkey. These meatloaf muffins remind of a recipe I used to make, and now I’m wondering where that recipe is, must find it!! I just printed off your recipe, will be enjoying it soon – thanks, Aggie! 🙂

I love meatloaf but am not a fan of ground turkey! ha! I do have some in the freezer… maybe I should defrost it and give these a try!

    • Aggies Kitchen posted May 1, 2013 at 10:39 am

We use ground turkey so much it’s a treat to cook ground beef 🙂 If you season it right it turns out great – let me know if you try it out!

When we lived in Hawaii I rarely cooked anything heavy, and never anything like a meat loaf. It didn’t take my little kids very long to adapt to meatloaf once we moved away, and now they clamor for it–even when my meatloaf has 48.3% meat in it!
Your meatloaf muffins look absolutely adorable, and what a great way to portion out the protein!

I made these the other night and my family thought they were great. I just finished off the last one for lunch, with some eggs and sauteed mushrooms, yum! I hadn’t made meatloaf with turkey before, and this proved to be a nice light version, perfectly lunch portioned. Thanks!

Do you use mini muffin tins or the regular sized tins?

    • Aggies Kitchen posted September 27, 2013 at 12:24 pm
