(This post is sponsored by Bush’s Beans.)

Did I miss Taco Tuesday? Yea, I think I did this week. Well, save this recipe for next week then. Or don’t….there’s always Taco Thursday right? In my house there usually is.

My family and I eat Mexican inspired food at least once a week. Nothing fancy – tacos or tostadas are a favorite, so are quesadillas. Right now I’m totally obsessed with corn tortillas so that’s what I’ve been using a lot of but I am starting to miss my old stand by whole wheat tortilla quesadillas too. Corn tortillas have the best flavor in my opinion, but the larger flour tortillas hold a lot more filling and you can really get creative with those fillings at dinnertime – especially on the “clean out the fridge” type days.

What’s great about Mexican food is how simple and fresh it can be. I know a lot of restaurant Mexican dishes are smothered in cheese and sauce and that’s okay, but my favorite dishes are always the ones that boast fresh and colorful ingredients like veggies and beans. Cheese is of course a necessity when it comes to Mexican, but you can really pile on the veggies with all the cheese and it all balances out.

In just a couple of months, I’m going to be counting on seriously quick and easy meals to put together for dinner. I’ve never been a big make-ahead-freezer-meal type of person, but lately I’ve been thinking of ways to get some shortcuts together for myself to keep in the freezer to make things a little easier for when the baby comes. One shortcut that has worked for me in the past – when I’ve taken the time to do it – is pre-cook ground seasoned ground beef or turkey for Mexican or Italian recipes. I cook up a big batch, seasoned up as I want, and once cooled, store enough in separate baggies (labeled!) for a couple of meals. I did the same with chicken a month ago, and I have to say, having a bag of already shredded chicken to throw into quesadillas or soup has come in really handy the last few weeks. I usually feel like doing this after a shopping trip to Costco since I can buy in bulk and boy does it feel good when I’m done.

Recently I froze up leftovers from a big batch of homemade enchilada sauce – same concept, I just portioned it out into meal sized containers to use for our next enchilada night. The rest of this enchilada dinner came together extremely easily since all the ingredients – like Bush’s Black Beans, tortillas and cheese – were ones I typically always have in the pantry or refrigerator. I kept these Cheesy Black Bean and Corn Enchiladas as a vegetarian recipe, but if you had some precooked shredded chicken or ground turkey in the freezer, that would be a great addition as well.

I would be happy to hear any make-ahead meal ideas or shortcuts you have – I need all the help I can get! Leave me a note in the comments!

In the meantime, enjoy this recipe for enchiladas for dinner. You can honestly never go wrong with black beans and cheese, these were a total hit and no one (my husband) missed the meat!

Summer has definitely begun for us…though I know not officially on the calendar. The weather is hot, real hot, and the kids are out of school. We have had a busy week visiting with classmates and friends, not leaving me much time for cooking it seems.

Lucky for me, this week’s Barefoot Blogger recipe, chosen by Ellyn of Recipe Collector and Tester, was an easy one. I’m not kidding when I say easy. That’s what I love so much about couscous, it’s ridiculously simple to make and I love flavoring it up by adding veggies, nuts and currants to it…just like Ina did in this recipe.

I made a few adjustments and additions to the original recipe like adding chopped yellow bell pepper and substituting whole wheat couscous. I also decided to leave out the red onion…and as I’m writing this post am realizing that I apparently left out the sliced almonds…oops.

I loved the curry yogurt dressing called for in this recipe…though, next time I will probably double it and use a little extra to keep it from becoming too dry as it sits out. This dish is served at room temperature and would be a great side dish for any barbecue or summer get together.

Since everyone I’m talking to these days is in the mood to grill and chill…I thought I’d go back in my archives and share a great recipe I discovered one summer long ago.

This Grilled Sweet Potato Salad is unique and just delicious. It’s pairs up wonderfully with these Jamaican Jerk Chicken Wings and really with anything hot off the grill. The smoky lime dressing is the perfect complement to the sweetness of the grilled potatoes.

I honestly never thought to grill sweet potatoes until I came across this recipe.

I’m always looking for new ways to enjoy sweet potatoes. They aren’t just for Thanksgiving that’s for sure. We love them roasted or in my family’s favorite quick weeknight meal but grilling them was a fun way to change things up.

Enjoy the recipe and your weekend!

Instructions

In a large saucepan, add whole sweet potatoes and cover with cold salted water by 1 inch. Bring to a simmer, covered, and cook until just tender, about 15 to 30 minutes, depending on size of potatoes. Test with a knife.

Place potatoes in a a colander and run under cold water to cool. With a sharp knife peel potatoes and cut crosswise into 1/2-inch-thick slices.

In a small bowl whisk together oil, salt, and cumin and brush some onto both sides of potato slices, reserving remaining cumin oil.

Preheat your grill. Grill potato slices on an oiled rack set 5 to 6 inches over glowing coals until golden brown, about 1 minute on each side, and transfer to a platter. Sprinkle green onion over grilled potatoes. Whisk lime juice into remaining cumin oil with salt and pepper to taste and drizzle over potatoes. Serve potato salad with additional lime wedges and chopped cilantro if desired.

Updated: I just wanted to note to keep an eye on your potatoes as they are boiling, you want them firm and not too soft. But you want to parboil them enough to take the bite out of them so they aren’t completely raw on the grill.

Also, according to one of the reviews on epicurious, the potatoes can be boiled and sliced ahead of time and grilled later.

