Ingredients
- 3 oz cooked shrimp (about 9 shrimp)
- 2 tablespoons spicy or regular hummus
- 8 slices of cucumber
- 1/3 avocado sliced
- 2 romaine leaves
- coarse salt and fresh ground pepper, to taste
- sriracha sauce, to taste
Instructions
- Spread hummus evenly on 2 romaine lettuce leaves. Layer cucumber slices and shrimp, season with salt and pepper, then drizzle with sriracha, to taste. Top with avocado slices.
