<p>I am a sucker for any kind of dip and chip situation. It&#8217;s one of my major food weaknesses, if you want to classify it as a weakness. Over the years, I&#8217;ve learned that I have no willpower when it comes to store bought pita chips and I could easily polish off a bag with some hummus in a short amount of time. Not one of the worst things in the world, but I don&#8217;t always feel so great afterwards obviously.</p>
<p>Making your own homemade baked pita chips is too easy not to do. Nothing beats how fresh they taste, and when I use <a href="https://www.josephsbakery.com/shop/flax-oat-bran-whole-wheat-pita-bread.html" target="_blank" rel="nofollow noopener noreferrer">my favorite pita rounds</a> I feel even better about them too. If you are tracking your food for weight loss or health reasons, making your own is such a great option to really enjoy them as a snack.</p>

<p>What&#8217;s great about having a food blog is you basically have a food diary that documents what you&#8217;ve eaten over the years and if you&#8217;re lucky, a little story behind it. For example, I stumbled across this recipe for Greek Salad &amp; Hummus Pita Pizza in my <a href="https://aggieskitchen.com/recipe-index/">blog archives</a> recently and was instantly brought back to a season that I remember eating these very very often. These pita &#8220;pizzas&#8221; are so incredibly light and delicious I really wanted to share them again with you, in case you are looking for new ideas for lunch or light dinners. &#8216;Tis the season for light dinners right?</p>
<p>Since I&#8217;ve been in a bit of a lunchtime rut these last few months, I know what I&#8217;ll be having this week. 🙂</p>

<p>My parents have owned a pizzeria since I was 4 years old. I have so many memories of sitting in a booth in our pizza shop in New York coloring on white paper plates and playing with pizza dough (our version of play-dough) for hours. My kids have no idea how good they have it, ha ha! I don&#8217;t ever remember complaining about being there (though my mom might have a different memory) and looking back I would never change a thing.</p>
<p>The best part of your parents owning a pizzeria or restaurant? Obviously, the access to the food. That&#8217;s a no brainer. I can&#8217;t tell you how many slices of (good, NY style) pizza I&#8217;ve had as my after school snack.</p>
<p>Peppers and eggs has always been an item on my family&#8217;s restauarant menus for as long as I remember (we have owned 3 over a span of over 30 years). I think it&#8217;s definitely a NY Italian thing because I recently saw it on the menu of our local pizza shop and it brought a smile to my face. My husband actually ordered it and it was so so good. Peppers and eggs is traditionally served on a long toasted Italian roll, loaded with mozzarella cheese. The combination of soft, toasted Italian bread and the peppers, <a href="https://aggieskitchen.com/category/eggs/" target="_blank">eggs</a> and cheese is just perfection.</p>
