First things first, I miss being here on the blog! My last post was weeks ago and I can’t even believe how fast this month has gone. Life has been a little hectic since I started my classes last month – I have humbly admitted to those in my life that have had to witness my craziness lately (my poor husband and kids), taking two science classes with labs (Anatomy & Physiology 2 and Chemistry I) in one semester was not the best idea. (For anyone who doesn’t know, I went back to school earlier this year with the end goal of becoming a registered dietitian). I am drowning a bit and struggling to keep up with the school work, not to mention the learning curve (which I hugely underestimated) that comes with a class like chemistry – think scientific calculators, basic algebra and math equations and safely working in a lab with test tubes, beakers and “stuff” (aka chemicals). Oh my. The math by itself is rocking my world a bit, my brain is definitely rusty in that department!!

Deep breaths.

All will be okay. If there is one thing I have learned about being a student of my age ( 😉 ) is that my expectations are high. Like my good friend Kristen said to me recently, it’s really okay if I don’t get an A. Just get through!

Okay, let’s talk about this dinner. It was a hit! You all know how much I love cooking with Bush’s Beans, but I will admit I don’t get very creative with Bush’s Baked Beans my favorite way to enjoy them is as a side for barbecue. I wanted to make something different for us for dinner, and using baked beans was an easy way to pull together something quick in a skillet with it’s own built in sauce. Of course, I had to add some green so kale was a no-brainer. To keep it on the lighter side I used a smoked chicken-apple sausage (I pick up Aidells from Costco regularly).

This dish was a winner! My husband said it reminded him of pork and beans – I like to think it is a little fancier than that but all that matters is everyone loved it.

I served it over brown rice. Making the rice in my rice cooker ahead of time to reheat at dinner time kept the cook time for this Baked Bean, Sausage and Kale Skillet right around 35 minutes.

Baked Bean, Sausage and Kale Skillet

Ingredients

  • 1 teaspoon oil
  • 1/2 large onion, chopped
  • 5 smoked chicken-apple sausage links, sliced in 1/2 ” pieces
  • 1/2 teaspoon smoked paprika
  • 6 cups chopped kale
  • 1 28 oz can Bush’s Baked Beans (Brown Sugar Hickory)

Instructions

  1. In a large skillet, heat oil over medium heat. Add onion and saute for 3-4 minutes.
  2. Add sliced sausage and 1/2 teaspoon smoked paprika to skillet and brown for 8-10 minutes.
  3. Add kale to skillet and cover. Let cook, stirring occasionally, for about 10-12 minutes until wilted.
  4. Add Bush’s Baked Beans to skillet and simmer over for 5-10 minutes until completely warmed through.
  5. Serve over brown rice.
