<p>I can&#8217;t believe this is my first post of 2017! I decided I needed a bit of a breather in January, some time to regroup after a month of helping my littlest guy recover from a tonsillectomy and my biggest guy (my husband) recover from a shoulder/rotator cuff surgery. I&#8217;ll admit, it was nice to take a break from worrying about picking up my camera and just focus on cooking for my family. My head is always spinning with new recipe ideas, as well as trying to figure out what to make for dinner that I honestly enjoyed just making recipes from cookbooks, friends and my blog without thinking too much of it.</p>

<p>One of the things I&#8217;m trying to get better at is making healthier snacks available for my kids to take in the car on their way to basketball or volleyball practices. We are full on entrenched in sports right now and spend many afternoons and evenings trekking back and forth between gyms. It seems like my kids are ALWAYS hungry and I&#8217;ve been trying to be more mindful about what they are snacking on and making sure they are eating more than just pretzels or crackers (it&#8217;s hard!). One thing I know for sure, anytime I make snacks like these <a href="https://aggieskitchen.com/blueberry-almond-oatmeal-bites/" target="_blank">oatmeal bites</a>, <a href="https://aggieskitchen.com/spinach-and-feta-quinoa-bites/" target="_blank">quinoa bites</a> or <a href="https://aggieskitchen.com/broccoli-cheese-frittata-muffins-quinoa/" target="_blank">egg muffins</a>, they are the go-to snack and don&#8217;t last very long. Seeing my kids choose those first is motivation enough to get myself into the habit of making quality portable snacks more often.</p>

<p>My children have pretty big appetites. I feel like they are always eating &#8211; as I&#8217;m clearing up one meal they are already asking for a snack. I&#8217;m not going to say this bothers me in the least, seeing their love of eating definitely makes my Italian mama heart happy. But, it can be a challenge to keep up with having smart, healthy snacks always available for them so they don&#8217;t turn to junk. I typically offer them yogurt, cheese sticks, fruit, pretzels or granola bars&#8230;but they do get bored.</p>
<p>I wanted to try out a new kind of snack on my kids a couple of weeks ago while we were off school for a long holiday weekend. My kids LOVE <a href="https://aggieskitchen.com/2013/08/14/cherry-almond-granola-and-summertime-cherry-parfaits/" target="_blank">parfaits</a>, and ask for them all the time. They keep me on my toes in the <a href="https://aggieskitchen.com/tag/granola/" target="_blank">granola</a> making department that&#8217;s for sure, I really don&#8217;t make it often enough for them (we go through it so fast when I do make it!). Instead of parfaits this time, I offered them a plate of Blueberry Almond Oatmeal Bites served along with a bowl of Greek yogurt drizzled with honey. Fancy, huh? It actually took less effort than making 2 parfaits!</p>

<p>I know what you are thinking, of all things for me to come home from my <a href="https://aggieskitchen.com/2015/10/09/princess-cruises-west-coast-getaway-on-ruby-princess/" target="_blank">cruise</a> obsessed with, it&#8217;s this Bircher Muesli, right? Not the mango margaritas, seafood dinners and <a href="http://www.princess.com/ships-and-experience/food-and-dining/chocolate-journeys/" target="_blank">chocolate journeys desserts</a> I indulged in on the <a href="http://www.princess.com/learn/ships/ru/" target="_blank">Ruby Princess</a>, but a breakfast I found on the breakfast buffet &#8211; this is what I feel the need to share with you immediately. <a href="https://aggieskitchen.com/category/breakfast/" target="_blank">Breakfast</a> is the most important meal of the day, even when you&#8217;re cruising. Humor me please.</p>
<p>Typically I&#8217;m an egg for breakfast girl, but when I stumbled onto the section of the breakfast bar that was holding bowls of Bircher muesli, dried fruits and plenty of nuts I was instantly intrigued. <a href="http://www.mixmyown.com/blog/what-is-bircher-muesli-the-history-and-benefits/" target="_blank">What in the world is Bircher Muesli anyway</a>? That&#8217;s what I was wondering! It&#8217;s basically overnight oats (or what I sometimes call <a href="https://aggieskitchen.com/2014/01/09/refrigerator-oats-with-berries-and-banana/" target="_blank">refrigerator oats</a>, but a little different and invented by the Swiss physician, <a href="http://www.zora.uzh.ch/40410/1/Wolff_Bircher-Benner.pdf" target="_blank">Maximilian Bircher-Benner</a> (a bonus history lesson for you!). I go on an overnight oats kicks every now and then and needless to say, I&#8217;ve been on one since I got home from my <a href="http://www.princess.com/" target="_blank">Princess Cruise</a> a few weeks ago.</p>

