<p>Are we seriously starting the last week of July? I&#8217;m not ready for another summer to end, although technically it doesn&#8217;t end for a while but with school lurking around the corner it always feels like the season is over before it really is. That&#8217;s not fair, in my opinion. There are so many things I love about every season, but one thing I truly love about summer is all the produce we have available to us. Summer fruits and veggies are my favorite. Right now, I&#8217;m absolutely hooked on peaches and my kids and I have been eating them daily. Sweet summer peaches are the best.</p>

<p>I can&#8217;t believe this is my first post of 2017! I decided I needed a bit of a breather in January, some time to regroup after a month of helping my littlest guy recover from a tonsillectomy and my biggest guy (my husband) recover from a shoulder/rotator cuff surgery. I&#8217;ll admit, it was nice to take a break from worrying about picking up my camera and just focus on cooking for my family. My head is always spinning with new recipe ideas, as well as trying to figure out what to make for dinner that I honestly enjoyed just making recipes from cookbooks, friends and my blog without thinking too much of it.</p>

<p>One of the things I&#8217;m trying to get better at is making healthier snacks available for my kids to take in the car on their way to basketball or volleyball practices. We are full on entrenched in sports right now and spend many afternoons and evenings trekking back and forth between gyms. It seems like my kids are ALWAYS hungry and I&#8217;ve been trying to be more mindful about what they are snacking on and making sure they are eating more than just pretzels or crackers (it&#8217;s hard!). One thing I know for sure, anytime I make snacks like these <a href="https://aggieskitchen.com/blueberry-almond-oatmeal-bites/" target="_blank">oatmeal bites</a>, <a href="https://aggieskitchen.com/spinach-and-feta-quinoa-bites/" target="_blank">quinoa bites</a> or <a href="https://aggieskitchen.com/broccoli-cheese-frittata-muffins-quinoa/" target="_blank">egg muffins</a>, they are the go-to snack and don&#8217;t last very long. Seeing my kids choose those first is motivation enough to get myself into the habit of making quality portable snacks more often.</p>

<p>I&#8217;ve been wanting to make baked oatmeal for as long as I can remember. I could tell by the recipes I&#8217;ve found online that I would love it, mostly because of it&#8217;s texture. I&#8217;ve mentioned before, I&#8217;m more of a savory breakfast girl (<a href="https://aggieskitchen.com/spinach-egg-breakfast-sandwich/">eggs!</a>) but I do enjoy a bowl of oatmeal or <a href="https://aggieskitchen.com/tropical-overnight-oats/">overnight oats</a> every now and then. It&#8217;s so good for you and lucky for me, my kids love it too.</p>
<p>Baked oatmeal is exactly what it is &#8211; prepared oatmeal, baked instead of cooked on the stove top. I love using steel cut oats when I can, but I had a feeling that they could be tricky in a recipe for baked oatmeal because of their heartier texture and cook time. After doing a little research, I decided to follow <a href="http://www.garnishwithlemon.com/baked-steel-cut-oatmeal-with-apples-and-cinnamon/" rel="nofollow">Lisa&#8217;s method of baking steel cut oatmeal</a>, and it turned out wonderfully.</p>

<p>Anyone have Spring Fever yet? I think it&#8217;s safe to say always have spring fever, for the most part. Our weather situation in Florida is nothing to complain about but I cherish the small pocket of time it feels like spring here, which is right about now. I spent most of this last weekend in the yard trimming landscaping and planning for flowers. Cleaning up my herb pots is next on the list. Nothing feels as good to me as a few hours of work in the sunshine (when it&#8217;s not sweltering hot).</p>
<p>This is the time of year that I am also ready to get back in the <a href="https://aggieskitchen.com/category/salad/" target="_blank" rel="noopener noreferrer">salad</a>. I say that all the time but January is just not a big salad month for me,&nbsp;and I have to be honest, I&#8217;m missing raw, crunchy veggies in my life right now. I pulled together this Asian Almond Slaw Salad in honor of getting back in the salad and sharing a heart healthy recipe with you since February is <a href="http://www.heart.org/HEARTORG/" target="_blank" rel="nofollow noopener noreferrer">American Heart Month</a>. <p>My children have pretty big appetites. I feel like they are always eating &#8211; as I&#8217;m clearing up one meal they are already asking for a snack. I&#8217;m not going to say this bothers me in the least, seeing their love of eating definitely makes my Italian mama heart happy. But, it can be a challenge to keep up with having smart, healthy snacks always available for them so they don&#8217;t turn to junk. I typically offer them yogurt, cheese sticks, fruit, pretzels or granola bars&#8230;but they do get bored.</p>
<p>I wanted to try out a new kind of snack on my kids a couple of weeks ago while we were off school for a long holiday weekend. My kids LOVE <a href="https://aggieskitchen.com/2013/08/14/cherry-almond-granola-and-summertime-cherry-parfaits/" target="_blank">parfaits</a>, and ask for them all the time. They keep me on my toes in the <a href="https://aggieskitchen.com/tag/granola/" target="_blank">granola</a> making department that&#8217;s for sure, I really don&#8217;t make it often enough for them (we go through it so fast when I do make it!). <p>I don&#8217;t know about you but I have herbs growing like crazy right now. I finally found the sweet spot around my home as far as where my herbs thrive and grow well. While they need plenty of sun, a little shade really helps keep them from burning up and drying out in the summer heat. A spot where the sun is filtered through the shade of a tree and close enough to a hose for easy watering (they need lots of watering, especially if they are in pots like mine) is the perfect location for healthy happy herbs. I&#8217;ve definitely learned to move my potted herbs around over the years until I find that sweet spot.</p>
<p>So when you have a ton of herbs, what do you do with them? Well, it&#8217;s pretty obvious what to do with some of them (I&#8217;m looking at you, basil). Something I tend to do often take some clippings from a few different herbs and add them to recipes for a fresh boost of flavor, like in this Toasted Almond Herbed Brown Rice.</p>

