<p>Remember a few weeks ago I posted this recipe for <a href="https://aggieskitchen.com/2013/06/24/grilled-baby-portabella-pesto-flatbreads-swap-it-or-top-it-with-mushroom-council-and-kitchen-play/">Grilled Baby Portabella Pesto Flatbreads</a>? They turned out so good that I wanted to go back and make a heartier, meatier version that my husband would be satisfied with for lunch or dinner. Me? I would be perfectly content with the cheese, sun-dried tomato spread and mushrooms. My husband, as good as he is about eating all the meatless meals I crank out for weeknight dinners, really enjoys a little bit of meat on his pizza. And so that&#8217;s what I gave him here with my latest naan pizza creation.</p>
<p>I had a package of julienned sun-dried tomatoes in the pantry and with a few quick pulses in my blender (along with some olive oil and garlic), I turned it into a spreadable base for the pizza. I decided to stick with my favorite mushrooms, the baby portabellas, as well as a couple of links of some turkey andouille sausage I recently picked up to kick up the flavor. The flavors worked so well together!</p>

<p>Now, if you want to make things easier on yourself, feel free to pick up a jar of pre-made sun-dried tomato spread. I&#8217;ve seen <a href="http://calsundrytomatoes.com/index.php?option=com_content&amp;view=category&amp;layout=blog&amp;id=45&amp;Itemid=90" target="_blank" rel="nofollow">a brand</a> in my produce section that would work, I&#8217;m sure most grocery stores have something similar as well. But the sun-dried tomato spread I threw together here was really simple &#8211; the sweetness from the tomatoes were incredible and the little add-ins made it a perfect complement to the other ingredients.</p>
<p>I obviously love making naan pizzas (like these killer <a href="https://aggieskitchen.com/2011/07/27/grilled-veggie-naan-pizza-with-pesto/" target="_blank">Grilled Veggie Naan Pizza</a> and <a href="https://aggieskitchen.com/2010/10/08/grilled-stinger-naan-pizzas/" target="_blank">Grilled &#8220;Stinger&#8221; Naan Pizza</a>), and the only problem that I have with them is that they are so darn good you can really go overboard with the calories if you&#8217;re not careful. If you look on the package of the bread, you&#8217;ll see a serving size is for 1/2 a loaf (at least on the ones I pick up) and if I am not prepared with a big salad to serve alongside my serving, then I might just go ahead and polish off the whole thing. With all the toppings and cheese, that could be considered a calorie disaster&#8230;or not. It&#8217;s up to you, but if you are watching your calorie intake and don&#8217;t want to blow that session on the elliptical or treadmill that morning, stick to just a couple slices and a salad (and save the rest for lunch the next day!).</p>

I don&#8217;t know about you, but I really appreciate a good spread of meatless options at any party or get together &#8211; especially appetizers. I have nothing against meaty snacks, but I just love veggie snack food better. Maybe because mentally I think I can eat more of it?</p>
<p>To me mushrooms are the ultimate compromise when it comes to satisfying both meat and veggie eaters. When cooked, they make a substantial addition to any recipe, and you can really flavor them up with fresh herbs and spices to pair up with cheese, breads, rice and pasta &#8211; among many other ingredients. You can stuff them for bite sized munching, saute them with savory garlic and herbs for a topping to a sandwich or main dish or use them as the star ingredient in a recipe like a grilled portabella mushroom burger or a stuffed portabella mushroom cap. I tend to use a good handful of chopped mushrooms to bulk up recipes like sloppy joes or stuffed peppers to keep them on the lighter side. The ideas are truly endless and I find myself always wanting to experiment with them more and more.</p>

