<p style="text-align: left;">I have a couple of new favorite veggie dishes to share&#8230;</p>
<p style="text-align: left;">One of them, the Roasted Carrots, I&#8217;ve made many times.  There&#8217;s not much to this recipe, it can be found in <a href="http://www.amazon.com/Barefoot-Contessa-Cookbook-Ina-Garten/dp/0609602195/ref=sr_1_1?ie=UTF8&amp;s=books&amp;qid=1259717511&amp;sr=8-1" rel="nofollow">The Barefoot Contessa Cookbook</a> and if you&#8217;ve roasted vegetables before then you really don&#8217;t need to follow anything in writing to cook these up.  If you haven&#8217;t noticed, I am a huge fan of roasted vegetables.  Cooking them this way really brings out some natural flavors and sweetness and you gotta love the slightly crisp texture you get when you roast them just right.</p>
<p style="text-align: left;"><strong>Roasted Carrots<br />
<em>Recipe adapted from <a href="http://www.foodnetwork.com/recipes/ina-garten/roasted-carrots-recipe/index.html">Ina Garten, The Barefoot Contessa Cookbook and Food Network</a></em></strong></p>
<p>12 carrots<br />
3 tablespoons good olive oil<br />
1 1/4 teaspoons kosher salt<br />
1/2 teaspoons freshly ground black pepper<br />
2 tablespoons minced fresh parsley</p>
<p><!--concordance-end-->Preheat the oven to 425 degrees F.</p>
<p>Slice carrots diagonally in 1 1/2-inch-thick slices. (The carrots will shrink while cooking so make the slices big.) Toss them in a bowl with the olive oil, salt, and pepper. Transfer to a sheet pan in 1 layer and roast in the oven for 15-18 minutes, until browned and tender.</p>
<p>Toss the carrots with minced parsley, season to taste, and serve.</p>

<p style="text-align: left;">Now my newest favorite veggie dish is <a href="http://www.foodnetwork.com/recipes/bobby-flay/roasted-green-beans-with-shallots-and-hazelnuts-recipe/index.html">Bobby Flay&#8217;s</a> Roasted Green Beans with Shallots and Almonds&#8230;his original recipe calls for hazelnuts instead of almonds, but I had some trouble finding hazelnuts so decided sliced almonds would work just fine.  What I loved about these green beans is not only were they super easy and roasted, but the lemon zest that is added with the almonds as a topping.  The lemon really added a burst of flavor for me that I almost wasn&#8217;t expecting.  The shallots cooked along with the green beans and added a subtle sweet onion flavor to the slightly crisp beans.  This was so easy and such a nice way to change up your everyday green beans.  Try it&#8230;you&#8217;ll like it!</p>

<li class="ingredient" itemprop="ingredients">3 tablespoons olive oil</li>
<li class="ingredient" itemprop="ingredients">4 shallots, thinly sliced</li>
<li class="ingredient" itemprop="ingredients">Salt and freshly ground black pepper</li>
<li class="ingredient" itemprop="ingredients">1/4 cup sliced almonds, toasted</li>
<li class="ingredient" itemprop="ingredients">1 tablespoon finely chopped lemon zest</li>
<li class="ingredient" itemprop="ingredients">2 tablespoons chopped fresh parsley leaves</li>
</ul>

<li>Preheat oven to 425 degrees F.</li>
<li>Toss the green beans in a large baking dish with the oil and shallots and season with salt and pepper. Roast until just cooked through and golden brown, about 15 to 18 minutes. Combine the hazelnuts, zest, and parsley in a small bowl. Transfer green beans to a platter and sprinkle with the almond mixture.</li>

<p style="text-align: left;">Now a few people have asked me how I set up my <a href="http://docs.google.com/Doc?docid=0AZchR5pvV5BMZGRnYmg0OGhfOGdiN2R0ZDNu&amp;hl=en">Printable Recipe</a> links&#8230;I&#8217;ll tell ya, it&#8217;s taken me some time to finally figure this one out myself, and I will have to credit my husband on this one.  He introduced me to <a href="https://www.google.com/accounts/ServiceLogin?service=writely&amp;passive=true&amp;nui=1&amp;continue=http%3A%2F%2Fdocs.google.com%2F&amp;followup=http%3A%2F%2Fdocs.google.com%2F&amp;ltmpl=homepage&amp;rm=false">Google Docs</a>, which according to <a href="http://www.wikipedia.org/">Wikipedia</a> is:</p>

