Spinach & Pistachio Salad with Grapefruit Vinaigrette || Aggie's Kitchen

You know I’m all about salads. I am usually inspired by whatever ingredients I have in my fridge, but usually the basics often include the trifecta of fresh greens, cheese and nuts. It’s just a no-brainer to an awesome salad mix in my opinion. Add in any extra veggies or fruit and you are set.

I happen to come upon plenty of grapefruit regularly around this time of year, my grandpa’s tree is an amazing producer and I love that he sends me home with large bags of them whenever I see him during the grapefruit months. My mom just brought me some this past weekend and I couldn’t help but remember this simple grapefruit vinaigrette I made a couple of years ago. I ate this Spinach and Pistachio Salad pretty often drizzled with that bright vinaigrette and I’m ready to make it again. Like today, for lunch.

Simple Grapefruit Vinaigrette | Aggie's Kitchen

Need a little extra protein on your salad? Some rotisserie chicken or broiled fish or seafood would be perfect with this Spinach and Pistachio Salad. Enjoy!

Spinach and Pistachio Salad with Grapefruit Vinaigrette

Yield: makes 2 salads

Ingredients:

  • about 4 cups fresh baby spinach
  • 1/4 red onion, sliced very thin
  • approximately 1/4 cup shelled pistachios (whole or roughly chopped, up to you)
  • 1/4 - 1/3 cup crumbled gorgonzola cheese
  • Grapefruit Vinaigrette, for serving

Directions:

For 2 salads:

  1. Place baby spinach, red onion, pistachios and gorgonzola into two large bowls or plates. Top with a 2-3 tablespoons each of Grapefruit Vinaigrette.

To turn this salad into a fuller meal, add rotisserie chicken or broiled fish or seafood for extra protein.
