Hi Russell! I totally get your fear. I have been there, and am still a little intimidated :)
I had it in a chinese dish a long time ago and you nailed it, it was like a sponge, a mushy sponge, blech. This was not like that at all, it was more crisp and firm. What turned my tofu experience around is when I had it fried tofu my vegan friend made for me (http://happylittlevegans.com/wordpress/2010/07/09/veggie-sushi-and-fried-tofu/)

As for brand, my options are pretty limited, I&#039;m pretty sure it&#039;s Nasoya that I picked up. And I think I will always go for the extra firm option. Let me know if you try it out :)]]></description>