<p style="text-align: left;">What you would do to get started is first get yourself a Google account if you don&#8217;t already have one.  Once you have access to Google docs it&#8217;s pretty easy to go from there.  You should be able to easily get to it from any Google page, you should see the word Documents at the top left corner on the page or listed under the &#8220;more&#8221; category.  Here are the steps I take to get my <a href="http://docs.google.com/Doc?docid=0AZchR5pvV5BMZGRnYmg0OGhfMTJjcHdwMnZnNQ&amp;hl=en">Printable Recipes links</a> on my blog:</p>
<p style="text-align: left;">1.  Create New (drop down) Document</p>
<p style="text-align: left;">2. Copy and paste your recipe into the document.  Edit as you like.</p>
<p style="text-align: left;">3. Save</p>
<p style="text-align: left;">4. Share (drop down) &#8211; Publish as web page</p>
<p style="text-align: left;">5. Share (drop down) &#8211; Get the link to share</p>
<p style="text-align: left;">6. Copy/Paste that link into your blog post as your &#8220;Printable Recipe&#8221;</p>
<p style="text-align: left;">There you have it!  I&#8217;m amazed at how much there is to learn in regards to blogging and website upkeep&#8230;it kinda hurts my brain sometimes.  🙂</p>

<p>This pasta salad was wonderful. It had all of my favorite flavors in it&#8230;capers, tomatoes, basil, olives&#8230;I just knew I would love it as soon as I read the recipe. I substituted whole wheat pasta and added some chopped red onion and additional capers to the pasta for some extra crunch. I was so excited to use basil and tomatoes from my garden&#8230;a delicious combination of cherry and San Marzano tomatoes. This is definitely a salad perfect for summer get togethers, or for a nice easy dinner served alongside some <span style="font-style: italic;">Italian Herb Grilled Chicken</span>&#8230;stayed tuned for that recipe!</p>

<div style="text-align: center;">Summer has definitely begun for us&#8230;though I know not officially on the calendar. The weather is hot, real hot, and the kids are out of school. We have had a busy week visiting with classmates and friends, not leaving me much time for cooking it seems.</p>

<p>Lucky for me, this week&#8217;s <a href="http://barefootbloggers.wordpress.com/">Barefoot Blogger</a> recipe, chosen by Ellyn of <a href="http://www.dnebunch.blogspot.com/">Recipe Collector and Tester</a>, was an easy one. I&#8217;m not kidding when I say easy. That&#8217;s what I love so much about couscous, it&#8217;s ridiculously simple to make and I love flavoring it up by adding veggies, nuts and currants to it&#8230;just like Ina did in this recipe.</p>
<p>I made a few adjustments and additions to the original recipe like adding chopped yellow bell pepper and substituting whole wheat couscous. I also decided to leave out the red onion&#8230;and as I&#8217;m writing this post am realizing that I apparently left out the sliced almonds&#8230;oops.</p>

<p>I loved the curry yogurt dressing called for in this recipe&#8230;though, next time I will probably double it and use a little extra to keep it from becoming too dry as it sits out. This dish is served at room temperature and would be a great side dish for any barbecue or summer get together.</p></div>

<li>Place the couscous in a medium bowl. Melt the butter in the boiling water and pour over the couscous. Cover tightly and allow the couscous to soak for 5 minutes. Fluff with a fork.</li>
<li>Whisk together the yogurt, olive oil, vinegar, curry, turmeric, salt, and pepper. Pour over the fluffed couscous, and mix well with a fork. Add the carrots, parsley, currants, almonds, scallions, and red onions, mix well, and season to taste. Serve at room temperature.</li>

<div style="text-align: center;">This week&#8217;s Ellie Krieger recipe was my choice!  It didn&#8217;t take me too long to pick <a href="http://www.foodnetwork.com/recipes/ellie-krieger/chicken-with-mango-barbeque-sauce-recipe/index.html">Chicken with Mango Barbeque Sauce</a>&#8230;if you are living anywhere in the south these days then you probably have spring fever like I do.  I love being outside this time of year, and even more so enjoy cooking outside.  I pictured this recipe grilled, and over a fresh salad.  So that&#8217;s what I did &#8230;</p>

