This is an old recipe of mine that was a stand by in our dinner rotation for the longest time (originally posted in February of 2009!). I love looking back and seeing what we used to eat as a family on a regular basis. This Lemon Pepper Chicken with Artichokes, Mushrooms and Asparagus has made a reappearance lately and you may see more variations of it (using different vegetables) again.

In case you haven’t noticed, I’ve been on a huge skillet and one-pan meal kick (especially since recently buying this nonstick everyday pan <– affiliate link). It’s honestly revived my whole dinner making motivation, if I can cook it all up in one skillet then I’m all over it.

Happy New Year!! I can’t tell you how excited I am about a new year starting, it’s really one of my favorite times of the year (I feel the same about back-to-school season). I’m all about fresh starts, reflection and growth. This upcoming year is going to be full of changes for me personally, one major change is that I’m going back to school! Yep, I turn 40 and start my first class toward a degree in nutrition and dietetics in just a little over a week. I am over the top excited and terrified at the same time. I’ve spent a good part of 2015 talking to a life coach and researching schools and programs….I’ve had a tug to pursue this career for years and now is the time to finally move forward. I’ve learned that sometimes you have to be patient with yourself and just trust in timing. (Thanks Merrill.)

So, with the New Year I think it’s obvious a lot of us are in the mood for lighter food and getting back on track. I try really hard to balance things out over the holidays (I got to the gym 5 days this past week and THANK GOODNESS I did…), but let’s face it, it’s hard when there are random cookies, pizza nights or snacks everywhere you turn. I’m craving routine and I know it’s coming and with that better food choices will be a heck of a lot easier to make.

Back in May I completed my second sprint triathlon, the Danskin, with an amazing team of women from my YMCA. I met some great ladies throughout the training process…a lot of us really bonded and keep in touch with each other still with the help of Facebook (I {heart} Facebook!). One of my “Tri Chicks” Kris recently shared with me a few recipes, one of them including this salad which she said was her “new favorite salad”.

Well, it’s my new favorite salad now. I made it for lunch over the weekend and could not get enough of it. I bought all the ingredients for it again yesterday and plan to make it for dinner this week! It’s full of good stuff like spinach, sundried tomatoes and couscous. It would be awesome with some simply grilled chicken or shrimp for a complete meal that you can’t help but feel good about.

I had to make some changes to the original recipe based on what I had on hand, such as using whole wheat couscous and roasted red peppers. This salad is definitely one to try, you will not be disappointed! It makes awesome leftovers too!!
