Black Bean and Egg Tostadas
Change up your egg and toast breakfast (or dinner) routine with these simple and healthy Black Bean and Egg Tostadas – comes together in just minutes with just a few staple ingredients.
At breakfast, I’m typically an egg and toast girl. Every now and then I go through an oatmeal phase but for the most part I stick to a quick fried egg and a slice of lightly buttered Ezekiel bread with my cup of coffee. Eggs are also my choice when it comes to breakfast for dinner…which is when I started making these easy Black Bean and Egg Tostadas.
If you have all the ingredients on hand, which is highly possible, you can put these little tostadas together in literally just a few minutes. The recipe is for one tostada, but I can usually make (and eat) 2 at a time.
You can file this little recipe under the “I don’t know what to make for dinner” or “I want something different for breakfast” categories. It seems to fit the bill for both categories quite often lately.
Once I’ve made one or two, I usually just store the black beans in a tupperware and this meal becomes a regular thing for 2 or 3 days. It’s really that easy to make and I enjoy the change up. I love adding corn tortillas and black beans to eggs like in this Beef and Egg Tortilla Skillet. If you haven’t tried it yet, I highly recommend it!

Black Bean and Egg Tostadas
Yield: serves 1
Total Time:10 minutes
Ingredients:
- 1 corn tortilla
- 2 tablespoons shredded Mexican blend or cheddar cheese
- 2 tablespoons Bush's Black Beans, drained and rinsed
- 1 egg
- green and/or red salsa
- hot sauce, optional
- avocado, optional
- cilantro, optional
Directions:
- In a nonstick skillet over medium heat place your corn tortilla. Heat one side for about 1 minutes, then flip. Add cheese and beans and cook for 1-2 minutes until tortilla crisps up on bottom and cheese melts. Slide out onto a plate.
- Spray skillet with nonstick spray. Add your egg and cook to your desired doneness. When cooked to your liking slide out of skillet over top of your tortilla.
- Top with salsa, avocado and hot sauce.
