<p>If there is one thing that can make or break a busy week in our family, it&#8217;s meal prep and planning. As our kids have gotten older, they are involved in more and more activities and sports after school which keeps us moving before, during and after what used to be our dinner hour. It&#8217;s a short season of life, and what I&#8217;ve learned is how important it is for me to meal prep and plan to help things run a little more smoothly during the week (weekends too!), helping us to eat more meals at home.</p>

<h2>Mission For Nutrition</h2>
<p>I&#8217;ve partnered with my friends at Produce For Kids during the month of March in celebration of National Nutrition Month and their <a href="https://www.produceforkids.com/mission-for-nutrition/" target="_blank" rel="nofollow noopener noreferrer">Mission for Nutrition program</a>. Produce For Kids has recently launched the Mission for Nutrition program that will raise awareness on the importance of meal planning and prep to achieve regular healthy family eating.</p>

<p>Another great Ellie Krieger recipe! This salmon recipe comes from one of my favorite healthy cookbooks, <a href="https://amzn.to/2W0QnDi" target="_blank" rel="nofollow noopener noreferrer">The Food You Crave</a> by Ellie Krieger. I highly recommend it to anyone who is new to cooking salmon or trying to introduce new salmon recipes to their family. This healthy salmon recipe is always a winner and has been my go-to recipe for years.</p>
<p>I&#8217;m a huge fan of sweet and spicy flavors&#8230;though I wouldn&#8217;t consider the flavor in this dish spicy. It has great chili flavor but there isn&#8217;t any heat, so don&#8217;t let the term &#8220;spicy&#8221; mislead you. It&#8217;s the perfect amount of seasoning.</p>

<p>I was introduced to delicata squash by my mom 7 years ago when she brought some to my house after receiving it in her weekly CSA basket from one of her local farms. At the time, both of us didn&#8217;t eat a lot of meat and she was excited to share this vegetarian stuffed delicata squash recipe she pulled together with me. My mom has always been good at pulling together meals with whatever she has on hand &#8211; I like to think I got those skills from her.</p>
<p>This Stuffed Delicata Squash recipe was originally posted in January of 2011 (see below). Ironically, my mom was here &#8220;saving the day&#8221; again a couple of weeks ago, just as I picked up a few delicata squash at <a href="https://aggieskitchen.com/my-first-trip-to-trader-joes/" target="_blank" rel="noopener">Trader Joe&#8217;s</a>. I love how Trader Joe&#8217;s can make an ingredient so popular, especially when it&#8217;s a fruit or vegetable. If you don&#8217;t have a Trader Joe&#8217;s near you, no worries, you can find delicata squash mixed in with the selection of hard squashes (<a href="https://aggieskitchen.com/instant-pot-spaghetti-squash-how-to/" target="_blank" rel="noopener">spaghetti squash</a>, <a href="https://aggieskitchen.com/roasted-acorn-squash-smoked-paprika/" target="_blank" rel="noopener">acorn squash</a>, butternut squash) at most grocery stores.</p>

<p>It&#8217;s hard to mess up a smoothie in my opinion. Once you get a basic formula down, and you&#8217;re using a blend of naturally sweet fruit with yogurt, milk or a little juice, then really the sky is the limit as far as combinations go. If you look in my freezer you could pretty much always find a few bags of frozen fruit ready to be put into a blender. Though I love to eat fresh fruit daily, frozen fruit is usually my go to when it comes to smoothies because I find that it makes them extra creamy and thick, and keeps them extra cold.</p>
<h2>How do you make a smoothie with yogurt?</h2>
<p>First, you need a blender! There are so many great blenders on the market these days. I&#8217;ve been using my <a href="https://amzn.to/2DDCIft" target="_blank" rel="noopener">Blendtec</a> (affiliate link) for so many years, it&#8217;s high powered and worth the investment in my opinion (tip: buy a refurbished one if you can!). You could also use a Vitamix, Ninja, or Magic Bullet blender.</p>
<p>If your blender isn&#8217;t a high powered blender, then I suggest you let the frozen fruit sit in your blender jar a few minutes to defrost and slightly soften up to make it easier to blend. Always add your liquids to the jar first, then layer with your softest to hardest fruits to get a better blend.</p>
<h2>Is Greek yogurt good in smoothies?</h2>
<p>Yes! What I love about making smoothie recipes with Greek yogurt is the added protein. Greek yogurt typically has around 10 &#8211; 15 g of protein per half cup, depending on the brand. Depending on the flavor, it will have sugar and carbs too, so watch for that. If you are drinking a smoothie as a post workout drink your body needs the carbs so fruit and yogurt can provide them. A Greek yogurt fruit smoothie makes a great post-workout recovery drink!</p>

