It’s also National Dairy Month and what a better way to celebrate than with a summer-friendly dip filled with nutrient-rich dairy like this kicked-up Chipotle Ranch Greek Yogurt Dip! I don’t know about you, but when I think of summertime I think of quality time spent with family and friends. Lazy days at the pool or beach are ones I always look forward to. Driveway pizza parties and get-togethers with neighbors, while the kids are riding bikes or playing tag in the yards, are always a wonderful way to kick off the weekend or break up the workweek. With all the fun we have in connecting with our family and friends, I also think of food – particularly, snacking – and lots of it. Since our days are filled with activities we are always looking for ways to fill up our tummies, whether we are entertaining or just tiding over to the next meal. Grabbing veggies as mush as possible when it comes to snacking is a priority to me, which is why dips like this always come in handy. Veggies are always tastier with a little dip to go with them.

I love making veggie dips with Greek yogurt. Not only is Greek yogurt the perfect texture for a creamy dip, it adds a powerful punch of protein to your dip. It is a dairy ingredient I have in my fridge all the time, using it in dips like this Chipotle Ranch Greek Yogurt Dip to fruity parfaits to dolloping it onto tacos or fajitas. It’s no surprise that Greek yogurt is a staple ingredient in our household – it is an ingredient I feel good about using.

This homemade Chipotle Ranch Greek Yogurt Dip is one you can pull together quickly and easily. Most of the ingredients are likely already in your pantry and refrigerator, so it can easily be a last minute addition to any get-together. If you want to make the dip a little more interesting, you can stir in some shredded cheddar cheese and top with a few splashes of chipotle hot sauce for extra kick and flavor. Serve the dip as part of a veggie plate or with thick cut potato chips or whole grain crackers.

There are so many reasons to celebrate dairy this month of June, as well as all year long. Dairy is a part of our day from breakfast to dinner and in between. Let’s officially kick off summer – grab some veggies, and dig in!

Chipotle Ranch Greek Yogurt Dip

Yield: makes about 1 1/2 cups dip

Ingredients:

  • 1 cup plain Greek yogurt
  • 1/2 cup reduced fat mayonnaise
  • 3/4 teaspoon garlic powder
  • 3/4 teaspoon dill
  • 1/2 teaspoon dried parsley
  • 3/4 teaspoon chipotle chili powder (reduce to 1/2 teaspoon for less spice)
  • 2 teaspoons dried chives
  • 1/4 teaspoon celery salt
  • pinch coarse salt and fresh ground pepper, to taste

Directions:

  1. In a mixing bowl, combine Greek yogurt with mayonnaise, garlic powder, dill, chipotle chili powder, dried chives, celery salt and fresh ground pepper. Stir well and chill for about 30 minutes. Taste for salt and add to taste.
  2. Serve with fresh vegetables or your favorite dippers.
