<p>Since summer, my husband and I have been really working hard at eating well and losing weight (using a <a href="http://astore.amazon.com/aggskit-20/detail/B0095PZHZE" target="_blank" rel="nofollow noopener">Fitbit</a> and tracking in <a href="http://www.myfitnesspal.com/" target="_blank" rel="noopener">My Fitness Pal</a>). I can&#8217;t tell you how much easier and more motivating it is to accomplish this when you have a partner. Especially when your partner lives in your house and is your husband.</p>
<p>It&#8217;s one thing for me to make healthy choices just for myself&#8230;but when I know that my cooking and meal prep also helps my husband achieve his healthy living goals, well for some reason that pushes me a little more. I know he appreciates it too.</p>

<p><em>Originally published in November, 2016.</em></p>
<p>Have you all tried <a href="http://www.bobsredmill.com/shop/grains-beans-seeds/ancient-grains/organic-farro.html" target="_blank" rel="nofollow noopener">farro</a> yet? I&#8217;ve shared a few recipes using it here (like this <a href="https://aggieskitchen.com/garden-farro-salad-with-feta/" target="_blank" rel="noopener">Garden Farro Salad with Feta</a> and <a href="https://aggieskitchen.com/italian-tuna-white-bean-farro-salad/" target="_blank" rel="noopener">Italian Tuna and White Bean Farro Salad</a> &#8211; you must make both!). Farro is amazing &#8211; and for so many reasons. It&#8217;s a hearty whole grain with a lot of oompf to it, quite the opposite of quinoa or couscous. It&#8217;s got so much texture and a nutty flavor that I love, which is why I enjoy it so much in salads like this.</p>
<p>Here&#8217;s the other thing I love about it, it&#8217;s got 7 grams of protein and 7 grams of fiber in it. It will fill you up and make you feel good. Salads like this are perfect option for lunches in my opinion. A no brainer.</p>

<p><span style="font-weight: 400;">My kids love asking for parfaits when I offer to make them as an afternoon or after dinner snack (aka dessert). I started making parfaits years ago and they get excited about eating them every single time. Parfaits are not only pretty to look at, but they can be filled with some pretty tasty ingredients. With my recent trip to a local dairy farm here in Florida, as well as a trip to a dairy farm in Rhode Island, I can&#8217;t help but think about and appreciate the hard-working families that are really behind the wholesome dairy, like the Greek yogurt in these parfaits, that my family enjoys. You can read more about </span><a href="https://aggieskitchen.com/layered-taco-dip-a-tour-of-milk-a-way-dairy/"><span style="font-weight: 400;">my experience at the farm here</span></a><span style="font-weight: 400;">. </span></p>
<p><img loading="lazy" decoding="async" class="aligncenter wp-image-15033 size-large" title="Enjoy the flavors of fall with a Greek Yogurt Parfait with Pears and Walnuts. <p><span style="font-weight: 400;">Whether I&#8217;m making a parfait for me or my kids, I always go with whatever combination of seasonal fruit, yogurt, nuts or granola I have on hand. This particular parfait was inspired by one of our favorite fall fruits, pears. We love pears this time of year, and you can pretty much always count on finding a tub of good vanilla Greek yogurt and nuts in my fridge too. Call it a snack or call it dessert (or even breakfast!), a parfait like this creamy Greek Yogurt Parfait with Pears and Walnuts always hits the spot. </span></p>
<p><span style="font-weight: 400;">To make our parfaits extra tasty (and fancy!) I like to spice them up a bit. I added a sprinkle of cinnamon and ginger and a drizzle of sweet honey and it was the perfect touch. I like to chop the fruit and the nuts to the same size so that it&#8217;s easier for each spoonful to have a taste of everything combined. The perfect flavors for fall and my kids absolutely loved the combination. </span></p>
