Blueberry, Banana and Peanut Butter Oatmeal
People often tell me they have trouble having breakfast in the morning and I have to tell you, I have never had that dilemma. If I don’t eat something before I fully start my day then I’m setting myself up for trouble, meaning I’ll probably binge on cheese and crackers at lunchtime or get a headache or just feel really off and cranky later in the day. I need my breakfast…and I truly believe it is the most important meal of the day.
Most days during the week I’m up very early to go to the gym and all I can handle at that time of day before a workout is a banana. I have a few regular breakfast I tend to make regularly for myself depending on time, this Blueberry, Banana And Peanut Butter Oatmeal being one of them. (Other breakfast favorites: Spinach and Egg Breakfast Sandwich, Refrigerator Oats, peanut butter Ezekiel toast and Cinnamon Pear Green Smoothie)
I have been making oatmeal like this for what feels like forever. Actually I started making oatmeal like this for my son when he was a toddler…so about 9 years now. It’s a healthy whole grain breakfast and it’s kid approved. It has no added sugar, other than the natural sugars in the fruit. There’s nothing fancy about it. If you are a peanut butter lover, like my son and I, then this is your new go-to oatmeal breakfast.
It’s simple to make, simple enough that I taught my son how to make it for himself last summer. It’s one of his favorite breakfasts so it makes me proud to see him preparing something so healthy for himself – and sometimes me.
I discovered Coach’s Oats a few years ago through a sample I got somewhere (I can’t remember where). Costco started carrying Coach’s Oats so it was easy to pick up a huge bag that lasted a while, until they stopped carrying it, causing me to buy Coach’s Oats on Amazon at a higher price than I want to pay (a 4.5 lb bag is under $7 at Costco!). Thankfully Costco started carrying it again recently and just in time too…I was running out. (PS…Coach’s Oats has no idea who I am, I just really love their product 🙂 )
I’ve always used frozen blueberries as a shortcut way to cool down a hot bowl of oatmeal for my kids. Turns out, we all love biting into cold berries in our oatmeal so I continue to make it this way. Feel free to swap out fresh berries instead!

Blueberry, Banana and Peanut Butter Oatmeal
Yield: serves 1
Ingredients:
- 1/4 cup Coach's Oats
- 1/2 medium banana
- 3/4 cup water (add a little more or less depending on your preference for thick or thin oatmeal - I like mine on the thick side)
- 1 tablespoon peanut butter
- 1/4 cup frozen blueberries
Directions:
- Add your oats, banana and water into a microwaveable bowl. Microwave for 2 minutes.
- Stir in 1 tablespoon of peanut butter. Whip it around so that the banana and peanut butter is completely blended into the oats.
- Stir in your frozen blueberries and enjoy!

Oatmeal is the BEST breakfast (and sometimes dinner too ;)). I always add ice cubes in, but love the idea of adding frozen blueberries to cool it down.
I love blueberries in oatmeal. Peanut butter…..wow, why didn’t I think of that 🙂

On my menu tomorrow! I usually just slice banana in the oatmeal but your way is sweeter – it is evenly distributed.
Does it have to be coach oats?
Can I use regular oatmeal?
You can definitely use regular oatmeal, I usually use old fashioned rolled oats as opposed to quick cooking.