<p>I can not express enough how generally impressed I was with the food on <a href="https://aggieskitchen.com/2015/10/09/princess-cruises-west-coast-getaway-on-ruby-princess/" target="_blank">our cruise</a>. When I remember cruising with my husband and parents back in the day, I definitely remember food, but I remember the quantity of it more so than the quality. My friend (and plus one) Heidi and I both ate breakfast and a couple of lunches in the main buffet area and we commented more than once on the selection of food items that were being served. You know how I am with my <a href="https://aggieskitchen.com/category/salad/" target="_blank">salad</a> so of course I was seeking out the salad bar on the very first day. Guys, I was loving my salads all week long, especially with whatever fish or sandwich they were serving nearby. I really tried to keep things light (when I could!) and the variety of <a href="http://www.princess.com/ships-and-experience/food-and-dining/" target="_blank">food and dining</a> really made it possible.</p>

<p>Summer food truly does make me happy. Living in Florida, I do feel lucky that our summer food season is already among us with beautiful and colorful fruits and veggies already popping up in the grocery stores and produce markets. I am always more inspired by warm weather produce, mostly because when it comes to cooking, I admittedly tend to have a lazier approach and enjoy fresh, simplistic recipes that are fruit and veggie heavy &#8211; think salads, smoothies &amp; anything that can be cooked on the grill.</p>

<div>As soon as I saw their recipe for Peach Pie Smoothie I couldn&#8217;t get it out of my mind. I love smoothies but sometimes get in a smoothie rut. One of my favorite fruits to include in smoothies is peaches and adding oats to the mix is something I haven&#8217;t done in a long time. With summer break around the corner and having my kids home from school for a couple of months I know I have to up my breakfast and snack game a bit so this Peach Pie Smoothie fits the bill. My daughter, toddler and I enjoyed one of these smoothise as a mid morning snack over the weekend and we all loved it. The addition of raw oats to the smoothie gives it a nutritional boost, not to mention a nutty flavor that I love.</div>

<p>People often tell me they have trouble having breakfast in the morning and I have to tell you, I have never had that dilemma. If I don&#8217;t eat something before I fully start my day then I&#8217;m setting myself up for trouble, meaning I&#8217;ll probably binge on cheese and crackers at lunchtime or get a headache or just feel really off and cranky later in the day. I need my breakfast&#8230;and I truly believe it is the most important meal of the day.</p>
<p>Most days during the week I&#8217;m up very early to go to the gym and all I can handle at that time of day before a workout is a banana. I have a few regular breakfast I tend to make regularly for myself depending on time, this Blueberry, Banana And Peanut Butter Oatmeal being one of them. <p>I&#8217;ve been on a granola making kick for the last couple of months. They love having it in a bowl with a bit of Greek yogurt and honestly it couldn&#8217;t make me happier to hear them ask for it, even when I&#8217;m not necessarily in the mood to make it.</p>

<p>I took the last couple of weeks off from making it but since this week is my daughter&#8217;s birthday week I decided to surprise the kids with a fresh batch when they get home from school today. When I make our granola I keep it on the counter in a pretty glass jar, it&#8217;s nice to look at as well as easy to serve &#8211; just spoon into a bowl for a quick healthy snack!</p>

<p>Making granola at home is super simple (if you haven&#8217;t tried it yet please do!) and each time I make it I try to add something a little different to it to keep things interesting. One thing that always stays the same is the nuts &#8211; my granola has to have plenty of nuts in it for texture, protein and nutrients. This time I used honey instead of my normal maple syrup and I added a little dark chocolate for fun.</p>

<p>Let&#8217;s talk about breakfast. I have always been in the &#8220;breakfast is the most important meal of the day&#8221; club and I can honestly say that if I miss my breakfast it really impacts the rest of my day in so many ways. Lately I&#8217;m noticing that I am not getting around to eating my morning meal until way later in the morning (closer to lunchtime sometimes!) and it&#8217;s becoming a bit of a bad habit for me. I&#8217;m making a huge effort to change that.</p>
<p>On the days that my kids ask for oatmeal, I am starting to make myself these refrigerator oats. What I love about refrigerator oats is that they can be ready to eat whenever you are (well, for the most part &#8211; they do need to sit in the fridge for about an hour). When I&#8217;m prepping my kids&#8217; hot oatmeal I scoop out some oatmeal in a bowl for myself. While they are eating, I finish preparing mine with almond milk and stick in in the fridge for later. As long as it sits in the fridge for about an hour the oats will absorb most of the milk and have a slightly firm, nutty texture that I really love. Once it gets to this point it&#8217;s ready for all the fixins&#8217; which for me is a spoonful of peanut butter, chopped banana and fresh or frozen berries (if using frozen I prefer blueberries). You can sprinkle some cinnamon on there too! A dollop of your favorite yogurt would be a nice topper too. With all the fruit and peanut butter I don&#8217;t feel the need to add any sweetener but if you do go ahead and drizzle a little agave, honey or pure maple syrup (or whatever sweetener you like).</p>
<p>I&#8217;ve been pretty excited about my refrigerator oats lately. It&#8217;s a nice change from eggs, it&#8217;s easy to prep (you just need to remember) and they are forgiving, meaning you can forget about them and come back later or take them with you if you have to run out the door. Since I never know when baby boy is going to let me have breakfast this has definitely become a breakfast I&#8217;m enjoying. Not to mention it&#8217;s not such a shabby way to kick start the day!</p>

