Toasted Walnut Basil Pesto and {Blendtec Giveaway}

I have been making pesto this past month like it’s nobody’s business. Every time I run out, I make more. I put it on everything…pizza, pasta, soup, bread and even use it as a dip for…pretzels.

I love me some pesto.

I normally make my pesto with pine nuts, but since I have a Costco sized bag of walnuts hanging in the pantry I have been using walnuts instead. And I like it. It gives the pesto and earthier flavor, and if you didn’t know, walnuts kick butt in the nutrition department. So it’s all good.

Now in addition to this pesto recipe, I have another favorite thing to share with you. My new Blendtec blender. Blendtec was nice enough to send me a blender to try out as well as one to give to one of my readers – that’s you.

How cool is that? You will love this blender people, it’s hard core. I have made 20 something smoothies in it already (there is a digital counter on the blender that counts your uses, my kids and I think that is the coolest thing). I’ve even started to make whole juices. I’ve made salsa … and this pesto. I’m having some fun with my new blender. And the winner will too.

Toasted Walnut Basil Pesto

Recipe from Aggie’s Kitchen

4 heaping cups of basil leaves
1/2 cup toasted walnuts
1/2 – 1/3 cup olive oil
2 garlic cloves
1/4 – 1/3 cup grated parmesan cheese
1/2 lemon (helps maintain fresh green color!)
big pinches kosher or sea salt and fresh ground pepper, to taste

Add all ingredients to the pitcher of your blender (or food processor) and blend until smooth.

OK! I could use this like nobodys buisness!! I have wanted to make Pesto for MONTHS because I LOVE it but I do not have a blender or food processor :-( When I CAN I always have to pick the recipes w/o a blender and that limits what I can make. I would LOVE, LOVE LOVE to win this!

My former blender has been out of commission for nearly the whole summer. ACK! My kids are in a desperate way for smoothies. That is what our nearly daily use is for our blender. Smoothies smoothies smoothies! I also use it for soups and salsas and more. I miss having a blender!

Oh yum! That pesto looks amazing. I could really use a new blender, as mine has developed an issue. I use mine mostly for smoothies, sauces, breadcrumbs, and milkshakes for the kids, but I think I would use it for more if it were a better blender!

Great Pesto recipe!! I’m a baker, so I love making fruit sauces, fruit butters, purees, milkshakes, etc…

I normally use my blender for smoothies, soup and breadcrumbs. But, I borrowed a friend’s Blendtec blender over the weekend and made hummus. I turned out great … so much smoother than my food processor. I must have one of those blenders!

I love that the blender is factory reconditioned. I’m all about recycling appliances! They take up so much space in the landfill.

Hahaha! Apparently I was so excited I forgot my favorite thing! Green smoothies! I add fresh ground flax seed(throw it in the Blendtech before other ingredients and give it a whirl). Then spirullina, a couple dates for sweetness, frozen fruit(blueberries, strawbrries, mango, pineapple, apples, bananna, rasberries, peaches….. I could go on fover) :-), then add your fresh greens. Spinach is pretty mild if you are just starting out and are not too sure of the flavor, kale, chard, mustard greens, there are infinite possibilities and combinations. Always add water (I do a little less than half of the ingredient pile- less water makes it thicker/more water is thinner) then blend to your hearts content! :-)

Hi aggie! My mom and I both use our blender to whip up protein shakes with frozen fruit in the morning as our pre-workout fuel. I also use our blender to make everything from home-made nut butters to blending soups into creamy goodness. Since our blender recently broke (my fault and I have had to apologize profusely for this) we are in desperate need of a new one. I would love to surprise my mom with winning this!

That pesto looks amazing–I like to put cilantro in with the basil & co…mmmm. My roommate killed my blender, so I sure could use one. Pesto is the top blender recipe I make followed by:

Hi, Aggie [and everybody else, too!]. I use my blender the most to make smoothies with frozen fruit, some juice and a little bit of honey or agave syrup or Splenda. Also use it to make shakes w/frozen coffee cubes, Silk, non-fat ice cream and Splenda.

I use my blender for making pesto (the recipe I use also calls for walnuts) — lots of pesto to freeze to enjoy all year long. We also make fresh fruit sorbets…so we use the blender to blend the fruit and other ingredients. Really enjoy your site!

Ooh, a blendtec. We use our blender for weekend smoothies primarily. This would be perfect! Our blender received as a wedding gift died a few months after the wedding (though we are still going strong). It has since been replaced, but I know the mighty Blendtec would not let us down. :)

I must confess that since the blinder incident of ’95 I have not even attempted to turn a blender on. Turns out you can have a huge argument with your girlfriend after dumping the contents of a blender all over the kitchen counter…apparently if you don’t know how to put a blender together to hold that fancy milk shake you just made, you are going to have some cleaning to do.