<p>The &#8220;barbeque&#8221; part of this sauce seems almost a bit misleading&#8230;it was not what I expected at all at first.  The sauce is based on a puree of sauteed red pepper, onion, spices and tomato sauce as well as mangos and jalapenos.  It&#8217;s not lacking in flavor that&#8217;s for sure.  I thought the sauce was wonderful, and would be great with seafood too.  It had a nice kick to it from the jalapenos and a nice fresh sweetness from the red peppers and mangos.</p>
<p>I served the chicken sliced over a large tossed salad with romaine, grape tomatoes, red onion and red pepper.  The salad was tossed in a smoky vinaigrette I put together and then topped with the grilled chicken and additional Mango Barbeque Sauce.  I have quite a bit of sauce left over and am going to throw it in the freezer to save for another time.  Another great Ellie recipe!</p>

<div style="text-align: left;">2 tablespoons olive oil<br />
1 onion, diced (about 1 cup)<br />
1 red pepper, diced (about 1 cup)<br />
3 cloves garlic, coarsely chopped<br />
1 teaspoon salt<br />
Freshly ground black pepper<br />
1/2 teaspoon ground allspice<br />
1/3 cup red wine vinegar<br />
3 tablespoons molasses<br />
2 tablespoons Worcestershire sauce<br />
2 tablespoons lime juice<br />
1/4 cup low-sodium tomato sauce<br />
1 mango, diced (about 1 1/2 cups)<br />
2 to 3 jalapenos, minced<br />
2 boneless, skinless chicken breasts (about 3/4 pound each)  <!--concordance-end-->Heat the oil in a medium-sized skillet over medium-high. Add the onions and cook until translucent, about 2 minutes. Add the red peppers, garlic, salt and pepper, and allspice and cook for 2 minutes more. Stir in the vinegar, molasses, Worcestershire sauce, lime juice and tomato sauce and cook for 1 minute more. Transfer the mixture into a bender and add the mango and jalapeno. Blend until smooth.</p>
<p>Put 1 cup of the barbeque sauce into a sealable plastic bag with the chicken and marinate for 1 hour.</p>
<p>Preheat the broiler. Put the chicken on a broiler pan and discard the marinade. Broil the chicken on high for about 12 minutes, turning once. Let the meat rest for 10 minutes before slicing. Spoon about 1/2 cup of barbeque sauce over the meat slices and serve.</p></div>

<p>Next up is Barefoot Contessa&#8217;s <a href="http://www.foodnetwork.com/recipes/ina-garten/tomato-and-goat-cheese-tarts-recipe/index.html">Tomato and Goat Cheese Tart</a>, chosen by the sweet <a href="http://annestrawberry.blogspot.com/">Anne Strawberry</a>.  I can not get enough of these types of dishes&#8230;I absolutely love tomatoes and goat cheese, throw in some caramelized onions and its just perfection in my book.  Good stuff.</p>

<p>I don&#8217;t normally cook with puff pastry, I love eating it, but cooking with it just makes me nervous.  It&#8217;s just so delicate, and I just don&#8217;t do well with delicate.  I decided to make my own version of these tarts using a whole wheat pizza dough that I found on <a href="http://lichtyfamilyblog.blogspot.com/2009/02/recipe-for-whole-wheat-veggie-pizza.html">Two Peas in Their Pod</a>.  I&#8217;ve been wanting to start making my own pizza dough, and I&#8217;ll tell ya, I&#8217;m glad I did.  These were great served as personal pizzas&#8230;add a small salad to it and you&#8217;ve got yourself a great meal.</p>

I will tell you though, I was excited to find some nice basil in my garden&#8230;I call this basil &#8220;miracle basil&#8221; because it somehow survived our winter freezes this year&#8230;I recently trimmed it back and it has sprung back beautifully!  I can&#8217;t wait to start making homemade pesto again&#8230;</div>

