Aloha Kebabs with Sesame Rice
If there is one meal my kids get excited about, it’s kebabs. I’m not sure what it is about kebabs, but when I say that’s what we are having for dinner I always get a big “HURRAY!” from everyone. It makes me wonder why I don’t make them more often.
This simple and flavorful kebab recipe comes from the newest cookbook from the people at America’s Test Kitchen. It’s named 6 Ingredient Solution and when I was asked if I wanted to check out a copy for review, I couldn’t resist after reading it’s name. 6 ingredients?? Right before the busy school year is about to start? Yes, please. Talk about perfect timing.
As with all of their other cookbooks, America’s Test Kitchen 6 Ingredient Solution is chock full of recipes and tips that are tried and true. I always learn something new from the side notes that are included with each recipe – sometimes it’s a favorite ingredient that they prefer to use, most of the time it’s a technique with an unfamiliar (or familiar!) ingredient.
This Aloha Kebabs with Sesame Rice recipe is a busy weeknight dinner’s dream come true. The ingredient list is what drew me in, I always have cooked chicken sausage in the freezer and they defrost super quick (for someone who always forgets to defrost, that is a good thing). The rest of the straight-forward ingredients can be easily found already in your pantry (hoisin, sesame oil, rice) or picked up at the grocery store (peppers and pineapple). Cooking up the kebabs under the broiler with minimal effort on my part – as opposed to grilling them – was also something that intrigued me. This dinner literally came together in just about 30 minutes (give or take – with prep), and I can see it being even faster if you take a few minutes to put the kebabs together earlier in the day before dinnertime.
I even got my daughter involved with dinner prep, which is something I admit I don’t often do. Brushing on the hoisin sauce was a perfect job for her!
A few (several, actually) recipes from the cookbook I think my family will love:
Chicken Pizzaiola with Pasta
Polenta Casserole with Sausage and Peppers
Roasted Tomato and Corn Tostadas
Meatloaf Florentine
Egg, Ham and Hashbrown Pie
Mushroom-Miso Soup with Shrimp and Udon
Roasted Cod Fillets with Crispy Potatoes and Lemon
Dinner is served – enjoy!
Aloha Kebabs with Sesame Rice
Yield: 4 servings
Ingredients:
- 2 teaspoons sesame oil
- 1 cup long-grain white rice
- 12 ounces cooked chicken sausages
- 2 red or green bell peppers
- 2 cups fresh pineapple chunks
- 1/2 cup hoisin sauce
Directions:
- Heat oil in medium saucepan over medium heat. Add rice and cook, stirring constantly, for 1 minute. Stir in 1 1/2 cups water and 1/2 teaspoon salt and bring to a boil. Reduce heat to low, cover, and cook until liquid is absorbed, about 15 minutes longer. Off heat, let rice sit, covered, until tender about 15 minutes longer. Fluff rice with fork; cover to keep warm.
- Meanwhile, adjust oven rack 6 inches from broiler element and heat broiler. Line rimmed baking sheet with aluminum foil. Cut sausage into 1-inch chunks; core bell peppers and cut into 1-inch pieces. Thread sausage, bell peppers, and pineapple onto eight 12-inch metal skewers.
- Lay skewers on prepared sheet and brush with hoisin sauce. Broil skewers, turning occasionally, until vegetables are softened and well browned, 10 to 15 minutes. Serve with rice.
You will need eight 12-inch metal skewers for this recipe. (Be very careful because those metal skewers get HOT!) For the rice, I used brown long-grain rice instead of white and cooked it up in my rice cooker. For the sausage, I used Aidells Pineapple & Bacon chicken sausage (chicken apple sausage would work great too).

I came across this cookbook online not too long ago and have been intrigued ever since. It was nice to read about it again and see more positive reviews about it. You can never go wrong with America’s Test Kitchen cookbooks and publications! The kebabs sound fantastic–they seem really versatile too if you want to use a different protein, and I love the idea of cooking them under the broiler instead of firing up the grill on a super-hot summer day.
I think it’s the skewers! My kids go crazy for anything on a skewer or toothpick…I think it’s the danger factor. And p.s. you had me at “Aloha”.

I would think that the sausage didn’t have to be cooked before broiling them?
The sausages I was referring to was the precooked packaged ones (like those in the smoked sausage section), I didn’t actually precook them myself.