<p>These days, there are so many recipes that include Greek yogurt, the options are endless. I even went a little crazy and baked up a version of these <a href="http://www.savorysimple.net/peach-yogurt-muffins/" rel="nofollow">Peach Yogurt Muffins</a> for my kids (I really need to do that more often, why oh why don&#8217;t I like to bake?).</p>

<p>I originally posted this Mediterranean Chopped Tuna Salad a little over a year ago. I made it again recently&nbsp;and decided to snap some new pics (the ones in the original post were from my iPhone). It&#8217;s one of my go-to salads (one that I will most likely be having for lunch today) and really fills you up with a good amount of veggies and protein. It&#8217;s funny, and a little ironic, because as I&#8217;m rereading my thoughts in my original post as I just scheduled&nbsp;initial assessment for <a href="http://www.competitorgymorlando.com/the-competitor-gym-60-day-comeback-challenge-2015/" target="_blank" rel="noopener noreferrer">my gym&#8217;s 60 Day Comeback Challenge</a> for tomorrow&nbsp;this morning.</p>
<p>Earlier this year, I made a commitment to make&nbsp;health and fitness a priority in my life. I know I am generally very health and fitness focused but I had some personal changes and goals I wanted to work towards, especially after having my 3rd child. Joining a new gym and really stepping up my work outs have been a game changer for me. I feel stronger than I ever have in my life and am really proud of my accomplishments at the gym. I wake up before the crack of dawn 4 days a week and am excited to get to the gym &#8211; how many people can say that? I love my trainers, my workouts and the overall postive vibe and people at my gym.</p>
<p>Now, although I feel stronger and have the gym situation under control, I still struggle with food. Plain and simple &#8211; I like to eat! 🙂 My Fitness Pal is going to make a comeback in my life to help my achieve my goals in the 60 Day Challenge (and maybe help me win some cash too!). I&#8217;ll keep you posted here and&nbsp;hope to share any food and recipe ideas that are helping me along the way.</p>

<p>There a couple reasons why I&#8217;m loving this salad so much lately. One, it&#8217;s incredibly filling and full of flavor. Two, it&#8217;s low in calories, carbs and is helping me lose weight! For the last couple of weeks, my husband and I have been buckling down and tracking our food and activity in <a href="http://www.myfitnesspal.com/" target="_blank" rel="noopener noreferrer">My Fitness Pal</a>, as well as using our <a href="http://amzn.to/1iECSo7" target="_blank" rel="nofollow noopener noreferrer">Fitbits</a>&nbsp;to keep us motivated to move. I&#8217;m happy to report that in just a couple of weeks of really paying attention to what we are eating and how much exercise we are getting in, we are both losing weight at a healthy, steady pace.</p>

<p>It&#8217;s no secret that <a href="https://aggieskitchen.com/2014/03/17/fruity-kefir-smoothie/" target="_blank" rel="noopener noreferrer">I&#8217;ve been trying to shed some baby weight</a> for the last 10 months and I&#8217;ve been majorly frustrated lately because I&#8217;ve been stuck at a weight since February. Unfortunately for me (as I&#8217;m sure many others), my weight tends to affect my mood more than I&#8217;d like to admit. I get by by wearing yoga pants most of the time, but when it&#8217;s time to put on real clothes I usually get hit with a reality check that doesn&#8217;t make me feel all that good (ugh).</p>
<p>My goal has never been to be &#8220;skinny&#8221; but to be comfortable in my skin, be healthy and fit and feel good about myself in my clothes. For me to get back to that place, I know I need to muster up a little extra will power and motivation and make smart choices, keep my calories in check&nbsp;and move more. So that&#8217;s what I&#8217;m doing! (Believe me it has not been easy. But with each successful day that passes it gets easier, more routine and more doable. I am looking forward to reaching my goal!)</p>

