## Shaved Fennel and Arugula Salad + OXO Salad Tool Kit Giveaway

Nothing makes me happier than a well made salad. If you’ve been reading this blog for some time, then you probably already know this. Fresh greens paired up with some extras and drizzled in a little dressing, well, it doesn’t take all that much to make me excited about eating salad. Call me weird, I know.

On our little staycation last week we ate out one night at a pizza place and of course started the meal with one of their salads on the menu. I chose the house salad which included shaved fennel, arugula, radicchio, Parmesan and lemon. Wowzers, this salad nailed it for me. It was SO fresh and flavorful, yet so simple. I think it was a little too lemony for my husband and daughter (my son doesn’t partake in salad eating just yet), but I was happy to finish what they didn’t want to eat.

Arugula salads have always been one of my favorites. I adore the light peppery bite from such a delicate green. With the addition of thinly sliced fennel, radicchio and good Parmesan cheese, this salad recipe was about to become one of my go to recipes this summer, I just know it.

I knew when I got home I was going to have to recreate this simple little plate of greens for myself.

So I did.

## Shaved Fennel and Arugula Salad

**Yield:** 4 servings

### Ingredients:

- 1/2 bulb fennel, washed and trimmed of stems and leaves
- 1/2 5 oz bag of arugula, washed and dried well
- 1/2 small head of radicchio, sliced thin
- Parmesan shavings
- 1 -2 lemons, halved
- 1-2 tablespoons olive oil
- pinch coarse salt and fresh ground pepper

### Directions:

- Using your handheld mandoline (or sharp knife), carefully slice your fennel very thin. Place in large bowl along with arugula and radicchio. Gently toss to combine.
- Using a vegetable peeler, take a block of Parmesan cheese and carefully cut shavings off block and into salad. Use as much or as little cheese as you would like.
- Squeeze fresh lemon juice over salad, followed by a drizzle of olive oil. Season to taste with salt and pepper and gently toss using tongs. Transfer to your serving plate, or serve straight out of your mixing bowl.

This salad is so simple and bursting with freshness! Perfect for summer, alongside anything grilled or as an addition to pizza night. Inspired by Giordano's house salad.

3 firm avocados, cubed

1 can black beans, rinsed and drained

1 fresh jalapeno, finely chopped

1 cup of grape tomatoes, halved, or just 1 cup of freshest possible diced tomatoes

1/2 cup chopped cilantro

juice of one fresh lime

2 Tbsp olive oil

3 tsp balsamic vinegar

Combine all ingredients.

Raw Zucchini Salad with Green Olives & Mint

salad:

1 1/2 pounds zucchini (3 large or 6 medium)

1 cup green olives, pitted and sliced

2/3 cup loosely packed fresh flat-leaf parsley leaves, chopped

1/2 cup loosely packed fresh mint leaves, chopped

zest of 1-2 lemons

dressing:

1 tablespoon brown sugar

1 1/2 tablespoons dijon mustard

2 to 4 tablespoons white balsamic vinegar

1 to 2 tablespoons extra virgin olive oil

kosher salt

freshly ground black pepper

preparation

1) In a large bowl slice zucchini lengthwise using a mandolin (if you don’t have one buy the smallest zucchini you can find and use a vegetable peeler)

2) Top with green olives, parsley, mint, and lemons zest; set aside.

3) In a separate small bowl mix brown sugar and dijon until smooth, add vinegar mix until smooth. While whisking, slowly add oil to bowl. Salt and pepper to taste and pour over salad.

4) Stir to coat, taste to double check seasoning, and serve right away.