<p><span style="font-weight: bold;">Tomato and Goat Cheese Tarts</span><span style="font-size:85%;"><span style="font-weight: bold; font-style: italic;"><br />

<p>1 package (17.3 ounces/2 sheets) puff pastry, defrosted<br />
Good olive oil<br />
4 cups thinly sliced yellow onions (2 large onions)<br />
3 large garlic cloves, cut into thin slivers<br />
Kosher salt and freshly ground black pepper<br />
3 tablespoons dry white wine<br />
2 teaspoons minced fresh thyme leaves<br />
4 tablespoons freshly grated Parmesan, plus 2 ounces shaved with a vegetable peeler<br />
4 ounces garlic-and-herb goat cheese (recommended: Montrachet)<br />
1 large tomato, cut into 4 (1/4-inch-thick) slices<br />
3 tablespoons julienned basil leaves  <!--concordance-end--></p>
<p>Unfold a sheet of puff pastry on a lightly floured surface and roll it lightly to an 11 by 11-inch square. Using a 6-inch wide saucer or other round object as a guide, cut 2 circles from the sheet of puff pastry, discarding the scraps. Repeat with the second pastry sheet to make 4 circles in all. Place the pastry circles on 2 sheet pans lined with parchment paper and refrigerate until ready to use.</p>
<p>Preheat the oven to 425 degrees F.</p>
<p>Heat 3 tablespoons of olive oil in a large skillet over medium to low heat and add the onions and garlic. Saute for 15 to 20 minutes, stirring frequently, until the onions are limp and there is almost no moisture remaining in the skillet. Add 1/2 teaspoon salt, 1/4 teaspoon pepper, the wine, and thyme and continue to cook for another 10 minutes, until the onions are lightly browned. Remove from the heat.</p>
<p>Using a sharp paring knife, score a 1/4-inch-wide border around each pastry circle. Prick the pastry inside the score lines with the tines of a fork and sprinkle a tablespoon of grated Parmesan on each round, staying inside the scored border.</p>
<p>Place 1/4 of the onion mixture on each circle, again staying within the scored edge. Crumble 1 ounce of goat cheese on top of the onions. Place a slice of tomato in the center of each tart. Brush the tomato lightly with olive oil and sprinkle with basil, salt, and pepper. Finally, scatter 4 or 5 shards of Parmesan on each tart.</p>
<p>Bake for 20 to 25 minutes, until the pastry is golden brown. The bottom sheet pan may need an extra few minutes in the oven. Serve hot or warm.</p>

<p>This chicken piccata with capers recipe from Ina Garten is a classic. Its one everyone should learn to make and once you do you&#8217;ll be happy you did. It&#8217;s a dish that feels fancy and from a restaurant.</p>

<div style="text-align: center;">Since I&#8217;m not one to bake unless I really have a reason to, I&#8217;ve been waiting patiently for the perfect occasion to make these. <p>I just recently discovered a brand of peanut butter that I have totally fallen in love with&#8230;<a href="http://www.ilovepeanutbutter.com/">Peanut Butter &amp; Co</a>. They have the most amazing flavors&#8230;ones I&#8217;ve tried are Dark Chocolate Dreams, Cinnamon Raisin Swirl and White Chocolate Wonderful. I like adding a heaping teaspoon of these delicious flavors into a bowl of plain lowfat yogurt for dessert&#8230;mmmm. So good.</p>
<p>When I decided to make these bars today I had all the ingredients in the pantry&#8230;as far as peanut butter though, all I had was the White Chocolate Wonderful. This peanut butter isn&#8217;t the most inexpensive peanut butter so I cringed a little using up the whole jar for the recipe (actually 2 oz. less than the recipe called for), but I figured it would make the bars that much better.</p>
<p>I thought the bars turned out good&#8230;crumbly and buttery, but they held their shape well. My only complaint was that I thought there should have been more jam than what the recipe asked for. Next time I will just eye ball it and make sure to spread a nice thick layer of jam on them. Also, I think my pan might have been too small&#8230;my bars came out kind of thick, but that&#8217;s not really a bad thing.</p>
<p>If you are a PB&amp;J lover, bake up a batch of these bars and grab a glass of milk&#8230;</p>

