Summer food truly does make me happy. Living in Florida, I do feel lucky that our summer food season is already among us with beautiful and colorful fruits and veggies already popping up in the grocery stores and produce markets. I am always more inspired by warm weather produce, mostly because when it comes to cooking, I admittedly tend to have a lazier approach and enjoy fresh, simplistic recipes that are fruit and veggie heavy – think salads, smoothies & anything that can be cooked on the grill.

As soon as I saw their recipe for Peach Pie Smoothie I couldn’t get it out of my mind. I love smoothies but sometimes get in a smoothie rut. One of my favorite fruits to include in smoothies is peaches and adding oats to the mix is something I haven’t done in a long time. With summer break around the corner and having my kids home from school for a couple of months I know I have to up my breakfast and snack game a bit so this Peach Pie Smoothie fits the bill. My daughter, toddler and I enjoyed one of these smoothise as a mid morning snack over the weekend and we all loved it. The addition of raw oats to the smoothie gives it a nutritional boost, not to mention a nutty flavor that I love.

They are totally my kind of recipes and I’m anxious to try a few out over the next month like Cauliflower and Kale Pasta Salad and Lemon Roasted Salmon Packets. How good do those sound?

Peach Pie Smoothie

Yield: makes 2 smoothies

Cook Time:10 minutes

Ingredients:

  • 3⁄4 cup plain almond milk
  • 2 large peaches, chilled, sliced
  • 1⁄3 cup rolled oats
  • 1⁄2 cup plain lowfat Greek yogurt
  • 1 Tbsp. honey
  • 1⁄4 tsp. vanilla extract
  • 1⁄2 tsp. cinnamon
  • 1⁄4 tsp. nutmeg
  • 1⁄2 cup crushed ice

Directions:

  1. Combine milk, peaches, oats, yogurt, honey, vanilla, cinnamon, nutmeg and ice in blender. Blend until smooth.
