I loved it & more importantly, my meat eating family enjoyed it. This is a nice meatless dish that will go in cooking schedule.

I wanted something quick and easy for dinner and stumbled upon your recipe (what the heck took me so long!!)

This was super quick and easy and baking them is genius. I never would have thought of that. I only had mango salsa in the fridge (I use it all the time with salmon), and to my surprise, it was quite refreshing and tasty with the black bean and guacamole. I’ll be making this again, but the best part is the leftovers I have for lunch tomorrow!!

I would definitely prepare the filling in advance, then just put together the quesadillas when you are ready to bake. Let me know how they turn out for you!

I haven’t calculated the calories, but I like to use MyFitnessPal.com ‘s nutritional calculator when I do. Depending on the type of tortilla you use would be the biggest factor for calories, and how much cheese. The rest is fairly low calorie!