<p>When I was asked to come up with an appetizer recipe to contribute to the &#8220;Swap It or Top It&#8221; <a href="http://kitchen-play.com" target="_blank" rel="nofollow noopener noreferrer">Kitchen Play</a> event with <a href="http://mushroominfo.com" target="_blank" rel="nofollow noopener noreferrer">The Mushroom Council</a>, this grilled summer meatless flatbread pizza immediately came to mind. Flatbreads are a great option for entertaining because they are so easy to whip up. I prepared these by first sauteing the sliced portabella mushrooms with a little olive oil, fresh thyme, salt and pepper. The flatbread pizzas (I used Naan for the bread since they hold up so nicely on the grill) were quickly warmed up on the grill then taken off and topped with a shmear of fresh pesto, the sauteed mushrooms and of course cheese. Throw them back on the grill (or into the oven) until the cheese melts and gets bubbly and you have yourself an impressive little appetizer with minimum effort.</p>

<p style="text-align: left;">Here&#8217;s the scoop for the <a href="http://everydaychefchallenge.com/challenge-details/">Everyday Chef Challenge</a>:</p>
<p style="text-align: left;">I am one of <a href="http://everydaychefchallenge.com/meet-the-food-bloggers/">5 Featured Bloggers</a> chosen to part of a cooking challenge where a secret ingredient plus a Pacific Natural Foods staple item are revealed.  We have one week to create, cook and then share a recipe for voting.  There are two Challenges in total, and winner of each Challenge moves on the the Final Round where voting starts over and the competition is really on for the Grand Prize &#8211; all expense paid culinary bootcamp at the Culinary Institute of America in Napa Valley.</p>
<p style="text-align: left;">Now&#8230;I don&#8217;t have to be the only one having this much fun!  There is a totally separate Challenge going on here too&#8230;that includes YOU.  <a href="http://everydaychef.popartdev.com/registration/">YOU can enter a recipe using those same &#8220;secret ingredients&#8221; and compete for the same prize</a>!  Don&#8217;t you want to go to Cooking School with me???  I&#8217;ve already recruited a blogger friend, <a href="http://makingitmerry.blogspot.com/">Merry</a>, to enter&#8230;I put the idea in her head and 24 hours later <a href="http://everydaychefchallenge.com/everyday-recipes/indian-portabello-stew/">her recipe is entered</a>!</p>
<p style="text-align: left;">Okay&#8230;so do you want to know about my recipe?  Challenge 1&#8217;s secret ingredients were Mushrooms and any Pacific Natural Foods broth.  After thinking about it for a couple of days, I was pretty much stuck on the idea of Mushroom Marsala.  But how to serve it was my challenge&#8230;</p>

<p style="text-align: left;">The Mushroom Marsala is definitely where the flavor of this dish is&#8230;but the Garlic Herb Quinoa Pilaf is no joke either.  I wanted to keep the dish meatless, so I bulked up the veggies by adding fresh spinach leaves and sundried tomatoes to the baby portobellas.  I seasoned and floured the mushrooms before sauteeing them to add a little more texture too.  The marsala wine and Pacific Mushroom broth combo made an awesome sauce for it.</p>

<p style="text-align: left;">As for the quinoa&#8230;I wanted to kick it up a bit and cook it in a way I hadn&#8217;t before.  I looked up the term &#8220;pilaf&#8221; on Wikipedia (culinary research!) and it says:</p>

<p style="text-align: left;">Pilaf &#8230; is a dish in which a grain, such as rice or cracked wheat is browned in oil, and then cooked in a seasoned broth.</p>
</blockquote>
<p style="text-align: left;">So that&#8217;s what I did.  I started the quinoa with a quick saute of minced garlic and onion in a little olive oil, then added the quinoa and toasted it till fragrant and slightly brown.  Instead of water I used vegetable broth and then added toasted pine nuts at the end.  Wow is all I have to say.  If you&#8217;ve tried quinoa and haven&#8217;t been impressed, give it another try cooked this way.</p>