<li class="ingredient" itemprop="ingredients">1/2 pound (2 sticks) unsalted butter, at room temperature</li>
<li class="ingredient" itemprop="ingredients">1 1/2 cups sugar</li>
<li class="ingredient" itemprop="ingredients">1 teaspoon pure vanilla extract</li>
<li class="ingredient" itemprop="ingredients">2 extra-large eggs, at room temperature</li>
<li class="ingredient" itemprop="ingredients">2 cups (18 ounces) creamy peanut butter <span style="font-size: 85%;"><span style="font-style: italic;">(I used Peanut Butter &amp; Co. White Chocolate Wonderful)</span></span></li>
<li class="ingredient" itemprop="ingredients">3 cups all-purpose flour</li>
<li class="ingredient" itemprop="ingredients">1 teaspoon baking powder</li>
<li class="ingredient" itemprop="ingredients">1 1/2 teaspoons kosher salt</li>
<li class="ingredient" itemprop="ingredients">1 1/2 cups (18 ounces) raspberry jam or other jam <span style="font-size: 85%;"><span style="font-style: italic;">(I used strawberry)</span></span></li>
<li class="ingredient" itemprop="ingredients">2/3 cups salted peanuts, coarsely chopped <span style="font-size: 85%;"><span style="font-style: italic;">(I totally forgot to add these!)</span></span></li>

<h3 style="clear:left" id="directions">Directions:</h3>
<div class="instructions" itemprop="recipeInstructions"><ol>
<li>Preheat the oven to 350 degrees F.</li>
<li>Grease a 9 by 13 by 2-inch cake pan. Line it with parchment paper, then grease and flour the pan.</li>
<li>In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and sugar on medium speed until light yellow, about 2 minutes. With the mixer on low speed, add the vanilla, eggs, and peanut butter and mix until all ingredients are combined.</li>
<li>In a small bowl, sift together the flour, baking powder, and salt. With the mixer on low speed, slowly add the flour mixture to the peanut butter mixture. Mix just until combined.</li>
<li>Spread 2/3 of the dough into the prepared cake pan and spread over the bottom with a knife or offset spatula. Spread the jam evenly over the dough. Drop small globs of the remaining dough evenly over the jam. Don't worry if all the jam isn't covered; it will spread in the oven. Sprinkle with chopped peanuts and bake for 45 minutes, until golden brown. Cool and cut into squares.</li>

<p>Yesterday afternoon, my husband came back from his 5 day trip to Arizona and we greeted him with a Welcome Home Daddy &#8220;fiesta&#8221;. Honestly, I was so desperate for a little excitement (other than the new <a href="http://www.nickjr.com/shows/olivia/index.jhtml">Olivia show</a> coming to Nick Jr., cute I know&#8230;) that this homecoming celebration was more for me than anyone else!</p>

<p>I decided to whip up my favorite adult beverage to go along with our chips and salsa&#8230;margaritas!! These aren&#8217;t your typical bar margaritas, these are the real deal. They are made from fresh squeezed limes and orange juice&#8230;none of that sugary sour mix that always seems to give me a headache (or maybe it&#8217;s the tequila&#8230;??). The lime juice may be too much for some, but adding the orange juice sweetens it up naturally and makes them even more delicious.</p>

<p><span style="font-weight: bold;">Real Margaritas</span><br />
<span style="font-size: 85%;"><span style="font-style: italic; font-weight: bold;">Recipe from </span><a style="font-style: italic; font-weight: bold;" href="http://www.foodnetwork.com/recipes/ina-garten/real-margaritas-recipe3/index.html">Barefoot Contessa</a></span></p>
<p>1 lime, halved<br />
Kosher salt<br />
1/2 cup freshly squeezed lime juice (5 limes)<br />
1/4 &#8211; 1/3 cup orange juice (not part of original recipe, this is my personal add in &#8211; fresh squeezed if you have it!)<br />
1 cup Triple Sec<br />
3 cups ice<br />
1 cup white tequila (use the good stuff if you have it!)</p>
<p>If you like margaritas served in a glass with salt, rub the outside rims of six glasses with a cut lime and dip each glass lightly into a plate of kosher salt.</p>
<p>Combine the lime juice, orange juice, Triple Sec, and ice in a blender and puree until completely blended. Add the tequila and puree for 2 seconds more. Serve over ice.</p>
<p>If you prefer frozen margaritas, halve each of the ingredients, double the ice, and blend in two batches. Serve with a cut lime.</p>

