What’s great about having a food blog is you basically have a food diary that documents what you’ve eaten over the years and if you’re lucky, a little story behind it. For example, I stumbled across this recipe for Greek Salad & Hummus Pita Pizza in my blog archives recently and was instantly brought back to a season that I remember eating these very very often. These pita “pizzas” are so incredibly light and delicious I really wanted to share them again with you, in case you are looking for new ideas for lunch or light dinners. ‘Tis the season for light dinners right?

Since I’ve been in a bit of a lunchtime rut these last few months, I know what I’ll be having this week. πŸ™‚

From the looks of it, all I’ve been eating lately is salad and pizza.

There’s a little truth to that.

You’ll want to make this Greek Salad and Hummus Pita Pizza for yourself for lunch or dinner soon. It’s seriously so good. I made it for my lunch earlier this week but it’s going to be my dinner tonight…Gina and I are having girl’s night in while the boys are at the Magic game. This is perfect girls night in food don’t you think? (and no, Gina won’t eat this exact same thing with me, I’ll make her pita toasted with some cheese and chopped tomato and cucumber on the side)

And before I forget, I have to tell you about this pita bread I found at Walmart (now it’s at my regular grocery store, Publix). One pita bread is only 60 calories, has 4 grams of fiber and 6 grams of protein. It’s called Joseph’s…look for it! It has slightly changed my life as far as pita bread is concerned.

Greek Salad & Hummus Pita Pizza

Yield: 1 serving

Ingredients:

  • whole-wheat pita, lightly toasted
  • 2 tablespoons of your favorite hummus spread (I had Sabra jalapeno hummus on this pita)
  • shredded lettuce
  • plum tomato, seeded and chopped
  • cucumber, seeded and chopped
  • pepperoncini peppers, sliced
  • crumbled feta cheese
  • lemon pepper seasoning, to taste

Directions:

  1. Spread hummus on lightly toasted pita and top with lettuce, tomato, cucumber, pepperoncini and feta. Season lightly with lemon pepper seasoning Β and enjoy!