<li id="zlrecipe-ingredient-2" class="ingredient">1 tablespoon <a class="ingredient-link" href="http://www.amazon.com/Chia-Seed-16-oz-Pkg/dp/B005P0G8VK/ref=sr_1_8?ie=UTF8&amp;qid=1389284324&amp;sr=8-8&amp;keywords=chia+seeds" target="_blank" rel="nofollow">chia seeds</a></li>

<li id="zlrecipe-ingredient-4" class="ingredient">chopped banana</li>
<li id="zlrecipe-ingredient-5" class="ingredient">fresh berries (or frozen blueberries)</li>

<li id="zlrecipe-instruction-0" class="instruction">In a cereal bowl, combine oats, chia seeds and almond milk. Place in refrigerator and let sit for one hour. Most of the milk will be absorbed.</li>
<li id="zlrecipe-instruction-1" class="instruction">When oats are ready, stir in your peanut butter and top with banana and berries (or fruit of choice!) Drizzle with sweetener and add yogurt if using.</li>

<p>Note: My all time favorite oats are <a href="http://www.amazon.com/Coachs-Oats-Whole-Grain-Oatmeal/dp/B005EL6VOY/ref=sr_1_1?ie=UTF8&amp;qid=1389284101&amp;sr=8-1&amp;keywords=coach%27s+oats" target="_blank" rel="nofollow">Coach&#8217;s Oats</a>. The best way to describe them is a cross between steel cut and old fashioned oats. They cook up quick and have more of a grainier texture than regular oatmeal, which I love. I discovered them a few years ago when I came across a sample of them and also started seeing them mentioned on other blogs. I have only found them at Costco, but I&#8217;m sure that Whole Foods or other natural foods stores carry them as well. My Costco doesn&#8217;t have them anymore so I&#8217;ve been ordering them from Amazon.</p>

<p>You are going to want to make this granola. I insist that you make it, actually. Not only will it make your house smell incredible, but it is the perfect snack to take with you while you are running errands in the car, watching tv, or just playing around on the computer. It&#8217;s great sprinkled over yogurt or even some vanilla ice cream. I warn you though, portion it out because you might be surprised at how much you can eat of it in one short sitting. It is definitely addictive.</p>

<p>This Cranberry Spice Granola recipe is the first of many recipes I have flagged from a new cookbook written by my colleague and blogger friend, Kelsey&#8230;also knows as <a href="http://www.thenaptimechef.com/" rel="nofollow">The Naptime Chef</a>. I&#8217;ve been following Kelsey&#8217;s blog for years, and recently got to know her even better through writing for <a href="http://blogs.babble.com/family-kitchen/" rel="nofollow">Babble&#8217;s Family Kitchen blog</a> together.</p>
<p>What you will love the most about her cookbook (<a href="http://www.amazon.com/The-Naptime-Chef-Fitting-Family/dp/0762442123/ref=sr_1_1?ie=UTF8&amp;qid=1331334943&amp;sr=8-1" rel="nofollow">which is now available on Amazon</a>) is that there is something for everyone in the book. The premise behind her blog, and now her cookbook, is that you don&#8217;t have to compromise on good eating after having kids because your time is limited. Kelsey finds a way to create and recreate recipes that fit into a busy parent&#8217;s schedule. And I love the &#8220;naptime stopwatch&#8221; she includes with every recipe, making it easy to plan ahead.</p>
<p>A few dishes I&#8217;m anxious to try are Orzo with Artichokes, Tomatoes and Pine Nuts, Soba Noodle Salad, Baked Sesame Tomatoes, Sticky Orange Drumsticks (my daughter will LOVE these!) and the Artichoke Lasagna. Did this list just make you as hungry as it did me?</p>