<p>I have made myself this salad recipe a couple times in the last few weeks, most recently this weekend for both my husband and myself. It&#8217;s obvious that I love it, but I was extra happy to see that my husband loved it too, especially because he has never been a huge tuna fish lover (like I am).</p>
<p>It&#8217;s light, filling and simple. It is great for lunch, but would make a nice healthy dinner salad too. Feel free to add whatever veggies you have on hand (if I had cucumbers and tomatoes they would have made it into my bowl).</p>
<p>Also, I have been cutting back on salad calories lately by just dressing my salads with red wine vinegar, oregano, salt and pepper. If you want to add a drizzle of olive oil, feel free to, but if you love vinegar like I do then I think you will enjoy this just how it&#8217;s prepared.</p>

<p>Leftovers&#8230;love &#8217;em or hate &#8217;em? I have mixed feelings about leftovers. They aren&#8217;t something that I normally get excited about, but I&#8217;m usually grateful for, especially at lunchtime the next day. I especially love when I can take leftovers and create something &#8220;new&#8221; with with them. This Roasted Acorn Squash Bolognese is a leftover mash-up (of these <a href="https://aggieskitchen.com/2014/10/20/roasted-acorn-squash-smoked-paprika/" target="_blank" rel="noopener">two</a> <a href="https://aggieskitchen.com/2014/10/22/spaghetti-turkey-kale-bolognese/" target="_blank" rel="noopener">recipes</a>) that I enjoyed for lunch a couple of weeks ago. I&#8217;ve never eaten acorn squash this way and it was absolutely delicious!</p>
<p>I had just enough left over for a great low-carb meal for one&#8230;but this could easily be prepared for dinner. I love roasting acorn squash this way, it is simple and once it&#8217;s cooked up you just grab yourself a fork and knife and dig in. The squash cuts right off the skin, and when it&#8217;s topped with a hearty turkey and kale bolognese sauce it becomes such a filling, healthy meal that is truly perfect for this time of year.</p>
<p>With the time change and the evenings creeping up earlier I&#8217;m always craving warm, comfort food for dinner. Having lower carb options that down weigh me down is always a good thing.</p>
<p>The shorter days definitely make the evenings more cozy, wouldn&#8217;t you agree? I feel like it forces us to slow down a bit more, and just relax. I&#8217;ll take it.</p>

</a>There was a time, like two weeks ago, when I was terrified to cook a pork tenderloin. Maybe the word terrified is a bit extreme&#8230;let&#8217;s use intimidated instead. I was definitely intimidated.</p>
<p>I don&#8217;t know about you, but I&#8217;ve been finding myself in a bit of a cooking rut lately, cooking a lot of the same things &#8211; mostly chicken and turkey. Nothing wrong with chicken and turkey, but I have been getting bored with it and I&#8217;m sure my family is too. I forced myself to get out of my comfort zone and try something new &#8211; and cooked up this Roasted Chili Maple Pork Tenderloin. My family is so happy I did. I&#8217;ve made it twice in the last two weeks (experimenting with different marinades) and they devoured it. I&#8217;m so excited to have something new to throw into the dinner rotation that everyone loves (and it frequently goes on sale at the grocery store so that&#8217;s a win!).</p>