<li class="ingredient" itemprop="ingredients">2 teaspoons olive oil</li>
<li class="ingredient" itemprop="ingredients">2 shallots, minced</li>
<li class="ingredient" itemprop="ingredients">3 garlic cloves, minced</li>
<li class="ingredient" itemprop="ingredients">1/8 teaspoon salt</li>
<li class="ingredient" itemprop="ingredients">1/8 teaspoon fresh ground pepper</li>
<li class="ingredient" itemprop="ingredients">1/2 cup toasted pine nuts</li>
</ul>
<p>For Mushroom Marsala:</p>
<ul>
<li class="ingredient" itemprop="ingredients">1 and 1/2 8oz packages of sliced portobella mushrooms (total 12 oz)</li>
<li class="ingredient" itemprop="ingredients">1/2 cup flour</li>
<li class="ingredient" itemprop="ingredients">1/4 teaspoon salt</li>
<li class="ingredient" itemprop="ingredients">1/4 teaspoon fresh ground pepper</li>
<li class="ingredient" itemprop="ingredients">1/2 teaspoon garlic powder</li>
<li class="ingredient" itemprop="ingredients">1/2 teaspoon dried oregano</li>
<li class="ingredient" itemprop="ingredients">1/2 teaspoon dried thyme</li>
<li class="ingredient" itemprop="ingredients">1-2 shallots, thinly sliced</li>
<li class="ingredient" itemprop="ingredients">2 garlic cloves, minced</li>
<li class="ingredient" itemprop="ingredients">2 tablespoons olive oil</li>
<li class="ingredient" itemprop="ingredients">1 tablespoon butter</li>
<li class="ingredient" itemprop="ingredients">1 cup marsala wine</li>
<li class="ingredient" itemprop="ingredients">1/2 cup – 3/4 cup Pacific Mushroom Broth</li>
<li class="ingredient" itemprop="ingredients">1 3oz package of sundried tomato halves (not in oil)</li>
<li class="ingredient" itemprop="ingredients">2 cups fresh spinach leaves</li>
</ul>
<p>Additional Toppings</p>
<ul>
<li class="ingredient" itemprop="ingredients">freshly grated Parmesan cheese, for serving</li>
<li class="ingredient" itemprop="ingredients">Toasted pinenuts, optional</li>
</ul>

<h3 style="clear:left" id="directions">Directions:</h3>
<div class="instructions" itemprop="recipeInstructions"><ol>
<li>Pre-rinse quinoa in a fine mesh strainer until water runs clear. Let water drain and let quinoa dry for a few minutes prior to cooking. In a medium saucepan, heat oil over medium heat. Add minced shallots and garlic and saute for 1 minute. Add quinoa to pan and stir frequently for about 5 minutes. This will toast and enhance the flavor of the quinoa. Once quinoa is fragrant and a light golden brown, add vegetable broth and bring to a boil. Reduce down to slow simmer and continue to cook for 15-20 minutes, stirring occasionally. Add toasted pine nuts, salt and pepper to quinoa and gently stir to combine. Cover and set aside.</li>
<li>In a large shallow dish, combine flour, salt, pepper, garlic, oregano and thyme. Gently toss sliced mushrooms in flour mixture. Heat 2 tablespoons oil in a large nonstick skillet over medium heat. Add sliced shallots and minced garlic and saute for 1-2 minutes. Gently dust excess flour off sliced mushrooms and add to pan. While mushrooms are cooking, add 1 tablespoon butter to pan and continue to saute. Cook mushrooms until browned, about 5 minutes. Add 1 cup of Marsala wine to pan and bring to a quick boil.  Add mushroom broth along with sundried tomatoes and spinach leaves and bring to a quick simmer. Gently stir together as spinach leaves and sauce cook down.  Season lightly with a pinch of salt and pepper. Serve over quinoa pilaf and with freshly grated Parmesan cheese and additional toasted pine nuts (optional).</li>