<p><img loading="lazy" decoding="async" class="aligncenter wp-image-15031 size-large" title="Enjoy the flavors of fall with a Greek Yogurt Parfait with Pears and Walnuts. <p><span style="font-weight: 400;">You can make the parfaits with traditional layers, or if you are in a crunch for time and just want to keep it simple you can add your ingredients to a bowl and enjoy it all the same. If you are looking for an entertaining idea for breakfast or brunch, set out the ingredients separately and offer a build-your-own-parfait bar. </span></p>

I discovered Bircher Muesli on a Princess Cruise and I've been obsessed with it ever since!" width="620" height="775" /></p>
<p>I know what you are thinking, of all things for me to come home from my <a href="https://aggieskitchen.com/2015/10/09/princess-cruises-west-coast-getaway-on-ruby-princess/" target="_blank">cruise</a> obsessed with, it&#8217;s this Bircher Muesli, right? Not the mango margaritas, seafood dinners and <a href="http://www.princess.com/ships-and-experience/food-and-dining/chocolate-journeys/" target="_blank">chocolate journeys desserts</a> I indulged in on the <a href="http://www.princess.com/learn/ships/ru/" target="_blank">Ruby Princess</a>, but a breakfast I found on the breakfast buffet &#8211; this is what I feel the need to share with you immediately. <a href="https://aggieskitchen.com/category/breakfast/" target="_blank">Breakfast</a> is the most important meal of the day, even when you&#8217;re cruising. Humor me please.</p>
<p>Typically I&#8217;m an egg for breakfast girl, but when I stumbled onto the section of the breakfast bar that was holding bowls of Bircher muesli, dried fruits and plenty of nuts I was instantly intrigued. <a href="http://www.mixmyown.com/blog/what-is-bircher-muesli-the-history-and-benefits/" target="_blank">What in the world is Bircher Muesli anyway</a>? That&#8217;s what I was wondering! It&#8217;s basically overnight oats (or what I sometimes call <a href="https://aggieskitchen.com/2014/01/09/refrigerator-oats-with-berries-and-banana/" target="_blank">refrigerator oats</a>, but a little different and invented by the Swiss physician, <a href="http://www.zora.uzh.ch/40410/1/Wolff_Bircher-Benner.pdf" target="_blank">Maximilian Bircher-Benner</a> (a bonus history lesson for you!). I go on an overnight oats kicks every now and then and needless to say, I&#8217;ve been on one since I got home from my <a href="http://www.princess.com/" target="_blank">Princess Cruise</a> a few weeks ago.</p>
<p><img loading="lazy" decoding="async" class="aligncenter size-full wp-image-11244" src="https://aggieskitchen.com/wp-content/uploads/2015/10/Bircher_Muesli-2.jpg" alt="The original overnight oats! I discovered Bircher Muesli on a Princess Cruise and I've been obsessed with it ever since!" width="620" height="827" /></p>
<p>I can not express enough how generally impressed I was with the food on <a href="https://aggieskitchen.com/2015/10/09/princess-cruises-west-coast-getaway-on-ruby-princess/" target="_blank">our cruise</a>. When I remember cruising with my husband and parents back in the day, I definitely remember food, but I remember the quantity of it more so than the quality. My friend (and plus one) Heidi and I both ate breakfast and a couple of lunches in the main buffet area and we commented more than once on the selection of food items that were being served. You know how I am with my <a href="https://aggieskitchen.com/category/salad/" target="_blank">salad</a> so of course I was seeking out the salad bar on the very first day. Guys, I was loving my salads all week long, especially with whatever fish or sandwich they were serving nearby. I really tried to keep things light (when I could!) and the variety of <a href="http://www.princess.com/ships-and-experience/food-and-dining/" target="_blank">food and dining</a> really made it possible.</p>
