Are you planning out your menu for Super Bowl still? I am. There are so many great recipes and ideas floating around, it’s hard to narrow down. I usually figure it out last minute, like the day of. Of course, if I was having a party this year I probably would have started a little planning by now.

I do know this. As much as I love indulgent food when I’m watching football, I also like to balance things out with not so indulgent food. Salads aren’t typical Super Bowl or football watching food but I can guarantee you that if you are entertaining or just hanging out at home, this Apple, Celery and Walnut Salad will be much appreciated by those who are working hard at keeping that healthy balance this time of year. I find that I’m usually the salad maker and bringer when it comes to parties or get togethers, are you surprised?

This Apple, Celery and Walnut Salad is full of crunch and flavor. It would pair up really well with anything buffalo (like these Baked Hot and Garlic Zingers that my husband loves) or barbecue (Pulled Pork and Chipotle Onion Sandwiches anyone?). Better yet, order a pizza and serve a homemade salad along with it. Wait, don’t order a pizza (busiest night of the year), make this Cheesy Pizza Bread instead (wowzers). Like I said…it’s all about balance.

I’ve mentioned before how I believe the perfect salad base is made up of greens, cheese and nuts. Well, this one here definitely falls into that perfect salad category. Sweet apples paired up with crunchy walnuts and sharp white cheddar cheese? Um, yes please. Throw in thinly sliced celery for extra crunch and bite and you’re set.

Note: The vinaigrette and salad can be prepped ahead and kept in the refrigerator minus the apple. Slice up your apple and add to your salad right before you’re ready to serve. To prevent apples from browning (it’s hard to avoid!), toss the apples in a bit of lemon juice before adding to your salad.

Apple, Celery and Walnut Salad with Honey Dijon Vinaigrette

Yield: 6-8 servings

Ingredients:

For the vinaigrette:

  • 1/4 cup apple cider vinegar
  • 1/3 cup olive oil
  • 1 tablespoon dijon mustard
  • 1 tablespoon honey
  • pinch coarse salt and fresh ground pepper

For the salad:

  • 1 heart of romaine, cut in half longways, then cut into strips
  • 4 celery stalks with the greens, sliced thin
  • 4 - 6 oz white cheddar cheese, shredded
  • 1/3 cup Fisher Walnuts Halves & Pieces, chopped
  • 2 apples, cut into matchsticks

Directions:

  1. Make the vinaigrette by combining your ingredients in a small jar or container. Shake until well combined.
  2. Place all of your salad ingredients in a large serving bowl or plate. Gently toss to combine.
  3. Add your apples to salad right before serving.
