Yay!! So glad you loved it! It's so fun to try different combinations. Try grilling up some green beans and tossing in pesto. Grilled carrots are great too!

Made this for dinner tonight, and it is a hit!! I had made grilled veggies before, but didn't have a grill skillet, so went to get one this weekend. I loved the addition of the pine nuts to this recipe also! We are already talking about other veggie combinations we can grill. So, thanks so much for sharing!

Going to try this soonest! Looks yummy! While my mom was raised in the South and I have roots there, I am now in Arizona and cannot wait for Vidalia season every year. Once it is here, I scoop up as many Vidalias as I can buy and store them hanging in my pantry in old hosiery separated by a knot. This helps to extend the 'season!'

In reply to <a href="https://aggieskitchen.com/grilled-broccoli-and-vidalia-onion-with-pine-nuts-and-parmesan/#comment-125042">Emma (what to cook for dinner tonight?)</a>.

My friend turned me on to grilled carrots and they were amazing. And grilled green beans tossed in pesto. Grilled cauliflower is delicious too (I have a recipe for grilled cauliflower quinoa salad). So many ideas! I hope you try - thanks for stopping by! :)