<p><img loading="lazy" decoding="async" class="aligncenter size-large wp-image-11246" src="https://aggieskitchen.com/wp-content/uploads/2015/10/Untitled-design-1-640x512.jpg" alt="Food from Princess Cruise, including Bircher Muesli" width="640" height="512" srcset="https://aggieskitchen.com/wp-content/uploads/2015/10/Untitled-design-1-640x512.jpg 640w, https://aggieskitchen.com/wp-content/uploads/2015/10/Untitled-design-1.jpg 945w" sizes="auto, (max-width: 640px) 100vw, 640px" /></p>
<p>Just a sampling of the many many food items I had while on the ship&#8230;</p>

<p>Is it just me or are we in a bit of a weird in between season as far as fruit goes? I am finding myself buying apples and pears every week (and of course bananas) but not much else is coming home with me from the fruit department. Grapes are super expensive right now, citrus isn&#8217;t really in yet and berries are long gone. So, pears and apples (and bananas) it is then. And that&#8217;s totally ok.</p>
<p>(It&#8217;s a good thing we love them.)</p>
<p>Since I&#8217;ve been buying a ton of pears and apples, I am finding that with so many on hand my pears are getting real ripe and sweet real fast. The other morning I was in the mood for a green smoothie, but not really in the mood for the <a href="https://aggieskitchen.com/2011/04/03/green-smoothies-aka-green-monsters-aka-shrek-juice/" target="_blank">green smoothie</a> I usually make. I wanted something a little different. <a href="http://thelemonbowl.com/" target="_blank">Liz</a> has me obsessed with adding cinnamon to my smoothies so with that in mind and some ripe pears on hand I had to put this tasty little concoction together. It turned out pretty amazing and I made it again for my daughter this weekend.</p>
<p>I introduce you to my current favorite smoothie &#8211; <strong>Cinnamon Pear Green Smoothie</strong>!</p>

<p><a href="https://aggieskitchen.com/wp-content/uploads/2013/09/Autumn-Spinach-Salad-Pecan-Vinaigrette-Recipe-3.jpg"><img loading="lazy" decoding="async" class="aligncenter wp-image-7109 size-full" title="Autumn Spinach Salad with Pecan Vinaigrette" src="https://aggieskitchen.com/wp-content/uploads/2013/09/Autumn-Spinach-Salad-Pecan-Vinaigrette-Recipe-3.jpg" alt="bowl of spinach salad topped with feta cheese and apple slices next to mason jar of pecan vinaigrette with spoon in it and a bag of Fisher pecan halves in the background" width="620" height="930" data-pin-description="Autumn Spinach Salad with Pecan Vinaigrette #salad #saladrecipe #saladdressings #fishers #healthyrecipe #aggieskitchen" srcset="https://aggieskitchen.com/wp-content/uploads/2013/09/Autumn-Spinach-Salad-Pecan-Vinaigrette-Recipe-3.jpg 620w, https://aggieskitchen.com/wp-content/uploads/2013/09/Autumn-Spinach-Salad-Pecan-Vinaigrette-Recipe-3-200x300.jpg 200w" sizes="auto, (max-width: 620px) 100vw, 620px" /></a></p>
<p>I have never been one to only eat salads in the warm weather months. Maybe that&#8217;s because I live in Florida and we have warm weather almost all year long?</p>
<p>I&#8217;d like to believe that I would enjoy a salad here and there in the cold winters that some of you experience in the North (and/or West I guess I should say). For me, building a salad comes from whatever is in season, looks good in the produce section or whatever you are craving really. I can never say no to a crisp bowl of crunchy salad veggies with a good homemade dressing or vinaigrette.</p>
<p><a href="https://aggieskitchen.com/wp-content/uploads/2013/09/Autumn-Spinach-Salad-Pecan-Vinaigrette-Recipe-4.jpg"><img loading="lazy" decoding="async" class="aligncenter wp-image-7108 size-full" title="Autumn Spinach Salad with Pecan Vinaigrette" src="https://aggieskitchen.com/wp-content/uploads/2013/09/Autumn-Spinach-Salad-Pecan-Vinaigrette-Recipe-4.jpg" alt="mason jar of pecan vinaigrette with spoon in it on cutting board with bowl of autumn spinach salad in background" width="620" height="930" data-pin-description="Autumn Spinach Salad with Pecan Vinaigrette #salad #saladrecipe #saladdressings #fishers #healthyrecipe #aggieskitchen" srcset="https://aggieskitchen.com/wp-content/uploads/2013/09/Autumn-Spinach-Salad-Pecan-Vinaigrette-Recipe-4.jpg 620w, https://aggieskitchen.com/wp-content/uploads/2013/09/Autumn-Spinach-Salad-Pecan-Vinaigrette-Recipe-4-200x300.jpg 200w" sizes="auto, (max-width: 620px) 100vw, 620px" /></a></p>
