Friends, what you are looking at has been my lunch/dinner for 3 days last week. I think it’s safe to say that I’m completely hooked on these Pizza Stuffed Mushrooms and the best part? They literally take like 15 minutes to make.
This recipe for Pizza Stuffed Mushrooms was created by Katie of Mom to Mom Nutrition and can be found in the Healthy Family Classics cookbook from my dear friends Produce For Kids. I mentioned how easy it was to make these pizza stuffed mushrooms, they are super versatile too! The original recipe calls for pepperoni (always a family favorite, try turkey pepperoni for something lighter), but I have made them with leftover grilled Italian chicken sausage as well as leftover bolognese sauce. It all works and is equally delicious. Don’t skip the fresh basil if you have it on hand, it adds a great punch of freshness and flavor. Perfect for a quick summer meal.
I can’t tell you how much I love having these as a low carb option for when I’m craving pizza!

Ingredients
- 4 portobello mushroom caps, stems removed
- 1 cup marinara sauce, divided
- 12 pepperoni slices
- 1 cup shredded mozzarella cheese, divided
- 1/4 fresh basil, chopped
Instructions
- Preheat oven to 400 degrees.
- Spray baking sheet with nonstick spray. Place mushrooms on baking sheet and fill evenly with marinara, pepperoni, and cheese.
- Bake 10 minutes or until mushrooms are tender and cheese is melted.
- Top with basil.