<p>I took the last couple of weeks off from making it but since this week is my daughter&#8217;s birthday week I decided to surprise the kids with a fresh batch when they get home from school today. When I make our granola I keep it on the counter in a pretty glass jar, it&#8217;s nice to look at as well as easy to serve &#8211; just spoon into a bowl for a quick healthy snack!</p>

<p>Making granola at home is super simple (if you haven&#8217;t tried it yet please do!) and each time I make it I try to add something a little different to it to keep things interesting. One thing that always stays the same is the nuts &#8211; my granola has to have plenty of nuts in it for texture, protein and nutrients. This time I used honey instead of my normal maple syrup and I added a little dark chocolate for fun.</p>

<p>I&#8217;ve always loved the flavors of cherry and almond together (hence, why I love <a href="http://www.yankeecandle.com/detail/cherries-on-snow/1218461" target="_blank">this holiday candle</a> so much!!) &#8211; it&#8217;s the perfect combination in my opinion. I picked up a bag of dried cherries recently thinking I was going to make a Michigan inspired chicken salad like <a href="http://www.eat2gather.net/2011/01/food/recipes/michigan-cherry-chicken-salad/" target="_blank">this one</a>, but they ended up in granola instead. I guess I need to get more, because I can&#8217;t stop thinking about Sheila&#8217;s salad on that croissant &#8211; kinda wishing I had it for lunch today.</p>

<p>I&#8217;ve shared <a href="https://aggieskitchen.com/2012/10/22/golden-granola-recipe-from-jenna-webers-book-white-jacket-required/" target="_blank">recipes</a> for <a href="https://aggieskitchen.com/2012/03/10/the-naptime-chefs-cranberry-spice-granola-recipe-and-giveaway/" target="_blank">homemade</a> <a href="https://aggieskitchen.com/2009/02/19/ellie-kriegers-nutty-granola/" target="_blank">granola</a> on the blog before, and this one is not much different. The great part about granola is you can stick to a standard recipe, then just change up the flavors a bit each time. For this granola recipe, I used honey for the sweetener (as opposed to maple like I tend to use) and coconut oil instead of vegetable oil.</p>
<p>As for the parfait, it&#8217;s simple once you have your granola cooked up. The granola is layered up between sliced fresh cherries and plain or vanilla yogurt (we like to switch up between regular and Greek yogurt). That&#8217;s basically all it takes to make a pretty little parfait &#8211; and a healthy snack. My kids were over the moon excited when I presented them with one &#8211; made me feel like Mom of the Year for a second. 🙂</p>

<p>Have you recovered from your post-Halloween hangover yet? Honestly, I can only handle so much candy. I don&#8217;t normally have a sweet tooth, but once I open the door to having &#8220;just one piece&#8221; I pretty much lose all my self control. It gets ugly people. Ugly.</p>
<p>Something needed to be done.</p>
<p>Here&#8217;s where this lovely, healthy quinoa salad comes in. I forced myself to make a batch of quinoa yesterday morning and using what I had in the fridge and pantry turned one of <a href="https://aggieskitchen.com/2010/01/24/spinach-and-orzo-salad-with-cranberries-and-almonds/">my favorite pasta salads</a> into a quinoa salad. I skipped the cheese and made the dressing more simply and snacked on this salad pretty much all throughout the day. I have just enough leftover for my lunch today and that makes me a happy girl.</p>
<p>And let me tell you, I&#8217;m feeling a whole lot better than I was yesterday morning. And the candy is hidden and locked up. (Don&#8217;t worry, I&#8217;m not too much of a party pooper&#8230;my kids are enjoying their daily ration, <em>for now</em>) 🙂</p>
