Fares of Fay…Rainy Day Pizza!


“An unwanted house guest” …. that about sums it up for me… Fay is still here. We are going on our 4th day of dreary rain. The kids and I have serious cabin fever. We’ve played with Play Dough, made ice cream, danced, watched too many cartoons and colored. We all really need to burn some serious pent up energy. Once it lets up a little I am thinking of opening up the doors so we can go jump in some puddles. I can’t really complain though, we have no damage, nothing like those poor people over on the coast who are flooded. I can’t even imagine what they are dealing with right now.

I must say though, we are eating well. Over the past few days I’ve roasted some chicken, made granola, ice cream, pizza, pasta, and today I’m going to make a favorite Barefoot Contessa dip of mine – Roasted Eggplant Spread. We are definately not starving over here…I’ve probably gained what I’m going to call the Fay Five.


Rainy Day Fay Pizza

Mama Mary’s whole wheat pizza crust
tomato sauce
1-2 tsp olive oil
Aidells roasted pepper with corn chicken sausage, chopped
red peppers, chopped
green onions, chopped
shredded cheddar or Mexican blend cheese
salt and fresh ground pepper

Spread tomato sauce over pizza crust, season to your liking (oregano, salt and pepper). Top with shredded cheese.

In skillet, saute sausage in olive oil until browned. Add red peppers and cook for 2-3 minutes just to soften slightly.

Add sausage and red peppers to pizza. Top with chopped green onions. Sprinkle wiht little salt and fresh ground pepper and place in 425 degree oven. Bake until cheese is melted and crust is browned. Enjoy!

  2. Wow, that looks delicious for a rainy day. I am so glad to hear you guys are doing well with no damage or flooding. Have you ever tried the Aidell’s portobello mushroom sausages? Ugh, those are too yummy! Have a good weekend, Aggie! I hope you get to go outside.

  7. How great are those Aidell’s sausages! I like using them in pasta for variety instead of chicken, or sauteeing with mushroom, onion and green pepper in a pita. I’ve never tried them on pizza though – YUM!

    I’m glad to hear that Fay didn’t do any permanent damage to your home (other than the boredom!)

  17. Your pizza looks scrumptous. I bet the corn chicken sausage really gave the pizza a unique taste. I haven’t seen that particular sausage on ourlocal gorcery stores, I sure hope they start carying it soon.