<p>Dinner was easy, thanks to the deli at my grocery store. I picked up a rotisserie chicken from Publix and shredded the white meat to use for these burritos. I&#8217;m a little bummed, because after looking at my pictures, I realized I forgot to add the black beans!! I guess that happens when you are drinking margaritas while cooking dinner!</p>
<p>These were great&#8230;easy and delicious. They are a perfect weeknight dinner. I used a nonstick grill pan and loved seeing the grill marks on the crispy tortillas. The dipping sauce was good too&#8230;I think it was lacking a little seasoning though. A little garlic salt and fresh ground pepper might be just what it was missing.</p>

<p><span style="font-weight: bold;">Skillet-Grilled Burritos</span> <span style="font-size: 85%;"><span style="font-weight: bold; font-style: italic;"><br />
Recipe adapted from Southern Living</span> </span></p>
<p>2 cups chopped cooked chicken breast (I used shredded rotisserie chicken)<br />
1 15-oz can black beans, rinsed and drained<br />
1 cup frozen corn kernels<br />
1 red pepper, chopped<br />
1 cup cooked spinach, chopped<br />
1 cup shredded 2% reduced fat cheddar cheese<br />
Creamy Cilantro-Jalapeno Sauce (recipe below)<br />
8 whole wheat flour tortillas, warmed<br />
Cooking Spray<br />
Salsa</p>
<p>Toss together first 6 ingredients and 1/2 cup Creamy Cilantro-Jalapeno Sauce. Spread 3/4 cup chicken mixture just below center of each tortilla. Fold opposite sides of tortillas over filling, and roll up. Coat burritos with cooking spray.</p>
<p>Coat a hot griddle or non stick skillet with cooking spray. Cook burritos, in batches, on hot griddle over medium heat, pressing gently with spatula, 3-4 minutes on each side or until golden brown and cheese is melted. Serve with salsa and remaining Creamy Cilantro-Jalapeno Sauce.<br />

<p>1 cup light sour cream<br />
1/2 cup loosely packed fresh cilantro leaves, chopped<br />
2 TB diced pickled jalapeno peppers (did not have these on hand, subbed chopped green chiles)<br />

2 tsp Dijon mustard<br />

<p>Stir together all ingredients in small bowl. Cover and chill for 30 minutes. Store in airtight container for up to 2 days.<br />

<li class="ingredient" itemprop="ingredients">1/2 cup all purpose flour</li>
<li class="ingredient" itemprop="ingredients">3 tablespoons sugar</li>
<li class="ingredient" itemprop="ingredients">2 teaspoons baking powder</li>
<li class="ingredient" itemprop="ingredients">1 1/2 teaspoons kosher salt</li>
<li class="ingredient" itemprop="ingredients">1/2 cup light sour cream</li>
<li class="ingredient" itemprop="ingredients">3/4 cup plus 1 tablespoon non fat milk</li>
<li class="ingredient" itemprop="ingredients">2 extra-large eggs</li>
<li class="ingredient" itemprop="ingredients">1 teaspoon pure vanilla extract</li>
<li class="ingredient" itemprop="ingredients">1 teaspoon cinnamon</li>
<li class="ingredient" itemprop="ingredients">1 teaspoon grated orange zest</li>
<li class="ingredient" itemprop="ingredients">2-3 tablespoons flax meal</li>
<li class="ingredient" itemprop="ingredients">Non stick spray</li>
<li class="ingredient" itemprop="ingredients">2 ripe bananas, diced, plus extra for serving</li>
<li class="ingredient" itemprop="ingredients">1/4 cup sliced almonds, crushed</li>
<li class="ingredient" itemprop="ingredients">Pure maple syrup</li>
</ul>