<p>Back to school week always energizes me. I don&#8217;t know about other moms, but summer leaves me feeling a little ragged. I love the laid back relaxed feeling of summer break, but by now I&#8217;m starting to crave a bit of routine and order around the house. I&#8217;m also craving time to cook and blog more, so hopefully you&#8217;ll start seeing posts and recipes a little more frequently again.</p>
<p>This past weekend I attended my future sister-in-law&#8217;s bridal shower. My &#8220;baby&#8221; brother is getting married next month and I am so excited for the both of them. Bridal (and baby) showers are always fun to be a part of, not only for the obvious reason of showering the bride with gifts and love, but let&#8217;s be honest&#8230;the food is always something to look forward to. I love party food! When I started to make my plate my eyes spotted a good looking bean and pepper salad on the table. It was made by the mother of the bride and I helped myself to it a couple of times. It was so simple and that&#8217;s what I loved about it. I was inspired to recreate it immediately to serve as a side dish for one of our dinners this week. I made it earlier in the day and stored in the fridge so it was ready to go &#8211; to help with typical school night dinner prep madness. This Pinto Bean and Pepper salad is a perfect side dish recipe for tacos, quesadillas or even grilled chicken. It&#8217;s also a great (healthy) potluck dish (obviously since that&#8217;s how I first tried it), so consider making it for the next barbecue or get together you are invited to!</p>

<p>We&#8217;ve entered the time of year where I am seeing requests for recipes using zucchini everywhere I turn. Zucchini seems to take over gardens, farmer&#8217;s markets and produce sections for a good part of summer and I love finding new ways to incorporate it into everyday recipes to keep things interesting.</p>
<p>When my kids were little, I always sliced a zucchini and sprinkled it with salt to give them as a snack on the counter while I cooked dinner. They never questioned what they were eating, and they finished up their healthy raw zucchini snack without complaining every single time (this made me so happy!!). I started eating it this way with them too and over the years started adding raw zucchini (and yellow squash) into salads more regularly. I think it makes a great healthy addition to a salad, especially when you add in some crunch from nuts and sweetness from raisins like in this Zucchini and Walnut Arugula Salad.</p>

They have a ton of flavor when roasted (or quickly toasted up in a skillet) but I find myself eating them raw more often due to a bit of laziness but more importantly for <a href="http://www.prevention.com/which-healthier-raw-nuts-vs-roasted-nuts" target="_blank" rel="nofollow noopener noreferrer">added health benefits</a>. Whether they are roasted or raw, they are an absolute must in almost every salad I make, especially in the summer time!</p>

<p>Note to self: make lettuce wraps more often at home.</p>
<p>Seriously people, don&#8217;t you just love lettuce wraps? Why do I always forget about them?? I&#8217;m obsessed with the ones at PF Changs (the vegetarian tofu ones are awesome for first-time tofu tasting!) and have had the copykat recipe bookmarked for them for years, but never got around to it.</p>
<p>Well, these probably aren&#8217;t as <em>good</em> as theirs, but they are still good. And they are low carb, and diet friendly. And you just feel good after eating them.</p>

<p>I like to keep the Asian section of my pantry and fridge stocked up for meals like this. For this recipe I cooked with lean ground turkey breast, and if you&#8217;ve cooked with lean ground turkey breast then you know that it can be kinda&#8230;well, kinda <em>plain</em>.</p>
<p>Chinese five-spice powder is still new to me and I really like it (I&#8217;ve made it on <a href="https://aggieskitchen.com/2009/10/29/baked-asian-5-spice-mahi-mahi/">this fish</a> before and it was awesome). It&#8217;s interesting&#8230;and unique. I sprinkled it over the turkey breast while it was browning with some onions and carrots. <a href="http://mizkan.com/Brands/Nakano/ProductsAndFlavors/" rel="nofollow">Nakano rice vinegar</a> is pretty much a staple whenever I&#8217;m cooking up Asian because it just adds so much flavor and brightens things up without any calories, fat, etc etc. I combined the rice vinegar, tamari, black bean sauce and agave into a sauce mixture and added it to the meat toward the end of cooking to develop and finish off the filling.</p>

<p>My entire family loved these turkey lettuce wraps. This is the only time my son eats lettuce, the excitement he has over lettuce wraps is mind boggling since he is so anti-salad. If that&#8217;s not a reason for making them more often I don&#8217;t know what is.</p>
