<div>One of the things I&#8217;m trying to do this year is to go back into my archive of recipes here on the blog and update photos for them. I love looking back at old photos and reading my words from years ago, seeing how things have changed in almost 10 years. 10 years!!</div>

<div>When I first posted this recipe for Pesto Chicken Quesadillas I was a young stay-at-home mom to a 3 year old and 1 year old. Those two are now 13 and 10 years old and we have a little 4 year old in the mix! My, has time gone by. I originally posted this recipe during the summer and in those days I am sure I had plenty of fresh basil growing on my patio and I was picking up tons of bell peppers from the produce store weekly. Making fresh roasted red peppers is really easy to do and something I love to make as often as I can. Although homemade roasted red peppers are fairly easy to make, I don&#8217;t really have as much time these days to make them so I rely on some convenience items like jarred roasted red peppers AND jarred pesto (in case you missed it I just posted this roundup for <a href="https://aggieskitchen.com/5-healthy-recipes-with-pesto/" target="_blank" rel="noopener">healthy recipes using pesto</a>). I&#8217;m pretty picky about both but I found these peppers recently at Trader Joe&#8217;s and love them.</div>

<p>I don&#8217;t know about you, but I would be totally okay with sitting down to a plate of these Mediterranean Nachos for an unofficial meal any night of the week. They would particularly be welcomed on a Friday or Saturday night, when I tend to lose my steam for putting together a real meal.</p>
<p>I like snacky food, I always have and I always will. There is not an appetizer plate I can resist and these &#8220;nachos&#8221; are officially on that list. The best part is how easy they are to put together (would I ever steer you to something complicated?) and how quickly they disappear once they are served.</p>

<p>One thing I am really trying to do lately is to have a container of &#8220;something&#8221; for me to grab for a quick lunch. Last week I was really craving a grain salad so I grabbed some <a href="http://amzn.to/1X1OK1H" target="_blank" rel="nofollow noopener">wheat berries</a> out of the pantry and cooked them up, with no real idea of what I was going to do with them. I was craving a salad like <a href="https://aggieskitchen.com/2015/10/22/wheat-berry-and-arugula-salad-with-grapes-and-nuts/" target="_blank" rel="noopener">this one</a>, but I didn&#8217;t really have the right fruit and such. So instead I turned these wheat berries into an Italian Wheat Berry Salad by adding roasted red peppers, garbanzo beans, fresh basil, olive oil and a squeeze of lemon. Super simple, fresh and delicious!</p>

<p style="text-align: left;">Well, it&#8217;s my new favorite salad now. I made it for lunch over the weekend and could not get enough of it. I bought all the ingredients for it again yesterday and plan to make it for dinner this week! It&#8217;s full of good stuff like spinach, sundried tomatoes and couscous. It would be awesome with some simply grilled chicken or shrimp for a complete meal that you can&#8217;t help but feel good about.</p>

<p style="text-align: left;">I had to make some changes to the original recipe based on what I had on hand, such as using whole wheat couscous and roasted red peppers. This salad is definitely one to try, you will not be disappointed! It makes awesome leftovers too!!</p>
