Honey Chipotle Lime Flank Steak

Whenever I ask my husband what he wants for dinner, he will almost always say steak. He loves steak. I’m not that big of a steak lover – don’t get me wrong, I will indulge in a filet at a restaurant every now and then, but it’s not usually my first choice. I bought my first flank steak not long ago and just love it. This is my kind of steak. I love that it’s lean and easy to cook. You just throw it in some marinade the night before, throw it on the grill when you are ready, slice thin and enjoy!
I was craving something smokey and sweet…so I threw together this rub and marinade the other night. Served the steak with some roasted cubanelle peppers and some of Prudy’s Cowboy Beans…husband was a happy man!


Honey Chipotle Lime Flank Steak
You will need:
1 1/2- 2 1/2 pound flank steak
Rub:
2 tsp cumin
2 tsp chili powder
2 tsp chipotle chili powder
2 TB steak seasoning
Marinade:
juice from 1 lime
2 TB honey
2 TB olive oil
Combine rub spices in bowl. Using large baking dish rub steak with spices, make sure to cover all parts of steak. Combine marinade in another bowl. Pour marinade over steak, turn steak a few times to cover. Cover with plastic wrap, place in refrigerator for 12-24 hours.
When ready to cook, heat grill to medium heat. Cook for appx 7-9 minutes on each side, depending on size and thickness of steak. Once cooked to your liking, let steak rest for about 5 minutes. Slice thinly against the grain and serve. Use your leftovers for wraps or quesadillas!

  8. The flavors sound fantastic and I have never tried this with beef before, so maybe this weekend I will give it a go. We are opposite in our house: I love beef and my husband can live without. Which means, I can legally eat his portion as well 😉

    Oh and if you have been eyeing the Lemon Yogurt cake..you should whip it up..prep time is about 5 minutes!!

  10. You’re speaking my language! Flank steak is one of my favorites cuts because it is economical and tasty. I usually get a big piece so that I can make a steak salad with the leftovers. This marinade sounds great; sweet and tangy!
