I found myself explaining to my little one how important breakfast was the other day before school – she was giving me a hard time about eating and I was getting a little impatient (if I can be completely honest here). I told her…”breakfast feeds your mind by giving your brain energy to learn and it feeds your body by giving it energy to play with your friends”. My talk worked like magic because she went right back to the table and finished her whole wheat waffle and banana without another word.
I was pretty proud of myself after that talk.
Why can’t it always be that easy?
It’s true though, breakfast really is SO important, don’t you agree? I don’t necessarily have to eat the second I wake up, but I do need to get some good food in my body after I finish that first cup of coffee and really start my day. I know right away when I’ve waited too long too…it’s not a good feeling.
Depending on my mood and how much time I have, I tend to fall back on the same few breakfasts during the school week. Here they are:
Greek yogurt, fruit and muesli (or granola) – I love love love homemade granola, but don’t always have it around. I just picked up this bag of Bob’s Red Mill Muesli and am hooked on it. Hooked.
My favorite homemade granolas: Cranberry Spice Granola and Nutty Granola
Healthy Egg Sandwich – super simple stuff here and you can take it to go. I usually toast up a whole wheat English muffin (or bagel thin), “fry” up an egg and serve it with a little shmear of butter or Laughing Cow cheese (garlic and herb, mmmm), spinach leaves, and sliced tomato.
Power Breakfast Toast – I shared how I make this last summer on Babble, and it’s still one of my favorite breakfasts ever. All you need is some really good bread (Ezekiel sprouted grain bread is a fave of mine), natural peanut butter, flax meal and sliced banana or even strawberry. Awesome way to start the day, especially before a workout.
Smoothies and Juices – Most of the time, if I know I don’t have a lot of time to sit down and eat my breakfast, I will take a smoothie or juice with me to drink while I drive the kids to school. My blender has definitely made smoothie making a complete pleasure (see that little lit up number on the base there? 729. Yes, that means I’ve used this blender 729 times since last summer when I got it!). If I’m having a smoothie or juice that is a little low on the protein, I will grab a hard-boiled egg out of the fridge to take with me too.

I make my own breakfast sandwich.

My go to breakfast is Greek yogurt, 1/4 c steal oats, 1/4 c grape nuts, tsp of ground flax, agave to sweeten, 1/4 c water and fruit. Yummy.
