This is SO like something I would make. And, you are right – simple recipes are always the most in demand, for sure. I love the method of doing tostadas in the oven (no oil) and your toppings look perfect. I’m totally hungry now!

this is my kind of weeknight meal! I think getting the kids involved with meals helps them to try things, too… and I agree with not making special meals for everyone! I told my family that I’m not a short-order cook, so you have to try whatever is on the table at dinner time. If it’s not your thing, you have to figure out what you are going to have on your own (it does help that my boys are a bit older though). 😉

These look great! And I have a carton of chopped spinach in my freezer right now. I’m already nervous about getting dinner on the table now that I’m going back to work…even though it’s only part time!

You know what, you are so right! In many aspects! As my kids get older, dinners become harder. But like you, I will compromise on small things but not a big adjustment. We are all having what I have made. Because of the blogging job I often have 3 different meals at a time. So that works. And amen to simplicity. The most simple recipes – post them! We are all the same! Sometimes I til honk it’s not even a recipe, but post it. Even simple recipes need a technique!

In reply to Sheila. honestly I didn't for the longest time...but one lazy evening I realized how easy they were to make, especially a bunch all at once! And my kids like them better because they seem to be less messy than tacos :)
