Summer Spinach Salad with Tomato

I’m not sure about where you live, but this week has been all about back-to-school in our household. This is a big year for my family, my youngest is starting kindergarten, my daughter in the middle is entering 7th grade and my oldest son is a freshman! I have no idea how we got here, but we are here now. It’s exciting, but also a bit of an adjustment having 3 kids in 3 different schools.

With back-to-school comes the need to plan for dinner. Summer break is so laid back for us that I basically wing it every week for the most part. I don’t know if I would necessarily recommend that but that’s typically how summer rolls for me. Right now though I’m in more of a meal planning mode, looking for simple dinners that everyone will eat (per the usual!).

Although it’s back-to-school, let’s be real. It’s still very much summer. It’s also still my favorite produce season.

My dear friend Lora and I have teamed up this summer to share our love of summer produce with you – we came up with a theme for each month of our #FreshSummer recipes. August’s produce pick is tomatoes! I am sharing today’s super simple Chopped Tomato and Spinach Salad. This salad would pair up nicely with grilled chicken or seafood. Lora is sharing a recipe for her Spaghetti with Fresh Tomato Sauce, it is a beautiful dish and is making my mouth water.

I love spinach salads and they are super easy to throw together with pre-washed packaged salad greens, it really doesn’t get much easier to have that part done already. For this salad I added to the spinach my favorites – tomatoes, onion, kalamata olives. That’s it, easy peasy.

For a salad like this I like to just dress it in simple oil and vinegar. I mixed a couple teaspoons of balsamic vinegar and a couple teaspoons of olive oil in a small jelly jar with some salt and pepper and shook it up. I don’t typically measure my oil and vinegar but try to keep it at equal parts although if you don’t like it too vinegary you can add a little bit more oil to balance it out. Drizzle this over your salad for two and trust me, it’s all you need for a light refreshing salad you will feel good about eating.

I realize a salad like this Chopped Tomato and Spinach Salad is beyond simple and a little basic to post as a recipe…but in talking to friends and personal experience, it’s not just recipes we are all in need of but IDEAS. I personally am always looking for new ideas, especially when it comes to something like salads and getting more veggies into my day.

Ingredients

  • 5 plum tomatoes, chopped
  • 1 medium sweet or Vidalia onion, chopped
  • handful of kalamata olives, chopped
  • 23 cups of fresh baby spinach leaves
  • 23 tablespoons balsamic vinegar
  • 23 tablespoons olive oil
  • salt and pepper to taste
  • 1 cup chickpeas, drained and rinsed (optional)

Instructions

  1. Combine salad ingredients in a large bowl.
  2. To make vinaigrette, mix together balsamic vinegar and oil in a small bowl or jelly jar with lid. Season with salt and pepper. Drizzle desired amount over salad.

Notes

  • Adjust amounts of vinegar and olive oil based on how much you like on your salad. I like to use equal parts for a salad like this.
  • This recipe made 2 large dinner salads or 3-4 smaller salads.

  1. I literally was just having this conversation with a friend 5 minutes ago about not being able to get enough spinach and healthy veggies in my diet. I think the biggest hurdle to get over is the hassle of having to make a salad from scratch every single day. I really like the suggestion you made to prepare salad items before hand and I think this will make a big difference! Thanks Aggie!

    • It makes such a difference!! those matchstick carrots and grape tomatoes have helped. I’m going to chop up some celery next week and make some hard boiled eggs to add too!

  3. I try to have spinach in fridge for smoothies a couple times a week but it is difficult because it goes bad (I am single and just learning to cook for 1). I am going away for a week and I had a bunch in the fridge, along with a tomato. I didn’t want them to go bad so I googled tomato and spinach salad. This came up and I was very grateful. Simple recipe and I had the ingredients. Now I don’t have to throw out fresh (semi-fresh 😉) food. Thanks for posting this simple recipe!

  6. I live in the Philippines and can’t always get the ingredients from my local market that are normally easy to find in a western Supermarket, but one thing there is plenty of is tomatoes.

    I had to skip the olives (such a shame, but I’ll pick some up the next time I go into town).

    Fresh salads aren’t popular here. Cooked vegetables is the norm, but this is so simple and delicious I couldn’t resist giving it a try.

    Next one to give a go is that fresh tomato sauce with pasta. It’s a weekend job (pasta is for special occasions here.. lol).

  34. We absolutely love your summer spinach salad. We used a Vidalia onion and included chickpeas. The kalamata olives give the salad a Mediterranean flavor.
