Let’s end the week on a sweet note! Crispy Coconut-Oatmeal Cookies
Recipe found on Taste and Tell
Makes approx. 7 dozen
1 cup butter
1 cup sugar
1 cup firmly packed brown sugar
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2 cups regular oats (uncooked)
2 cups crisp rice cereal
1 cup flaked coconut
Preheat oven to 350F.
Beat the butter, sugar and brown sugar at medium speed in an electric blender until blended. Add eggs and vanilla; beat well.
Combine flour, baking soda, baking powder and salt. Add to the creamed mixture, mixing well. Stir in oats, cereal and coconut.
Shape dough into 1-inch balls and place 2 inches apart on a lightly greased cookie sheet. Flatten slightly with a fork or the bottom of a glass. Bake for 12 minutes or until done.
Transfer to wire racks to cool.

These cookies sound really good! I’ve not seen a recipe like this that combines oats and crisp rice cereal. I bet the cookie texture is amazing!