I don’t have a blender but was at Costco last week and fell in love wih the Blendtec….. didn’t purchases it though… hubby:(
I do use a food processor, but it does NOTHING like a Blendtec Can.
So if I had one, I would:
Make amazing soup. tried it at Costco.Love that you can seeds and all and it heats it up.
Almond Milk Strawberry Ice Cream……… Delish!
Power Smoothies for my hubby…….and my self
New favorite thing to try………..Chia Seeds. They are a miracle for joint pain.
Boy do I hope I win one of those:)

I use my old blender all the time for smoothies, green smoothies mostly. Thought I broke a blade the other day with a frozen strawberry. It really is on it’s last legs, I can see stress cracks on the blade assembly. Pretty good for a 25 yr old blender though. I’ll have to drag out my food processor for the pesto. YUM!

Green Smoothies!!!! I love my green smoothies and making them for my family. I’ve gone through 3 blenders already; I love that it means we are getting so much nutrition, but having a blendtec would make our whole foods household run a little SMOOTHer!!!

I use my “very old” blender for everything from appetizers, hummus,salsas & pestos, to cocktails, like Mudslides and Smoothies. I can only imagine the wonderful things that I can blend up with this beautiful new blender. The sky is the limit!!

I’ve never thought to make pesto in the blender but I think that’s because mine is so junky! Your recipe looks great and this giveaway is so fun. I usually use my blender for green smoothies but have been thinking about investing in a better one to really get the job done.

I’ve really been wanting a blendtec ever since I watched the presentation at Costco and then did some further research on the internet. What an awesome giveaway. I actually don’t have a blender OR a food processor. :( I registered for both when we got married and didn’t receive either. We’ve also yet to come up with the money for one, therefore I don’t have any blender experiences, but I have a pile of amazing recipes awaiting the day when I do have a blender, like your pesto, which is making my yummy growl!

Thanks for the info on the lemon in pesto sauce. Mine does get quite …brown. I’ll have to try that next time! I never use my blender. It’s…old and sad. I use my food processor whenever I need a blender.

Surprisingly, I don’t own a blender. But I do have a magic bullet and I put that baby to work at least 4 out of 7 days a week. Most often I use it to grind nuts or make quick dressings.

I wish I had this pesto right now. Would really prefer it to peanut butter on english muffin. Sigh, sigh!

I have multiple autoimmune diseases and feel that the right nutrition can do more for my health than anything. I have seen these at costco and it’s my childrens favorite sample, especially the veggie packed smoothies. What could be better than telling your children to be sure and finish all their ice cream!

Hi Angie, I have you on my facebook also. I don’t have a cell so I don’t tweet. I have two blenders. One is so loud (plastic top) it scares my dog each morning. The other is glass top and heavy and I can’t use my right arm so it makes it hard to use that one. I make protein drinks everyday with whatever fruit I can get my hands on. We also use it to make pesto sauce with herbs from our little garden. Even used it to blend up some tomatoes off the vine yesterday as I was out of tomato paste and sauce. Not sure how I managed that, I guess I was cutting corners the last time I went grocery shopping. I love our recipes and your children are beautiful. (I am not trying to win points as I know it is a random pick) I just wanted to let you know that but then. You know. LOL Have a good day.

We could totally use a new blender…ours stopped working a few months ago and the kids really miss smoothies at breakfast or snack time…plus I would love to try your pesto recipe ;)

I use my blender most often for fruit smoothies or for soup but my favorite use is to make Pink Squirrels (a delicious grown-up milk shake).

The #1 way I would use this blender would be to blend healthy foods for my son who is g-tube fed. His Dr. put him on a blended diet and this would give me the best way to blend up his food and give him a balance diet to help him grow.

I would use the blender for everything!!! I currently use the one my mom and dad got as a wedding gift – 2 years before I was born. Let’s just say, it’s an antique and needs to be put to rest. :)

I use my blender for blending up soups to make them smooth, and for frosty, yummy drinks. It really needs to be replaced! The Blendtec would be wonderful!!

i use my blender for my sons blender diet to feed him thru his feeding tube, currently with the blender i have you have to strain the puree to make it so it will go thru his feeding tube correctly, the blendtec would take care of that prob and make my life alot easyer, the blenderized diet has made my life so much easyer as i am more confident that hes getting the nutrition he needs, with out confining his diet to just the very special diet he was on, thanks jamie, ps i liked blendtec on facebook already

I use my blender mainly for smoothies using ripe bananas from my freezer and whatever fruit is in season. I keep frozen mango cubes (thanks to Trader Joes) in my freezer too in case the produce selection isn’t too good.

I will use the blender for my daughter’s blenderized diet. She has had a g-tube most of her life but still was stuggling to gain weight. We started a bd a few weeks ago and are already seeing a difference in her. My current blender is not able to do what I need it to do to give her the variety of foods she needs.

I make smoothies for my kids in my blender several times a week. My oldest child won’t eat a fruit or veggie to save his life so I make the smoothies so that I can get some healthy foods into him.

As we have no food processor, I use my blender for everything. To puree soups and sauces, make smoothies, crumb graham crackers, cookies or nuts for crusts, and some of it actually turns out okay lol.
