Ina’s GazpachoI have never considered myself a “cold soup” person. I have tried cold soup before and liked it, but would I make it at home? Not so much. Or so I thought.

I was happy to see Gazpacho as one of this month’s Barefoot Blogger recipes chosen by Meryl of My Bit of Earth. What a great opportunity to make this popular summer soup for myself. Why wouldn’t I like it? It’s made from a ton of fresh vegetables, and it is easy to whip up in a food processor or blender. What’s not to like? Hmmm…uh…it’s cold soup.

Ina’s Gazpacho

Well…let me tell you…I loved this gazpacho!! I was so pleasantly surprised. I followed Ina’s recipe here, but substituted jarred roasted red peppers for fresh because it’s what I had on hand. Also, feeling inspired by Pioneer Woman’s recent beautiful Gazpacho post, I added some zucchini. I couldn’t resist throwing in a jalapeno from the garden and of course some lime. I would have probably preferred it a little more chunky, but because I don’t have a large food processor (why don’t I have one??) and had to use a blender it got slightly over processed. I thought it tasted perfectly though and enjoyed a big bowl alongside some chopped avocado and roasted shrimp for dinner.

    I've never made Gazpacho…I've had it one time and was sort of eh about it. This one looks fabulous though- love all of your special additions. AND of course, loving that shrimp on top mmm. Have a good weekend

    I haven't tried making nor eating gazpacho but it sure looks very flavorful and delicious.

    Aggie, your version of her soup looks absolutely delicious. That topping of shrimp and avocado is a perfect addition.

    funny, i've never made gazpacho either, but when I look at this, all I can think of is how cool and refreshing it would be on a hot summer night

    Your gazpacho looks incredible Aggie, and I love your additions! I liked it chunky, but I really think I'd love your slightly more processed version too. I think this is the perfect summer soup!

    THis version of gazpacho looks very attractive! I often serve gazpacho as an appetizer in summer – thou mine is more the Andalous version of gazpacho. I have to try yours!

    Aggie, Your gazpacho looks wonderful. I put shrimp in mine too. I bet the lime and hot pepper added a lot too.

    Oh my gosh, that's BEAUTIFUL! I'm trying to remember if I've had Gaspacho. Well, since I can't remember if I've had it or not, I guess I haven't! Boy, oh boy, I'd sure love a serving of this, especially with the the shrimp and avocado on top! YUM!

    I've never made it nor have I even tasted it. I always thought I wouldn't like it either. I may have to reconsider. I saw the PW one and the zucchini was a great addition this time of year. As was your shrimp! Nice job Aggie.

    Wow, that gazpacho looks phenomenal!!! I definitely plan to try out this recipe! I love the shrimp on top!! That brings this to a whole new level!! Great job!
