The recopies look delicious. I'd like to add a couple of tips that I've learned from experience. First, it's really important to let your bananas ripen until they are covered with *small* brown spots. That ensures that their sugar level is optimal. Next, when you freeze them, don't place them in a plastic bag. Doing so will cause the moisture that evaporates from them to crystallize on the bananas. This will melt into the chocolate when you dip them and quickly coagulate the chocolate. We makes tons of frozen bananas at Totally Bananas, Inc. If you wish, take a look at our web site: http://www.totally-bananas.net.

OMG. I tried these at our last Gourmet Group gathering and they were awesome. I'm not a huge bananas-in-dessert fan but this recipe was amazing. I had chocolate dipped strawberries yesterday -- w/ a buffet of other dippers including crushed Graham crackers, chopped pecans, and coconut -- and I was thinking about this banana recipe. Yum.
