Drink of the Day – CocoMotion
Back in May, my husband and I were in St. Thomas for our niece’s wedding. We discovered the BEST drink at our hotel…the CocoMotion. It was the perfect drink for laying on the beach. Now that we are home….it is the perfect drink for sitting by the pool.
Enjoy!!
CocoMotion
1 part coconut rum (we prefer Cruzan Coconut Rum since that is what we had in St. Thomas, but since we ran out we are using Malibu)
1 part pineapple juice
little more than a “splash” of Crema de Cocount (coconut cream, found in ethnic aisle in supermarket, Goya brand or Coco Lopez)
and here’s the best part…
freshly grated nutmeg (buy it whole and use a zester!)
Fill glass with ice. Pour first three ingredients into glass. Mix well (I use another glass to pour into, then back to original glass). Top with freshly grated nutmeg.

Mmmmmm, frou frou cocktails….right up my alley…especially since it’s 90 degrees here this week! Rum is now front and center on my grocery list. 😉

Ok I had that same drink when we visited St Thomas. I drank it so fast I thought I was having a heart attack.LOL. I’ve been asking about this drink for 3 years. I will try your recipe after I have my baby in July. Mmmm. Can’t wait!!