<p>In the meantime though, I&#8217;ll just continue to snack on this granola.</p>
<p>If you have never had homemade granola, then you&#8217;re in for a treat. Homemade granola is incredibly versatile, change it up based on what you have on hand. I happened to be out of the pecans that were called for in this recipe, so I easily subbed in sliced almonds.</p>

<li class="ingredient" itemprop="ingredients">1/3 cup vegetable oil (I cut this down to about a 1/4 cup)</li>
<li class="ingredient" itemprop="ingredients">3 cups old fashioned oats, not quick cooking)</li>
<li class="ingredient" itemprop="ingredients">1 cup sweetened shredded coconut (I used the unsweetened variety)</li>
<li class="ingredient" itemprop="ingredients">1 cup chopped pecans (I used sliced almonds)</li>
<li class="ingredient" itemprop="ingredients">1 teaspoon sea or kosher salt</li>
<li class="ingredient" itemprop="ingredients">1 teaspoon ground cinnamon</li>
<li class="ingredient" itemprop="ingredients">1/4 teaspoon ground nutmeg</li>
<li class="ingredient" itemprop="ingredients">1/4 teaspoon ground ginger</li>
<li class="ingredient" itemprop="ingredients">1 teaspoon vanilla extract</li>
<li class="ingredient" itemprop="ingredients">1/2 cup pure maple syrup</li>
<li class="ingredient" itemprop="ingredients">1/4 cup apple cider or apple juice</li>
<li class="ingredient" itemprop="ingredients">1 cup dried cranberries</li>
</ul>

<h3 style="clear:left" id="directions">Directions:</h3>
<div class="instructions" itemprop="recipeInstructions"><ol>
<li>Preheat oven to 350 degrees. Grease a large rimmed baking sheet with a little vegetable oil or non-stick cooking spray. Set aside.</li>
<li>In a large bowl, combine oats, coconut, nuts, salt, cinnamon, nutmeg, and ginger. Gently stir together with a spoon until the oats and spices are completely mixed. In a separate bowl, combine oil, vanilla extract, maple syrup and apple juice or cider and pour over oat mixture. Stir the oats carefully and gently until completely combined and coated with the liquids.</li>
<li>Spread the oat mixture on your baking sheet in an even layer and bake for 10 minutes. After 10 minutes, take your baking sheet out of oven and carefully stir the granola so that it will toast up evenly. Place back in oven and cook for an additional 10-12 minutes or until golden brown. Remove pan from oven and add cranberries to granola, stirring to combine. Let cool.</li>
<li>Once cooled, store in a cool dry place in a container with a tight fitting lid.</li>

<p>How could you resist a bowl of goodness like this?</p>
<p>I don&#8217;t usually get excited about granola when I see it bagged in the store. When I read the ingredients, something always stands out as not so good and I am disappointed. I have found a few favorites, however, I really can&#8217;t see myself buying anymore after making the easiest batch of granola ever. This stuff is good. Real good.</p>
<p>I have made <a href="http://www.foodnetwork.com/recipes/ina-garten/homemade-granola-recipe/index.html">Barefoot Contessa&#8217;s Granola</a> before and have loved it too. But it has a lot of ingredients, and oil, so it&#8217;s not something I tend to make often. This granola is simple, and I truly believe that simple is usually the best.</p>

<p>This Nutty Granola was chosen by <span style="font-weight: bold; font-style: italic;">Leslie</span> at <a style="font-style: italic; font-weight: bold;" href="http://lethallydelicious.blogspot.com/">Lethally Delicious</a> for the <a href="http://cravingellieinmybelly.blogspot.com/"><span style="font-weight: bold; font-style: italic;">Craving Ellie in my Belly</span></a> group. I just joined the group and this was the perfect first recipe! I made a few minor adjustments&#8230;I left out the cinnamon, only because I didn&#8217;t have any, and added some vanilla. I also subbed raw cashews for walnuts because they are what I had on hand. My kitchen smelled so good this afternoon. Even my son came in and said &#8220;Mom, what is that yummy smell?&#8221; So good mommy spooned some fresh granola into a small bowl and said &#8220;Snack.&#8221; So we snacked. 😉</p>

<li>Preheat the oven to 300 degrees F. Spray a large baking sheet with cooking spray.</li>
<li>In a medium bowl combine the oats, nuts, maple syrup, salt, cinnamon and the raisins, if using. Spread the mixture onto the baking sheet and bake until golden brown, stirring occasionally, about 30 minutes. Transfer the sheet to a cooling rack and let cool completely. Store in the refrigerator in an airtight container.</li>
