Plank grilled salmonĀ is an easy salmon recipe, perfect for summer. Grilling salmon on a cedar plank is a healthy way to prepare salmon, and the cedar provides fantastic flavor to the fish. The fresh, homemade, tropical fruit salsa on top of the salmon makes this grilled fish dinner as delicious as it is healthy!
Over the weekend we had our nephew Ryan over for some dinner. He’s been telling me about this awesome fruit salsa with plank grilled salmon he made recently, and we’ve been planning to try it out one night. What I love about Ryan is that he appreciates good food…he’s a young guy in his 20’s, and I love that he’s learning to cook and experiment with food.
On one of my fun shopping trips to Costco, I picked up a package of cedar wood grilling planks. I have heard of plank grilling from restaurant menus, but never actually used them or even tasted food cooked on them. I was excited to try them out with some wild salmon I brought home from my recent trip to Pensacola. The salmon was simply seasoned with salt, pepper and a drizzle of olive oil and then put on the planks to grill. A few minutes after the planks hit the grill, we started to smell a deliciously sweet aroma. Wow, I was amazed at how good it smelled!
In order to cook with cedar planks, you have to soak them for at least 20 minutes first. It’s probably a good idea to drizzle a little oil on them or the fish too, so that there is no sticking going on. Also, make sure you put them on indirect heat…I made the mistake of placing them over a low-medium flame and had a few flare ups. Keep a spray bottle full of water handy just in case that happens.
The result…simply delicious…
Combine in bowl. Serve over grilled salmon or chicken.
