Ingredients
- 8 – 10 Persian or cocktail cucumbers, sliced
- 1 sweet Vidalia onion, sliced thin
- 2 avocados, diced
- juice from 1 lemon
- coarse salt and fresh ground pepper
Instructions
- Add cucumber, onion and avocado to a bowl. Squeeze lemon over salad and sprinkle with salt and pepper. Gently toss to combine. Serve immediately.

Serving suggestions:Β Add feta, canned tuna, and/or garbanzo beans (for more flavor and protein) or serve with grilled shrimp, chicken, or steak.
