Today was a very relaxing Sunday for us. The weather finally cooled down a bit and I opened up all the windows to let some fresh air through the house. I don’ t know about you, but days like today are my absolute favorites. We had no where to be, no where to go, the kids were content playing around the house. I was able to be productive with some cleaning and laundry and even was able to sneak a little nap in. I read some of my newest magazines that came in the mail and caught up on some blog surfing.
Today was a good day.
Usually on the weekends we grill. We haven’t in a while and tonight was the perfect night for it weather-wise. I have been wanting to make turkey burgers like this for a while so tonight I poured myself a glass of wine and went to work to create this delicious healthy Mediterranean Turkey Burger.
1.25 ground turkey
1/2 cup sundried tomatoes, chopped
2 cups fresh spinach, chopped
2-3 TB chopped Kalamata olives (if you aren’t an olive fan, just omit)
1/2 small onion, minced
1 tsp greek seasoning
1/2 cup shredded mozzarella (you can use a more if you’d like, I am trying to cut back)
salt and fresh ground pepper
whole wheat pita pockets, cut in half
Roasted Red Pepper and Herb Mayo (recipe below)
In large bowl, combine ground turkey, sundried tomatoes, spinach, olives, onion and seasoning. Gently combine. Add in cheese and gently combine. Form into 6 patties.
Spray both sides of each patty with nonstick spray and sprinkle with salt and pepper. Place on hot grill or grill pan and cook for approximately 5-6 minutes on each side or until done.
While burgers are cooking, place pitas on top rack of grill to warm up. Cut in half and open immediately after warming.
Serve with roasted red pepper and herb mayo in whole wheat pita pockets.
Roasted Red Pepper and Herb Mayo
1/2 cup light mayo (I use Hellmans)
1 roasted red pepper from jar , chopped small
2 teaspoons fresh flat leaf parsley and oregano, chopped
1/4 tsp greek seasoning
Combine all ingredients in small bowl.
I served these burgers with roasted sweet potato wedges tossed in Montreal Steak seasoning, minced fresh garlic and red pepper flakes.
