I don’t know about you, but I love having a nice hearty soup waiting for me in the fridge, especially on weeknights. I find myself making large pots of soups on Sundays which in turn carry me through the week with leftovers for lunches and an easy dinner. I love soups just like this Italian Tomato and Lentil Soup with Spinach, full of wholesome protein and vegetables – basically everything you need for a good quick meal in a bowl.

<img loading="lazy" decoding="async" class="aligncenter wp-image-17216 size-large" src="https://aggieskitchen.com/wp-content/uploads/2011/02/Italian-Tomato-Lentil-Soup-Recipe-640x853.jpg" alt="large soup pot filled with lentil and vegetable soup" width="640" height="853" data-pin-description="This Italian Tomato and Lentil Soup with Spinach is a hearty vegetarian soup with simple ingredients, similar to the traditional Sicilian lentil soup I grew up eating.

This vegetarian Lentil Soup recipe is especially great for those of you who are trying to incorporate more meatless meals into your daily diet. It’s very filling and satisfying and you can even give it a little more protein and texture by adding broken pieces whole wheat spaghetti or pasta to it (whole wheat pastas are a great way to bump up protein). I love to serve it with grated parmesan cheese (freshly grated if you have it or use my favorite shredded Parmigiano Reggiano from Costco).

Are lentils healthy?

Lentils are not only a staple in an Italian kitchen, but also a vegetarian one. They are a complex carbohydrate and are high protein as well as fiber. They are also naturally gluten-free. It’s no secret they are an absolute powerhouse when it comes to nutrition. If you are looking to boost your protein intake, lentils make a great choice!

So delicious.

This Italian Lentil Soup recipe makes a lot of soup – about 15 cups of soup and about 8-10 servings, based on serving size. I like to freeze my leftover soup in 4 cup glass Pyrex containers like these (affiliate link). To defrost, set in refrigerator overnight and warm slowly in a pot over medium heat or in individual bowls in microwave. Add additional liquid if needed.

How To Make Italian Tomato and Lentil Soup

In a large pot, heat olive oil and add diced carrots, celery, onion, pepper and minced garlic. Season with 2 pinches of salt and fresh ground pepper. Saute vegetables in oil for about 7-10 minutes until soft and fragrant.

Add lentils, diced tomatoes, vegetable or chicken stock and water to vegetable mixture. Add 2 more pinches of salt.

Bring soup to a slow boil over medium high heat for a few minutes, then back down to a simmer over low heat. Simmer, with lid half on, for about 35-40 minutes stirring occasionally, until soup starts to thicken.

Taste for salt and pepper as its cooking and add more water if it gets too thick. The lentils will absorb most of the liquid in the soup while cooking but you’ll still want it to have liquid once done cooking.

In the last 5 minutes of cooking, add fresh spinach leaves to soup and gently stir to combine.

Serve with freshly grated Parmesan cheese, and lots of it!

I don’t know about you, but I would be totally okay with sitting down to a plate of these Mediterranean Nachos for an unofficial meal any night of the week. They would particularly be welcomed on a Friday or Saturday night, when I tend to lose my steam for putting together a real meal.

I like snacky food, I always have and I always will. There is not an appetizer plate I can resist and these “nachos” are officially on that list. The best part is how easy they are to put together (would I ever steer you to something complicated?) and how quickly they disappear once they are served.

I find it hard to believe that this is the first zoodle recipe I’m posting here on the blog considering I’ve been enjoying spiralized zucchini (along with the rest of the internet) for quite a while now. If you ever want to really clean up your eating and bulk up on vegetables, start experimenting with your spiralizer – there are a ton of ways to enjoy veggies this way, the ideas are seriously endless.

Today’s recipe is from my friend Gina’s new cookbook, Skinnytaste Fast and Slow. You may already be familiar with her blog, Skinnytaste, and first cookbook The Skinnytaste Cookbook. We are big fans of Gina’s recipes in my house – my kids are constantly asking me to make this Loaded Baked Potato Soup and my husband absolutely loves this Slow Cooker Turkey Picadillo. Her recipes really are exactly how I like to cook – simple, flavorful and filled with real ingredients.

