<p>If you asked me who is playing this weekend for Super Bowl I honestly would only be able to name one of the teams &#8211; and only because of all the major love or hate for this particular team do I even know that they are playing. Super Bowl is fun, but for me it&#8217;s not about the football. I&#8217;ve never been a big NFL fan but I do enjoy watching sports and participating in sport watching festivities that include food and beverage so there&#8217;s that.</p>
<p>Anyone else feel me here?</p>
<p>We all need good appetizer recipes to put out during Super Bowl and if you can throw in a few healthier ones even better! Here are a few of my favorite healthy appetizers I think would be a hit on Sunday whether you are hosting a party at your house or going to watch somewhere and need to bring a dish.</p>

<p>I don&#8217;t know about you, but I would be totally okay with sitting down to a plate of these Mediterranean Nachos for an unofficial meal any night of the week. They would particularly be welcomed on a Friday or Saturday night, when I tend to lose my steam for putting together a real meal.</p>
<p>I like snacky food, I always have and I always will. There is not an appetizer plate I can resist and these &#8220;nachos&#8221; are officially on that list. The best part is how easy they are to put together (would I ever steer you to something complicated?) and how quickly they disappear once they are served.</p>

<p>I&#8217;ve officially been logging my food into My Fitness Pal for 36 days. That&#8217;s a huge accomplishment for me! The first week I started, it felt cumbersome and time consuming but by my 5th week it&#8217;s become a breeze. Most of the food I eat regularly is already there and I&#8217;m finding I try to eat a lot of the same or at least similar meals (I&#8217;ve <a href="http://www.womenshealthmag.com/weight-loss/healthy-eating-habits" target="_blank" rel="noopener noreferrer">read that eating similar &#8220;predictable&#8221; meals each day is a habit of fit people</a> &#8211; I agree!). I&#8217;m down about 5lbs and feeling really good.</p>
<p>One meal I have in rotation this past month are these Sriracha Shrimp and Hummus Lettuce Wraps. They are pretty basic and easy to put together, and quick! You can use frozen cooked shrimp that you&#8217;ve defrosted (that is what I&#8217;ve been doing) or roast up a bunch of shrimp and eat in salad or wraps like this over a couple of days. I&#8217;ve been loving lettuce wraps like this lately as a change up from my usual salad.</p>

<p>I don&#8217;t know about you but when I&#8217;m asked to bring an appetizer, or if I&#8217;m having people over for a get-together, a veggie plate is a no-brainer when it comes to figuring out what food I&#8217;m going to put out to snack on. <p>What&#8217;s great about having a food blog is you basically have a food diary that documents what you&#8217;ve eaten over the years and if you&#8217;re lucky, a little story behind it. For example, I stumbled across this recipe for Greek Salad &amp; Hummus Pita Pizza in my <a href="https://aggieskitchen.com/recipe-index/">blog archives</a> recently and was instantly brought back to a season that I remember eating these very very often. These pita &#8220;pizzas&#8221; are so incredibly light and delicious I really wanted to share them again with you, in case you are looking for new ideas for lunch or light dinners. &#8216;Tis the season for light dinners right?</p>

<p>I don&#8217;t know about you, but I am always happy when I spot lighter fare at parties or get togethers. Especially in January. Or February. Or let&#8217;s just say all of the time. It&#8217;s hard to pass up pizza and cheesy dips, but if I could fill my plate up with as many veggies and bite sized sandwiches like these Buffalo Hummus Chicken Salad Roll Ups then I&#8217;m a happy girl.</p>
<p>I&#8217;ve always had a thing for roll ups, like the ones you find at Costco? They are so good! Not only are they fun to eat (substantial finger food), but they are so easy to make. You can fill them up with pretty much anything and add some fresh veggies and you are good to go. I filled these tasty little roll ups with some of my favorite flavors &#8211; buffalo sauce, hummus, and chicken salad. I love chicken salad and discovered the amazing <a href="https://aggieskitchen.com/2010/01/21/changing-it-up-hummus-chicken-salad/" target="_blank" rel="noopener noreferrer">hummus for mayo swap</a> a few years ago, if you haven&#8217;t tried it you really must.</p>

It was a random purchase I made while wandering around Target and has turned into one the smartest random purchases I&#8217;ve ever made. I can&#8217;t even begin to tell you how much we have used this kitchen gadget over the years. My kids are now obsessed with paninis and not only has my panini press saved me on many occasions where I had nothing but sandwiches planned for dinner but quick paninis have become a lunchtime staple during the summer months.  Something about turning a simple turkey and cheese sandwich into a panini just makes things a bit more exciting I guess&#8230;and while everyone else is enjoying their lovely turkey and cheese paninis, I&#8217;m getting excited about this Hummus and Veggie Panini I am putting together for myself.</p>

<p style="text-align: left;">I&#8217;m a big lunch person&#8230;and what I mean by that is that a few slices of turkey between two slices of bread usually doesn&#8217;t cut it for me.&nbsp; I enjoy having a good lunch&#8230;I usually work out in the mornings so let&#8217;s just say I have a nice appetite right around lunch time.&nbsp; I play with different salad ideas a lot because it&#8217;s so easy to prepare for them if you take the time to think ahead (precut veggies, bagged lettuces, leftover roasted veggies, crumbled cheese and deli meats&#8230;ideas are endless).&nbsp; And once I find a salad I like, it usually makes an appearance more than once a week. Check out this post on my <a href="https://aggieskitchen.com/healthy-habit-weekly-salad-prep/" target="_blank" rel="noopener noreferrer">weekly salad prep</a> if you are interested &#8211; doing this always helps me eat more salad during the week!</p>
<p style="text-align: left;">This recipe for hummus chicken salad caught my eye over the holiday break.&nbsp; I found it in the Home Cooking The Costco Way cookbook that Costco gives out at their stores usually once a year.&nbsp; My sister in law Paula is nice enough to pick one up for me each time, and I&#8217;m so thankful for that because the three Costco cookbooks I have are full of great recipes!&nbsp; Most of the recipes include products they carry but can easily be substituted with similar products if unavailable.</p>

<p style="text-align: left;">I liked this chicken salad a lot&#8230;I&#8217;m a big fan of hummus and not so much a big fan of mayo so this recipe really worked for me.&nbsp; I used leftover rotisserie chicken from the deli and Sabra Lemon Hummus.&nbsp; I also squeezed additional lemon for dressing over my plate since I was eating it more as an entree salad.&nbsp; The photo in the book suggests serving the Hummus Chicken Salad in lettuce cups or wraps, which looked delicious.&nbsp; This recipe makes 4 servings so store it in some tupperware in your fridge for an easy lunch or light dinner!</p>