<h3 style="clear:left" id="directions">Directions:</h3>
<div class="instructions" itemprop="recipeInstructions"><ol>
<li>Sift together the flour, sugar, baking powder, and salt. In a separate bowl, whisk together the sour cream, milk, eggs, vanilla, cinnamon and orange zest. Add the wet ingredients to the dry ones, mixing only until combined. In a separate bowl, add diced bananas and crushed almonds and gently toss together.</li>
<li>Spray large skillet with non stick spray and heat over medium-low heat. Ladle the pancake batter into the pan to make 3 or 4 pancakes. Distribute a rounded tablespoon of banana-almond mixture on each pancake. Cook for 2 to 3 minutes, until bubbles appear on top and the underside is nicely browned. Flip the pancakes and then cook for another minute until browned. Wipe out the pan with a paper towel, add more non stick spray to the pan, and continue cooking pancakes until all the batter is used. Serve with sliced bananas and maple syrup.</li>

<div style="text-align: left;">I told you I spent the day with my husband&#8217;s family over the weekend&#8230;my sister in law, Paula, made this potato dish for us and oh did we enjoy it. Paula is a fellow foodie&#8230;she loves Barefoot Contessa as much as I do and we can really talk food if you know what I mean. She was even nice enough to bring me a copy of the cookbook they were giving away at Costco&#8230;she knows what makes me happy! We enjoyed this creamy potato dish alongside some glazed ham and salad&#8230;a perfect meal. Especially right before you are about to set some New Year&#8217;s Resolutions!!</div>

<p>Gratins are delicious and such a great addition to any holiday meal. This <a href="https://iowagirleats.com/2017/04/12/cauliflower-gratin/" target="_blank" rel="noopener">Cauliflower Gratin</a> caught my eye as well as did this <a href="https://www.realsimple.com/food-recipes/browse-all-recipes/cheesy-asparagus-gratin" target="_blank" rel="noopener">Asparagus Gratin</a>.</p>

<li class="ingredient" itemprop="ingredients">2 small fennel bulbs</li>
<li class="ingredient" itemprop="ingredients">1 yellow onion, thinly sliced</li>
<li class="ingredient" itemprop="ingredients">2 tablespoons good olive oil</li>
<li class="ingredient" itemprop="ingredients">1 tablespoon unsalted butter</li>
<li class="ingredient" itemprop="ingredients">2 pounds russet potatoes (4 large potatoes)</li>
<li class="ingredient" itemprop="ingredients">2 cups plus 2 tablespoons heavy cream</li>
<li class="ingredient" itemprop="ingredients">2 1/2 cups grated Gruyère cheese (1/2 pound)</li>
<li class="ingredient" itemprop="ingredients">1 teaspoon kosher salt</li>
<li class="ingredient" itemprop="ingredients">1/2 teaspoon freshly ground black pepper</li>
</ul>

<h3 style="clear:left" id="directions">Directions:</h3>
<div class="instructions" itemprop="recipeInstructions"><ol>
<li>Preheat the oven to 350 degrees F.</li>
<li>Butter the inside of a 10-by-15-by-2-inch (10-cup) baking dish.</li>
<li>Remove the stalks from the fennel and cut the bulbs in half lengthwise. Remove the cores and thinly slice the bulbs crosswise, making approximately 4 cups of sliced fennel. Saute the fennel and onions in the olive oil and butter on medium-low heat for 15 minutes, until tender.</li>
<li>Peel the potatoes, then thinly slice them by hand or with a mandoline. Mix the sliced potatoes in a large bowl with 2 cups of cream, 2 cups of Gruyère, salt, and pepper. Add the sauteed fennel and onion and mix well.</li>
<li>Pour the potatoes into the baking dish. Press down to smooth the potatoes. Combine the remaining 2 tablespoons of cream and 1/2 cup of Gruyère and sprinkle on the top. Bake for 1 1/2 hours, until the potatoes are very tender and the top is browned and bubbly. Allow to set for 10 minutes and serve.</li>

<p>We took the trip with my immediate family &#8211; my sister, her husband and her little one, my brother, and my mom. My dad wasn&#8217;t able to make it because he had to stay back and run the family restaurant.</p>