I’ll have to admit, when I first saw this recipe as a pick for our Craving Ellie in my Belly group, I was a little hesitant about making it. As much as I love to cook, I have hangups about cooking certain types of food (for example…roasts and anything with yeast!). Curry is not something I am very familiar with, though I know I’ve had a few curry dishes in the past that I absolutely loved. After a little self talking, I convinced myself that this was another great opportunity to cook out of my comfort zone. I get in my share of cooking ruts and know how important it is to for me keep things interesting in the kitchen.

The ingredient list of this recipe is fairly simple, you can most likely find red curry paste in the Asian aisle of your grocery store or easily find curry powder with the spices. I went for the red curry paste. I also used some frozen mahi-mahi that I had on hand.

What a delight!
This dish was so light and tasty, my husband and I really enjoyed it. The flavor combination was perfect, I’m always happy cooking with cilantro and lime!
I will definitely be making it again…
next time will be trying this recipe with some shrimp and a little extra heat!

This salad is officially a new favorite in my book. I had no idea it would be this good! I made this the other night for dinner for a friend of mine and I. We served it over fresh spinach leaves for a light weeknight dinner and it was perfect. Leftovers for lunch the next day were even better.

The salad was really easy to put together. I had roasted the chicken earlier in the day so that it was ready to be shredded. I also blanched the asparagus at the same time and kept them in the fridge to chill. The dressing was a breeze to throw together – I just love making my own fresh salad dressings. I originally thought about serving this salad over some cold sesame noodles or even in a pita, but the fresh spinach leaves worked out wonderfully to make this a great dinner salad.

I’m really trying to make it a habit to have more salads for dinner. So far, thanks to the last couple of recipes chosen for the Craving Ellie in my Belly group, I’ve been able to do that. For me the key to a salad is lots of flavor. I can’t feel like a rabbit when I’m eating salad.

This week’s CEimB recipe is Buffalo Chicken Salad with Blue Cheese Dressing and was chosen by AJM of You Eat Now. It was really a nice weeknight recipe, the chicken cooks up quickly under the broiler and the salad dressing was whipped up in no time. We are big fans of buffalo chicken in our house so this was a great way to get our “hot wing” fix in a much healthier way.

The recipe calls for simply tossing the uncooked chicken strips in your favorite hot sauce (Frank’s is the way to go!). I decided to add another layer of flavor to the chicken by marinating it with some olive oil, salt, pepper, garlic and chili powders before adding the hot sauce. Also, since we like it really hot, I tossed the broiled chicken in more hot sauce before topping it on the salad. I wasn’t sure if it would be filling enough for my husband, but he seemed pretty satisfied and said it was great. Oh…and I thought the dressing was really yummy. I poured all the ingredients in a small mason jar and just gave it a few shakes…and voila, homemade blue cheese dressing.

I really love starting a new year. It’s that feeling of starting
fresh, feeling rejuvenated and ready to conquer anything (that might be taking it too far, but you catch my drift.). I don’t really make resolutions, only because they are basically the same ones every year. Eat healthy, exercise more, get organized, practice patience. Those have been around for quite a few years now. They aren’t going anywhere.

We had a pretty lazy New Year’s. I felt the urge to clean, and also nap. Lucky for us, the kids let us nap by taking a good long one of their own. Tomorrow though…I am hitting the gym, hard.

Dinner tonight was awesome. My neighbor told me about this shrimp recipe a couple of months ago and I couldn’t wait to make it. You gotta love the name too. The shrimp marinated in a mixture of garlic, cilantro, jalapenos, green onions, lime juice and olive oil, then were grilled.

Oh my…my year could not have started any better.

I didn’t feel the need to use as much butter as noted in the recipe. But other than that I pretty much followed it exactly. I served the shrimp with some Maryland Style Crab Cakes and a simple salad of thinly sliced cucumber, celery and red onion dressed in vinegar and chopped cilantro.

Lime wedges, for serving

Directions:

About 12 long (10- to12-inch) metal or bamboo skewers

1. Rinse the shrimp under cold running water and then drain and blot them dry with paper towels. Peel and devein the shrimp. Thread the shrimp onto 2 parallel skewers, using 2 skewers for each kebab. Arrange the kebabs in a nonreactive baking dish.

2. Set aside 3 tablespoons of the cilantro for the garlic cilantro butter. Place the remaining cilantro, the jalapenos, scallions, chopped garlic, salt, black pepper, and cumin in a food processor and finely chop. With the machine running, add the olive oil and lime juice through the feed tube and puree to a bright green paste. Pour this marinade over the shrimp and let them marinate in the refrigerator, covered, for 30 minutes, turning the kebabs several times so they marinate evenly.

3. Melt the butter in a saucepan over medium heat. Add the minced garlic and the 3 tablespoons of reserved cilantro and cook until the garlic is fragrant and sizzling, but not browned, about 2 minutes. Keep the garlic cilantro butter warm until ready to use.

4. Set up the grill for direct grilling and preheat to high.

5. When ready to cook, brush and oil the grill grate. Drain the marinade from the shrimp kebabs and discard the marinade. Place the shrimp kebabs on the hot grate and grill until just cooked through, 1 to 3 minutes per side, basting with the garlic cilantro butter. When done, the shrimp will turn pinkish white and feel firm to the touch. Transfer the grilled shrimp to a platter or plates, pour any of the remaining butter sauce over them, and serve with the lime wedges.
