Shrimp and Hummus Lettuce Wraps are great for quick lunches or dinners – only 263 calories per serving and 21 grams of protein! Great low carb meal if you are trying to lose weight.


Ingredients

  • 3 oz cooked shrimp (about 9 shrimp)
  • 2 tablespoons spicy or regular hummus
  • 8 slices of cucumber
  • 1/3 avocado sliced
  • 2 romaine leaves
  • coarse salt and fresh ground pepper, to taste
  • sriracha sauce, to taste

Instructions

  1. Spread hummus evenly on 2 romaine lettuce leaves. Layer cucumber slices and shrimp, season with salt and pepper, then drizzle with sriracha, to taste. Top with avocado slices.
