It’s hard to believe that I was actually sailing along the California Coast just a little over a month ago. Oh what I would give to be back on the Ruby Princess enjoying food, friends and adult beverages like one of these Pomegranate Rum Cocktails inspired by the Love Boat’s famous bartender, Isaac. With Florida weather still creeping into the 90s (um…yea, it’s November), my husband and I were able to enjoy these cocktails on our back patio over the weekend – not exactly the same as cruising but definitely helped us feel like we were escaping for about 10 minutes.
A fun fact I learned while cruising with Princess Cruises is that one of my favorite childhood shows, Love Boat, was actually filmed on their cruise line. Any other Love Boat fans out there? (I realized quickly while on our cruise that age played a big part in even knowing what the Love Boat was!)
One of the many things that made our Princess Cruise extra special was that Jill Whelan, who played the Captain’s daughter Vicki, was on board as their Celebrations Ambassador. She mingled with cruise guests, hosted special events and joined our group on excursions – talk about fun! Jill was so personable and it was a treat to get to know her as well as hear about her personal Love Boat experience (she was just a young girl when she was on the show).
One more fun little thing – in the above photo, right over my shoulder is Alison Balson, the actress who played Nancy (remember her??) on Little House on the Prairie. She was with us on our wine tasting excursion in Santa Barbara! She is such a lovely person and it was so cool to get to meet a couple of celebrities from our childhood shows.
Of course, nothing screams cruise more than a good cocktail. We were introduced to this “drink of the day” on the first night of our cruise. I normally don’t order fruity rum drinks but I couldn’t resist this one. I love pomegranate and how can you say no to anything named after Isaac the bartender? It’s a festive one for sure. I knew I wanted to recreate it when I got home, but instead of using pomegranate syrup like the drink is made with on the ship, I opted for pomegranate juice.
Pomegranate syrup is basically like a pomegranate infused simple syrup, it is sweet and a great add in to Italian sodas, cocktails and even lemonade or iced tea. If you enjoy sweeter drinks, you would love the addition of pomegranate syrup to this drink. If you like your cocktails a little less sweet (think vodka cranberry), then the pomegranate juice will be for you.
Since I can’t be on a boat enjoying one of these pomegranate cocktails, I guess my back patio will do for now. I think these would be a great addition to the holiday season too, don’t you think?

Inspired by the Love Boat’s famous bartender, Isaac, this Pomegranate Rum Cocktail will instantly make you feel like you are on vacation!
Ingredients
- 1 part white rum (I used 2 shots of the larger side of a measuring jigger)
- 1 part pomegranate juice (I used 2 shots of the larger side of a measuring jigger)
- juice from half a lime, freshly squeezed
- splash club soda
- pomegranate arils, garnish
- lime wedges, garnish
Instructions
- Fill a tall glass with ice.
- In a shaker, add ice, rum, pomegranate juice and lime juice. Shake and strain into cocktail glass. Top with club soda and garnish with lime wedge and pomegranate arils.

I used to watch Love Boat when I was a kid–I LOVED that show (and still do)! I’ve never forgotten the theme song, either. And you met Vicki?! How cool is that?! Your cruise looked like it was lovely. Of all the cruises I’ve taken, I’ve never been on a Princess cruise. Maybe for our next vacation? I’m not much of a cocktail drinker, but this pomegranate cocktail sounds wonderful!