<p style="text-align: center;">I had one of the best lunches I have had in a while at a little shop in Lake Mary called <a href="http://www.thatdelifl.com/">That Deli!</a> I really wasn&#8217;t sure what to expect other than a sandwich when I got in there&#8230;but once I started looking over their menu I found myself having a lot of trouble narrowing down what I wanted to eat.  This place has so many awesome sounding sandwiches and salads&#8230;I ended up ordering the Looney Shrooms on a spinach wrap.  I can&#8217;t tell you how good it was.  That was Friday.</p>

<p style="text-align: center;">On to Saturday&#8230;all I wanted for lunch was another Looney Shrooms wrap.  Lucky for me, I had most of what I needed to try to recreate it at home.  It was missing the yummy garlic mayonnaise, yes, but that was okay with me&#8230;I can usually do without mayonnaise.  What I loved about this wrap was all the roasted veggies and their flavor.  It was filling, yet light since all it is is veggies!  And that&#8217;s what I wanted since it was a Gator Game Day and I was going to be indulging in beer and burgers later on.  I used a tortilla wrap from <a href="http://latortillafactory.elsstore.com/view/product/?id=17479&amp;cid=589">La Tortilla Factory</a>&#8230;these guys are so good for you!  They are made with whole wheat and if you are trying to get some extra fiber in your diet, these babies have 7 grams per wrap!</p>

<li class="ingredient" itemprop="ingredients">salt and pepper</li>
<li class="ingredient" itemprop="ingredients">1-2 TB olive oil</li>
<li class="ingredient" itemprop="ingredients">cheddar cheese</li>
<li class="ingredient" itemprop="ingredients">whole wheat wraps</li>
</ul>

<h3 style="clear:left" id="directions">Directions:</h3>
<div class="instructions" itemprop="recipeInstructions"><ol>
<li style="text-align: left;">Preheat oven to 400 degrees. In a large bowl, toss mushroom, peppers, onions and garlic with olive oil, salt and pepper. Spread on baking sheet and place in oven. Bake for approximately 20 minutes or until vegetables are softening and starting to brown.</li>
<li style="text-align: left;">Place 2 thin slices of cheddar cheese in center of wrap. Spoon roasted vegetables in center of wrap and on the cheese. Tuck both sides in and roll wrap like a big cigar. Cut in the center. Serve with fruit for a light and healthy lunch or dinner!</li>

<p style="text-align: left;">Spent time with family at the beach, enjoyed some unbelievably fresh seafood from <a href="http://www.joepattis.com/">Joe Patti&#8217;s</a> (caught right in the Gulf) and was able to relax a bit and come home feeling refreshed&#8230;I love that feeling. The Panhandle is a part of Florida we don&#8217;t get to often because of its distance, but it is such a gem with it&#8217;s emerald colored waters and powder soft beaches.</p>

<p style="text-align: left;">Before we left for our trip, I put together these awesome veggie sandwiches from the grill. I will admit I was the only one enjoying them while the rest of my family ate their hot dogs. This was &#8220;mommy food&#8221; and that is just fine with mommy&#8230;I made enough for lunch for a few days and was extremely happy with that.</p>
<p style="text-align: left;">I have nothing agains burgers and hot dogs, but grilled vegetables are my love language. Portabella mushrooms are such a great vegetarian option for the grill because of how hearty they are, you can easily put together some of these marinated mushrooms and vegetables anytime you find yourself in need of a meatless meal.</p>

<li>Place mushroom caps and sliced veggies in a large shallow baking dish. Sprinkle with balsamic vinegar, olive oil, salt and pepper and let marinate for 15 minutes. Place veggies over medium heat on grill and cook approximately 5 minutes on each side or until you veggies start to soften and you see grill marks. Place sliced buns on grill rack and watch carefully until lightly toasted.</li>
<li>Layer mushroom caps on bottom of your buns, top with slices of zucchini, squash and roasted red peppers. Top with 3-4 basil leaves. Spread brie on top half of warm bun and serve.</li>

