Creamy Avocado Lime Dressing

Whenever I see avocados on sale at my grocery store (10 for $10 – best deal ever!), I can’t help but buy a million of them. My daughter, my youngest son and I can eat avocados every day so they really don’t go to waste when I bring home a bagful, especially since I’ve learned that keeping them in my fridge helps them last longer. Normally I just serve our avocados sliced up in a salad, smashed on toast or straight up for the little ones, but every now and then I get adventurous and throw them into a smoothie or make a dressing like this Creamy Avocado Lime Dressing.

I love including avocados in quesadillas like these Bean and Avocado Quesadillas (SO good!) or as a topping for Black Bean and Egg Tostadas (these are not just for breakfast – I love them for lunch and dinner too).

I normally opt for oil and vinegar based salad dressings when it comes to salad, but every now and then I crave a creamy dressing like this, especially since I know it’s full of healthy ingredients like avocado and Greek yogurt. The avocado definitely adds to the creaminess.

This dressing is thick, and full of flavor – it would be a great topping along with some salsa for a healthy taco salad, or a great dip for your veggie plate. I tossed a couple of heaping tablespoons in a big Mexican inspired salad last week and loved it so much. There is no wrong way to enjoy this creamy avocado lime dressing in my opinion. ๐Ÿ™‚

Creamy Avocado Lime Dressing

Creamy Avocado Lime Dressing can be served with a salad or as a dip for vegetables. It’s bright & full of healthy ingredients like avocado & Greek yogurt.


Ingredients

  • 2 limes, juiced
  • 1/4 cup cilantro leaves
  • 1/2 avocado
  • 1 tablespoon oil
  • 2 heaping tablespoons Greek yogurt
  • 2 green onions, whites only
  • 1 garlic clove
  • 1 teaspoon honey
  • salt and pepper

Instructions

  1. Place all ingredients in a small food processor or blender. Process until all is combined.

Notes

Serve with veggies as a dip or add to a grilled chicken or turkey taco salad for a burst of flavor.

  9. I’m never without avocados in my kitchen, either-I can’t get enough of them! When “Everyday Food” was still being published, I found a recipe very similar to this and I made it and loved it. Then, I lost the recipe and couldn’t remember the ratio of ingredients. I’m so glad you created this because it is almost identical to the Everyday Food recipe I loved so much. I’ve printed it and added it to my recipe binder!

  15. I made this just the other day after reading a recent post where you used this dressing to dress a salad–it is fantastic! I used it as a dip for chips and I couldn’t stop eating it! It has such great flavor with the scallion, lime and cilantro. I printed it out and put it in my recipe binder to make again. This would be great for a big chip, veggie and dip party platter for a summer cook-out.