<div style="text-align: left;">We got back to Florida the night before Thanksgiving. We celebrated a nice Thanksgiving at my parent&#8217;s house with a ton of good food and wine&#8230;we were stuffed, it was fun, but we were really ready to get back home to Orlando.</p>
<p>So here we are home again&#8230;refreshed and ready to get back into a routine. I know most of you spend the day after Thanksgiving shopping with the crowds, but my day after Thanksgiving tradition is hitting the gym. After being on vacation for a week, I really really needed a good workout&#8230;.and some good healthy food. I knew before I left that I would be making <a href="http://www.foodnetwork.com/recipes/ina-garten/mexican-chicken-soup-recipe/index.html"><span style="font-weight: bold;">Ina&#8217;s Mexican Chicken Soup</span></a> when we got back&#8230;the recipe sounded wonderful with all the chicken and veggies&#8230;and it was just what we needed Friday night.</p>

<li class="ingredient" itemprop="ingredients">4 split (2 whole) chicken breasts, bone in, skin on <span style="font-style: italic; color: #660000;">(I used shredded chicken from a Rotisserie I picked up at the grocery store)</span></li>
<li class="ingredient" itemprop="ingredients">Good olive oil</li>
<li class="ingredient" itemprop="ingredients">Kosher salt and freshly ground black pepper</li>
<li class="ingredient" itemprop="ingredients">2 cups chopped onions (2 onions)</li>
<li class="ingredient" itemprop="ingredients">1 cup chopped celery (2 stalks)</li>
<li class="ingredient" itemprop="ingredients">2 cups chopped carrots (4 carrots)</li>
<li class="ingredient" itemprop="ingredients">4 large cloves garlic, chopped</li>
<li class="ingredient" itemprop="ingredients">2 1/2 quarts chicken stock, preferably homemade <span style="font-style: italic; color: #660000;">(Swanson's low sodium chicken broth works for me!)</span></li>
<li class="ingredient" itemprop="ingredients">1 (28-ounce) can whole tomatoes in puree, crushed <span style="font-style: italic; color: #660000;">(I crushed them with my hands, but I'm thinking that diced tomatoes would work here too)</span></li>
<li class="ingredient" itemprop="ingredients">2 to 4 jalapeno peppers, seeded and minced <span style="font-style: italic; color: #660000;">(my grocery store was out of jalapenos so I substituted a milder Anaheim pepper)</span></li>
<li class="ingredient" itemprop="ingredients">1 teaspoon ground cumin</li>
<li class="ingredient" itemprop="ingredients">1 teaspoon ground coriander seed</li>
<li class="ingredient" itemprop="ingredients">1/4 to 1/2 cup chopped fresh cilantro leaves, optional</li>
<li class="ingredient" itemprop="ingredients">6 (6-inch) fresh white corn tortillas <span style="font-style: italic; color: #660000;">(I substituted whole wheat tortillas, and only used 2)</span></li>
</ul>

<h3 style="clear:left" id="directions">Directions:</h3>
<div class="instructions" itemprop="recipeInstructions"><ol>
<li>Preheat the oven to 350 degrees F.</li>
<li>Place the chicken breasts skin side up on a sheet pan. Rub with olive oil, sprinkle with salt and pepper, and roast for 35 to 40 minutes, until done. When the chicken is cool enough to handle, discard the skin and bones, and shred the meat. Cover and set aside.</li>
<li>Meanwhile, heat 3 tablespoons of olive oil in a large pot or Dutch oven. Add the onions, celery, and carrots and cook over medium-low heat for 10 minutes, or until the onions start to brown. Add the garlic and cook for 30 seconds. Add the chicken stock, tomatoes with their puree, jalapenos, cumin, coriander, 1 tablespoon salt (depending on the saltiness of the chicken stock), 1 teaspoon pepper, and the cilantro, if using. Cut the tortillas in 1/2, then cut them crosswise into 1/2-inch strips and add to the soup. Bring the soup to a boil, then lower the heat and simmer for 25 minutes. Add the shredded chicken and season to taste. Serve the soup hot topped with sliced avocado, a dollop of sour cream, grated Cheddar cheese, and broken tortilla chips.</li>
</ol>
<p>For serving: sliced avocado, sour cream, grated Cheddar cheese, and tortilla chips</p>

<p><span style="color: #660000;">Tip: Make your own healthier tortilla "chips" by slicing a whole wheat tortilla into strips, spray them with non stick spray, then crisping them up in a hot non stick skillet.</span></p>
