Barbecue Ranch Chicken Salad Sliders

So apparently Super Bowl is just over a week away. And according to my FB feed there may be some drama regarding one of the teams who’s playing in the game? Can someone fill me in? I guess I could always ask 1 of the two devoted sports watchers in the family, my husband and my oldest son. I enjoy sports, I love the Gators and the Magic and will cheer loud and proud for both my teams, but I just can’t keep up with all of it 24/7 like the sport fanatics out there (and in my family).

And that’s totally ok!

I’ll be ready for Super Bowl Sunday, because for me, any big sporting event like the Super Bowl means food, drinks and more food. Right? In case you are wondering, I’m usually in charge of the food and drink category in our house.

How do you typically spend Super Bowl? In the past we’ve had a few people over here and there, but with our kids having to go to school bright and early the next morning, for us it is a bit more low key now. We still watch, and we eat, but the party winds down close to 9pm for the younger set in our house. I may or may not make it much longer after that.

When I think food for game day, I think easy, portable, and of course delicious. I love munchie food and can snack all night, but I also like to serve something a little more substantial too, my husband makes sure of that. These Barbecue Ranch Chicken Salad Sliders are a perfect addition to any game day menu because they can easily be made ahead of time and aren’t overly filling but work great with whatever else you may be serving. Honestly, these aren’t just for game day but are great for any get together or even and easy make-ahead lunch or dinner.

I know mayo is traditionally used in chicken salad but I decided to change things up and use Naturally Fresh Lite Ranch mixed with barbecue sauce. I don’t know about you but ranch and barbecue scream togetherness so it was really the perfect match. To kick it up the flavor a notch I added in a couple of heavy dashes of chipotle hot sauce, but I’ll leave that up to you. If you don’t mind a little heat, I highly recommend it.

Serve these sliders with celery and carrot sticks paired up with one of Naturally Fresh’s other many dressings. Or make up a batch of chicken salad on it’s own and change up your lunches during the week!

Barbecue Ranch Chicken Salad Sliders

A delicious and lighter option for game day munchies!


Ingredients

  • 2 cups cooked shredded chicken (about 11.25 lbs chicken or 2 large chicken breasts)
  • 3/4 cup Naturally Fresh Lite Ranch Dressing
  • 1/4 cup plus 2 teaspoons barbecue sauce
  • 2 green onions, chopped
  • 1 celery stalk, finely chopped
  • 4 oz mild cheddar cheese, shredded
  • a few heavy dashes chipotle hot sauce (optional, but highly recommended!)
  • salt and pepper to taste

Instructions

  1. In a small bowl, combine Naturally Fresh Lite Ranch Dressing with your favorite barbecue sauce. Add sauce to shredded chicken into a large mixing bowl along with green onions, celery, cheddar cheese and chipotle hot sauce.
  2. Mix until sauce and ingredients are completely combined. Refrigerate for one hour. Taste for salt and pepper and adjust if necessary.
  3. Serve on whole wheat potato slider rolls (or your favorite slider roll).