<p>Now, though I can eat salad any day of the year, I don&#8217;t necessarily always want to make a salad for myself. That&#8217;s another story. Lately I have been in a salad rut, but was inspired to create this one with the newly arrived fruits of the season that I&#8217;ve been seeing lots of &#8211; apples and pears. What goes perfectly with a salad chock full of apples and pears? Why, pecans of course.</p>
<p><a href="https://aggieskitchen.com/wp-content/uploads/2013/09/Autumn-Spinach-Salad-Pecan-Vinaigrette-Recipe-5.jpg"><img loading="lazy" decoding="async" class="aligncenter wp-image-7112 size-full" title="Autumn Spinach Salad with Pecan Vinaigrette" src="https://aggieskitchen.com/wp-content/uploads/2013/09/Autumn-Spinach-Salad-Pecan-Vinaigrette-Recipe-5.jpg" alt="cutting board with close up of pecans " width="620" height="620" data-pin-description="Autumn Spinach Salad with Pecan Vinaigrette #salad #saladrecipe #saladdressings #fishers #healthyrecipe #aggieskitchen" srcset="https://aggieskitchen.com/wp-content/uploads/2013/09/Autumn-Spinach-Salad-Pecan-Vinaigrette-Recipe-5.jpg 620w, https://aggieskitchen.com/wp-content/uploads/2013/09/Autumn-Spinach-Salad-Pecan-Vinaigrette-Recipe-5-186x186.jpg 186w, https://aggieskitchen.com/wp-content/uploads/2013/09/Autumn-Spinach-Salad-Pecan-Vinaigrette-Recipe-5-100x100.jpg 100w, https://aggieskitchen.com/wp-content/uploads/2013/09/Autumn-Spinach-Salad-Pecan-Vinaigrette-Recipe-5-240x240.jpg 240w, https://aggieskitchen.com/wp-content/uploads/2013/09/Autumn-Spinach-Salad-Pecan-Vinaigrette-Recipe-5-150x150.jpg 150w, https://aggieskitchen.com/wp-content/uploads/2013/09/Autumn-Spinach-Salad-Pecan-Vinaigrette-Recipe-5-300x300.jpg 300w" sizes="auto, (max-width: 620px) 100vw, 620px" /></a></p>
<p>I have a hard time choosing a favorite when it comes to nuts, but I will say that <a href="http://www.fishernuts.com/cooking-nuts/Pecans" target="_blank" rel="nofollow noopener noreferrer">pecans</a> are definitely up there on the list. Especially when it comes to fall inspired dishes, like this salad. I created a simple pecan vinaigrette using Fisher Nut Pecan Halves and it is absolutely delicious, as you can imagine a nutty vinaigrette to be. Toasting up the pecans and adding them to the vinaigrette base while still warm infuses a little extra flavor into the mixture &#8211; so good! It was a perfect dressing for this simple seasonal salad, but honestly I can&#8217;t wait to drizzle it over other fall roasted veggies like butternut squash and Brussels sprouts.</p>

<p>Remember <a href="https://aggieskitchen.com/2012/10/22/golden-granola-recipe-from-jenna-webers-book-white-jacket-required/">Jenna&#8217;s granola</a> I shared with you earlier this week? Well, it&#8217;s gone (time to make more!). I threw the last of it on this salad the other day for lunch and let me tell you, granola on salad is where it&#8217;s at.</p>
<p>I was having a major craving for pear and gorgonzola <em>something</em> the other day. That <em>something</em> turned into a salad (surprise surprise). I had the pears, the gorgonzola, and the greens but I was missing those honey sweet crunchy nuts that I felt absolutely belonged on top of a salad like that.</p>
<p>At the same time I was experiencing this intense craving, I happen to get <a href="http://aspicyperspective.com/" rel="nofollow">Sommer&#8217;s</a> comment on my granola blog post that said something sort of like, &#8220;I could honestly put granola on top of EVERYTHING!!&#8221;</p>
<p>Ding ding ding. There ya have it.</p>
<p>Granola on salad. And this Greek Yogurt Poppyseed Dressing pulled it all together perfectly.</p>