										<content:encoded><![CDATA[<div style="text-align: center;"><span style="font-size: 130%;"><span style="font-weight: bold;">A while back I made </span><a style="font-weight: bold;" href="http://aggieskitchen.blogspot.com/2008/07/beef-and-spinach-stuffed-mushrooms-with.html">stuffed mushrooms</a><span style="font-weight: bold;"> for the first time. </span></span><br />
I thought they turned out great. I&#8217;m a little weird about mushrooms&#8230;I like them, but they are one of those foods I have to be in the mood for. There have been plenty of times, I hate to admit, where I have had to throw out a container of mushrooms because I hadn&#8217;t been in the mood to cook them. I tend to include them in a lot of my recipes that include a stuffing, like these <a href="http://aggieskitchen.blogspot.com/2008/10/stuffed-peppers.html">stuffed peppers</a> &#8230; I find that when they are chopped up small and mixed with rice or beef they act as a nice filler, adding some texture but helping in keeping the calorie count low.</div>

<p>Yesterday I found myself in the same situation that I usually am in. A small bunch of whole mushrooms on the verge of getting thrown out. My good friend (who is expecting a little boy next month!) mentioned she was craving stuffed mushrooms the other night and asked me if I had a recipe&#8230;I sent a link to <a href="http://aggieskitchen.blogspot.com/2008/07/beef-and-spinach-stuffed-mushrooms-with.html">these</a>&#8230;and then got a craving of my own. I decided this time to make them vegetarian, and instead of beef used leftover toasted pine nuts from my grilled eggplant salad.</p>

<li class="ingredient" itemprop="ingredients">1/4 cup toasted pine nuts, roughly chopped</li>
<li class="ingredient" itemprop="ingredients">1/2 small onion, chopped</li>
<li class="ingredient" itemprop="ingredients">1 garlic clove, minced</li>
<li class="ingredient" itemprop="ingredients">leftover mushroom stems, chopped</li>
<li class="ingredient" itemprop="ingredients">about 2 cups fresh spinach, chopped</li>
<li class="ingredient" itemprop="ingredients">1/4 cup whole wheat panko</li>
<li class="ingredient" itemprop="ingredients">olive oil</li>
<li class="ingredient" itemprop="ingredients">salt and pepper</li>
<li class="ingredient" itemprop="ingredients">grated parmesan cheese</li>

<li>Preheat oven to 400 degrees.</li>
<li>Place mushroom caps in lightly greased baking dish. Sprinkle salt, pepper and drizzle of olive oil over mushrooms.</li>
<li>In a hot skillet, saute garlic, onion, chopped mushroom stems and chopped spinach in olive oil for about 8 minutes, till all cooked through. Season with salt and pepper. Add toasted pine nuts and combine. Add panko, combine and let cool.</li>
<li>Using a tablespoon, spoon stuffing into each cap, carefully pressing down to fill completely. Top with fresh ground pepper.</li>
<li>Place in oven and cook for approximately 10 minutes, at this time sprinkle mushrooms with grated parmesan cheese. Place back in oven and cook for another 10 minutes or until golden brown. Spoon wine sauce (optional) over each mushroom and serve.</li>

<li>Saute garlic in olive oil till golden. Add chicken broth and white wine. Let simmer for 4-5 minutes. Once reduced a bit, add butter. Simmer for another few minutes. Sauce will be thin.</li>

<div>This meal came together very nicely.  I love stuffed mushrooms, but its not something I normally make.  It always seems so time consuming &#8211; stuffing multiple little mushroom caps &#8211; but really, it was not bad at all.  Once you get the stuffing made, it is a piece of cake.  And although I made this as our meal tonight, I will totally make this again as an appetizer for a party.  It was that easy and delicious.</div>

<div>I decided that I needed some kind of sauce to go with it, so I got fancy and did a white wine reduction using chicken broth, white wine and sauteed garlic.  Mmmmmm&#8230;.</div>

<div>1/3 cup whole wheat panko</div>
<div>olive oil</div>
