Guys, summer is in full swing and I am currently and happily OBSESSED with watermelon. I am eating it almost every day and just straight up how I like it. Would you agree that there’s nothing more refreshing than cold chunks of watermelon on a hot summer day?

Watermelon and all it’s goodness are making me happy right now.

This Roast Beef Spinach and Arugula Salad with Watermelon is simple, as it should be, with a combo of fresh baby spinach and arugula, crumbled gorgonzola and WATERMELON. Have you ever tried watermelon in a salad? I hadn’t until last summer when I tried a watermelon and feta salad (similar to this one). I added some roast beef I had sliced from the deli for protein and it was the perfect lunchtime salad – I think I ate it for a week straight.

A couple of things I picked up that made this Spinach Arugula Salad with Watermelon extra special were this Himalayan Pink Salt from Costco (I grabbed a different brand that was at my Costco this past time – shown in picture) and an amazing dark cherry infused balsamic vinegar I picked up from my local specialty olive oil & vinegar shop called The Olive Pantry. I am obsessed with their vinegars! They are so good that I don’t need to add anything to my salads but a couple splashes of vinegars which makes them perfectly low calorie. They are a little pricey but the quality is worth it and they last because a little truly goes a long way. (If you don’t have a Costco or specialty vinegar store near you can easily find Himalayan Pink Salt and infused balsamic vinegar on Amazon. Home Goods or Trader Joe’s are also great places to find some specialty ingredients like this! Of course, just use coarse sea or kosher salt and your favorite balsamic vinegar or vinaigrette if that’s what you have on hand.)

Roast Beef Spinach and Arugula Salad with Watermelon

Yield: 1 salad

Ingredients:

  • handful of arugula
  • handful of baby spinach
  • 2 slices of deli roast beef, rolled then sliced
  • 1 oz gorgonzola cheese
  • 1 cup watermelon chunks
  • coarse salt and freshly ground pepper
  • your favorite gourmet balsamic vinegar or Honey Balsamic Vinaigrette

Directions:

  1. Place all of your salad ingredients in a large bowl or on a plate. Season with salt and pepper. Drizzle with vinegar or dressing of choice. Eat and enjoy!
