Roasted Chile and Cheddar Corn Muffins

I may very well have an incorrectly spelled word in the title of this recipe but I have no idea. I always get stumped with the whole ‘chile vs chili vs chilie’ thing. What is it?? Can anyone help me here? Is there rhyme or reason by the way it’s spelled or is it up to the person spelling it (I sorta like that rule…).

Before you get to the recipe I have to say thank you for all of the wonderful comments on my last post. Seriously, you all lifted me up. It’s nice to know I’m not alone…which I didn’t think I would be, but it’s always nice to hear from others that get it, ya know? I’m feeling much better about what I do and why I do it…I think sometimes life gets busy and you start to burn out…even on things you whole-heartedly enjoy. It’s all good. I appreciate every single person that reads this blog, I do.

Moving forward…I am trying to implement a few positive changes at home to help keep my sanity in check. The major change is that I have got to start planning my meals. So many nights I find myself staring at 5 o’clock with 2 hungry kids and 1 working late husband and I panic. Those nights are not my friend. I don’t like those nights, and I’m finding that they are showing themselves around here way too often lately. So a meal planning I will go. Wish me luck. This week is off to a good start so far, yay!

If you are on cornbread duty this Thanksgiving and want to try something new, check out these tasty little corn muffins I whipped up last week to take to my friend’s chili party. I started out ambitiously wanting to make corn muffins from scratch but my reality and ambitions don’t always jive…so instead I just jazzed up an old reliable box of Jiffy Corn Bread and called it a day. My kids loved them and were begging for more, literally.

Roasted Chile and Cheddar Corn Muffins

Ingredients:

  • 1 box Jiffy Corn Bread mix
  • 1 egg
  • 1/3 cup milk
  • 1 heaping tablespoon sour cream
  • 1/2 4oz can of drained roasted chilies (I used Old El Paso)
  • 1/4 – 1/3 cup shredded cheddar
  • cheese (best if not pre-shredded cheese)

Directions:

  1. Preheat oven to 400 degrees.
  2. In a mixing bowl combine corn bread mix, egg, milk, sour cream and chilies. Stir until batter is formed then gently fold in cheddar cheese.
  3. Scoop batter into muffin pan, about halfway – 2/3 way full, and bake for about 15 minutes or until golden brown and toothpick comes out clean.
  4. Makes about 8 muffins per recipe.

  1. I have fallen in love with meal planning. It makes grocery shopping much more enjoyable and I love going home knowing exactly what is for dinner and that I have everything that I need. I’m glad to hear you are feeling better about things. These muffins sound incredible!

  2. GIRL, I know. I’ve been told that “chili” is the soupy stewy stuff. And the “chile” is the actual pepper. But see, then there’s “chili powder” Which is from the chile pepper, but going into the pot of chili.

    So, in all, I like CHILIEIEEI.

  3. I love this semi homemade idea! Meal planning totally keeps me sane…well, mostly sane ;). The days and nights are seeming to run together right now. I love a little pop in my corn muffins. I have no idea about the chili spelling thing….I’m more of a math and science vs. English gal 😉

  4. Everything Bev said re. chili/chile/chili powder, but also, chillie or chilli is often used for the actual pepper if you live in Australia and come areas of Europe. 🙂

  6. I like to plan but not too far ahead, since my ambitions in the kitchen often outweigh the amount of time I have to put a meal together and whether I have shopped for ingredients. I think in 3 day installments and hope that inspiration comes to me.Good call with the biscuits.

  7. I can’t say I’ve ever seen the “chilie” spelling. I always go with the “chili” spelling myself. The only thing I’ve ever gotten stuck on is the “you don’t put noodles in real chili”! Otherwise it’s chili mac. 🙂

    I love cornbread, and I love adding thing to it. This recipe sounds awesome, and it’s a keeper for me.

    ALSO – Chile is a pepper 😉 (confusing)

  15. These sound SO delish and will be perfect with my next pot of chili! I’m such a homebody in this cold weather {not that you would know living in the land of sun! ha}…. I love big pots of soup/chili and we always love cornbread. Anxious to try your version.

  16. Well I’d say I would make you come over to my blog to post your meal plan on my Meal Planning Mondays….but I am taking a temporary break from it and will resume it soon. I’ll let you know when because it does help make the week go much smoother. Loved your other post too about the spirit of blogging. It is a blessing to have a blog, but I get overwhelmed sometimes at the caliber of other food blogs out there, the feeling of having to have a perfect picture in order to post (man how many great meals I’ve made that weren’t photographed well and didn’t make the blog) :(. We definitely all go through slumps but it’s worth it. You obviously have a great following so that is great motivation too!