The school year is winding down for us this week, the countdown is on! I am so ready for summer break to get started and slooooow down. I am sure that I’m not alone in feeling this way! The month of May kind of kicked me in the butt so it will be nice to not feel like we have somewhere to be or go or do for a while. It’s possible that I may start cooking proper dinners again too. 😉

Oh hey there summer…

This Toasted Almond Herbed Brown Rice recipe was created in partnership with Fisher Nuts.

I don’t know about you but I have herbs growing like crazy right now. I finally found the sweet spot around my home as far as where my herbs thrive and grow well. While they need plenty of sun, a little shade really helps keep them from burning up and drying out in the summer heat. A spot where the sun is filtered through the shade of a tree and close enough to a hose for easy watering (they need lots of watering, especially if they are in pots like mine) is the perfect location for healthy happy herbs. I’ve definitely learned to move my potted herbs around over the years until I find that sweet spot.

So when you have a ton of herbs, what do you do with them? Well, it’s pretty obvious what to do with some of them (I’m looking at you, basil). Something I tend to do often take some clippings from a few different herbs and add them to recipes for a fresh boost of flavor, like in this Toasted Almond Herbed Brown Rice.

To say that I am obsessed with Greek food would be a total understatement. At least twice a month, if we are getting take out it is usually from one of our local family-owned Greek restaurants. I am in love with the flavors of the Mediterranean (if you can’t tell by the recipes I post), and Greek cuisine is high up on the list of food I love.

Today I am sharing with you a recipe from a beautiful cookbook I received recently, It’s All Greek to Me by Debbie Matenopoulos. When I opened up this book I could tell right away how authentic it was, and I was excited to read through it (am I the only one who likes to read cookbooks before they cook from them?).

When I looked through this book, it wasn’t just the beautiful and traditional recipes that caught my eye, it was also all of the gorgeous photos capturing the Greek culture that reminds me so much of my own Italian heritage – full of love, food and living life well. The underlying focus of this cookbook is not only delicious Greek recipes, but including and enjoying whole, natural ingredients as those in the Mediterranean part of our world do effortlessly as part of their lifestyle.

I love it. (and I love this Greek Village Salad too…the first of many recipes I want to try from this book.)

Somehow, I’ve avoided the “winter blues” this year. I know a lot of it has to do with the truly beautiful weather we’ve been getting here in Florida, a blue sky and bright sun never hurt anyone that’s for sure. I’ve been staying active, getting my workouts in, as well as spending the month of January really getting my house in order…lots of decluttering, deep cleaning and freshening up. I’ve kept myself so busy that I haven’t really had time to settle into that funk that I tend to settle into after the holidays.

I think what I’ve been eating and cooking has also played into it too. Lately I’ve been finding myself cooking up a huge pot of soup or chili on Sunday or Monday, and having it for dinner and lunches throughout the week. When I think of soup or chili, I think of big bowls of comfort, especially during the cooler months. Once it’s cooked up, it can last for days as leftovers and right now, for me, that’s a really good thing.

When I make soup, it’s all about nutrition. I try to pack in as many vegetables, beans and sometimes lean protein as possible. I don’t like to feel gross after eating soup or chili, I like to feel good. This Two-Bean Turkey and Vegetable Chili makes me feel good. It truly hits the spot when you don’t have time to make lunch or you need a dinner that pulls a double duty. I enjoyed this chili as is for days, but my husband and kids loved it over whole wheat macaroni. However it’s eaten, I know you’ll enjoy it.

Last week, my son and I were feeling a little under the weather. After talking with friends and other people around school, it didn’t sound like we were the only ones either. ‘Tis the season…

When I’m not feeling my best, I tend to either eat really junky or really well. I usually regret when I go the junky route (and feel worse!) so I forced myself to pull out what I had in my fridge and pantry last week and pull together this Feel Good soup. This soup warmed up my bones and made my belly happy. I ate 3 big bowls of it in one day and immediately started to feel better. I wish I could tell you my kids enjoyed this along with me, but they are not in a soup loving phase right now – working on that. But, my husband helped himself to some and went back for seconds.

I served the soup with a heaping scoop of my favorite rice blend that I pick up at Costco – good stuff. Also, the soup base that I love to use when making soups is Better Than Bouillon Organic Reduced Sodium Chicken Base that I find at Costco as well, find a review with more soup recipe from Kayln of Kalyn’s Kitchen here.

Or that could all be baloney and you’re really just hungry, obsessed with food, stubborn or all of the above. I choose all of the above (most of the time).
